2 cups Pancake Mix
2 eggs
1 cup Milk
12 oz Breakfast Sausage (cooked)

Steps:

  • Preheat oven to 350F. Grease a 12 cup muffin tin
  • Mix pancake mix, egg and milk in a large bowl with a whisk. Until mixed well.
  • Pour batter about 1/2 full into each muffin hole. Slice the each sausage link into halves or thirds and place the equivilant of 1 sausage in each hole.
  • Bake for approximately 15 minutes until knife inserted comes out clean.

3 eggs
2 tablespoons coconut oil
1 tablespoon maple syrup
1 teaspoon vanilla extract
¼ teaspoon apple cider vinegar
1 ½ cup blanched almond flour
¼ cup tapioca flour

¼ teaspoon sea salt
¼ pound breakfast sausage

Steps:

  • Preheat oven to 350° F and line a muffin pan with 8 liners.
  • Form the sausage into little balls and cook over medium high heat until cooked through.
  • In a medium size bowl whisk together the coconut milk, coconut oil, maple syrup, vanilla, apple cider vinegar, and eggs.
  • In a large bowl whisk together the dry ingredients. Pour the wet ingredients into the dry while whisking to incorporate.
  • Place a piece of sausage in the bottom of each muffin cup and pour the batter of the sausage. Bake for 15-20 minutes until a toothpick comes out clean.

1 (12 ounce) package fresh pork sausage links
1 tablespoon canola oil
2 cups all-purpose flour
1 tablespoon + 1 teaspoon granulated sugar
1 tablespoon baking powder
3/4 teaspoon fine sea salt
2 large eggs
1 1/2 cup whole milk
1/4 cup unsalted butter (melted and cooled)

Steps:

  • Preheat the oven to 350° and have ready both a rimmed sheet pan lined with nonstick aluminum foil and a well-greased, 24-cup mini muffin tin.
  • Place sausage links on a rimmed sheet pan and rub with oil. Bake for 7 minutes. Pull out the pan, give a gentle shake to move the sausages a bit, and return to the oven for an additional 7 minutes. Remove from the heat and allow to cool slightly.
  • Increase the oven temperature to 400°.
  • While the sausages are cooling, make the pancake batter, in a medium-sized mixing bowl, whisk together flour, sugar, baking powder, and salt.
  • In a large mixing bowl, whisk the eggs until foamy. Whisk in the milk and butter. Add the dry ingredients and stir until combined. Do not over-stir. Set aside.
  • Fill mini muffin tins about 2/3's of the way full. Cut the breakfast sausage links into thirds, and insert a piece in the center of each muffin cavity. You will have leftover sausage.
  • Bake at 400° for 12-14 minutes, or until puffed and golden.
  • Remove from the heat and allow to cool slightly. Serve with maple syrup and enjoy.

These are inspired by Japanese souffle pancakes! They are so tall and fluffy and cloudlike, and I'm obsessed with them. Just imagine your favorite pancakes dressed up like a cloud for Halloween.

Yield 8 pancakes and 4 sausage patties

Number Of Ingredients 15

1 pound ground pork
2 teaspoons brown sugar
3/4 teaspoon kosher salt
1/2 teaspoon minced fresh rosemary
1/2 teaspoon minced fresh sage
1/2 teaspoon minced fresh thyme
4 large eggs, separated
1/4 cup granulated sugar
1/2 cup milk
2 tablespoons unsalted butter, melted and cooled
1/2 teaspoon vanilla extract
3/4 cup store-bought pancake mix
Pat of unsalted butter, plus more for serving
Nonstick cooking spray, for the ring molds
Maple syrup, for serving

Steps:

  • For the sausages: Mix the pork, brown sugar, salt, rosemary, sage and thyme in a bowl until well combined. Shape into four 4-inch-wide and 1/4-inch-thick circular patties.
  • For the big fluffy pancake mix: In a stand mixer with the whisk attachment, whisk the egg whites to soft peaks. Continue whisking and gradually add the granulated sugar. Continue whisking until all the sugar is dissolved and the mixture forms stiff peaks.
  • In a separate bowl, whisk together the egg yolks, milk, melted butter and vanilla extract until smooth. Add the pancake mix and stir to combine. Carefully fold in the egg white mixture, taking care not to overmix.
  • For the big fluffy pancakes and sausage: Preheat a large nonstick pan over low heat and add the butter.
  • Spray 3-inch round (2-inch tall) ring molds with cooking spray. Place the ring molds in your preheated pan and use a ladle to fill the molds two-thirds of the way with the pancake mix. Place a cover over the pan and let the pancakes cook for 10 minutes. Remove the cover and use tongs and a rubber spatula to help flip the ring molds with the pancakes. Cover and continue cooking for about 7 minutes more.
  • Meanwhile, cook your sausage in a skillet over medium-low heat until the pork is fully cooked, about 4 minutes on each side.
  • Remove the ring molds with the pancakes using tongs and a rubber spatula. The pancakes should slide right out. Add the sausage underneath your pancakes for even more height. Serve with butter and maple syrup.

Concocted this recipe the other morning! Was SO GOOD and fun to eat!! Times are very scary right now with my hubby being laid-off, and just wanted to make us a special treat for breakfast. This put smiles back on our faces!! :D

1 lb ground sausage (hot or mild)
1 egg
1 cup flour
1 cup milk
1 teaspoon vanilla
1 tablespoon vegetable oil

Steps:

  • Cook sausage til done in frying pan, breaking up into small pieces as you go. Remove with slotted spoon to a papertowel-lined plate. Make batter.
  • Batter:.
  • In medium bowl, whisk egg til frothy. Whisk in milk, vanilla and oil. In small bowl, whisk well the dry ingredients to mix. Dump the dry ingredients into the wet ingredients and stir all til just moistened but still a little lumpy. Fold in about 2/3 of the cooked sausage. Spray a mini muffin pan with vegetable oil spray. Fill each cup with sausage batter almost all the way to the tops. (I got 20.) Sprinkle each with rest of crumbled cooked sausage. Bake in 350 degree oven til golden. Depending on your oven, 13-15 minutes. You'll be able to see the sides turning a light golden brown. Remove from pan with a spoon and serve with butter and warm maple syrup for dunking! Wah lah! :D Easy peasy and SOOOO Good! :D
  • Apple~Sausage : Add 1/2 up chunky applesauce and decrease milk to 3/4 cup.
  • Fruit : fold in 1 cup frozen berries or diced fruit and omit or decrease sausage.
  • Using my own, "from scratch", pancake batter, the sky's the limit really! Have fun and enjoy!
