Bacon Wrapped Trout image

Provided by Nancy Fuller

Categories     main-dish

Time 50m

Yield 2 servings

Number Of Ingredients 8

Two 8-ounce rainbow trout, butterflied and dressed
Kosher salt and freshly ground black pepper
2 tablespoons olive oil, divided
2 tablespoons chopped fresh herbs, such as parsley, chives and thyme
1 tablespoon capers, drained and chopped
2 cloves garlic, finely chopped
Juice of half a lemon, plus 4 thin lemon slices
4 slices bacon

Steps:

  • Preheat the oven to 425 degrees F.
  • Sprinkle the inside and outside of the trout with salt and pepper. Combine 1 tablespoon of the olive oil, the herbs, capers, garlic, lemon juice and some salt and pepper in a small bowl and divide this mixture between the two trout. Fold the trout back onto themselves, lay 2 lemon slices on top of each fish, and then wrap each trout with 2 slices of bacon holding the lemons in place.
  • Heat a large cast-iron skillet over medium-high heat and coat lightly with the remaining tablespoon olive oil. Place the trout, lemon-side up, in the pan and cook for 3 minutes, then place in the oven. Roast, flipping halfway through roasting to ensure the bacon is crisp, for 20 to 25 minutes.

PANCETTA-WRAPPED PORK ROAST

Pancetta-Wrapped Pork Roast image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h25m

Yield 6 to 8 servings

Number Of Ingredients 9

8 large garlic cloves
1 tablespoon finely chopped fresh rosemary leaves
1 tablespoon finely chopped fresh thyme leaves
1 tablespoon olive oil
1 (3 1/2 to 4-pound) tied boneless pork loin roast
Salt and freshly ground black pepper
4 ounces thinly sliced pancetta
1 1/2 cups chicken broth
1 1/2 cups dry white wine

Steps:

  • Blend the garlic, rosemary, thyme, and oil in a small food processor, scraping down the sides of the bowl occasionally, until the garlic is minced.
  • Sprinkle the pork roast generously with salt and pepper. Arrange the pancetta slices on a work surface, overlapping slightly and forming a rectangle. Spread half of the garlic mixture over 1 side of the pork and between the 2 loins that meet in the center of the tied pork roast. Place the pork, garlic mixture side down, in the center of the pancetta rectangle. Spread the remaining garlic mixture over the remaining pork. Wrap the pancetta slices around the pork. Place the pork in a roasting pan. Cover and refrigerate at least 1 hour and up to 1 day.
  • Preheat the oven to 400 degrees F.
  • Pour 1/2 cup of broth and 1/2 cup of wine into the roasting pan. Add more broth and wine to the pan juices every 20 minutes. Roast the pork until a meat thermometer inserted into the center registers 145 degrees F for medium-rare, about 1 hour. Transfer the pork to a cutting board. Tent with aluminum foil and let stand for 10 minutes. Pour the pan drippings into a glass measuring cup and spoon off any fat that rises to the top.
  • Using a large sharp carving knife, cut the pork into 1/4-inch-thick slices and serve with the pan juices.

PANCETTA-WRAPPED TROUT WITH HONEY BALSAMIC SALAD RECIPE - (4/5)

Pancetta-wrapped Trout with Honey Balsamic Salad Recipe - (4/5) image

Provided by cookism

Number Of Ingredients 20

For Pancetta-wrapped Trout:
1 Lemon
2 Rainbow Trouts (cleaned and descaled)
1 Clove of Minced Garlic
Large Bunch of Thyme
4 Slices of Pancetta
1 tbsp of Olive Oil
For Cookism's Honey Balsamic Salad:
120 g Greens of Your Choice
1 tbsp of Olive Oil
100 g of King Oyster Mushroom (chopped into bite-sized strips)
Salt & Black Pepper (to taste)
2 Spigs of Thyme
A Few Squeezes of Lemon Juice
Honey Balsamic Vinaigrette:
2 tbsp of Balsamic Vinegar
1 tbsp of Honey
1 tsp Dijon Mustard
1/4 Cup of Extra-Virgin Olive Oil
Salt & Black Pepper (to taste)

Steps:

  • 1. Preheat the oven to 220C/fan or 200C/Gas 7. Cut half of the lemon into 4 thin slices, reserving the other half for serving and the salad. Score each fish 3 times on one side. 2. Season each fish with salt and black pepper inside out. Stuff each cavity with garlic and a sprig of thyme (fold them into half to fit). Lay generous sprigs of thyme along the trout and top it up with two slices of lemon. Wrap two slices of pancetta around, holding thyme and lemon in place. Tuck the ends of the pancetta under the bottom of the trout to secure. Repeat steps on the other fish. Transfer trouts onto a baking tray lined with grease-proof paper. Drizzle olive oil over trouts and bake for 20 minutes until pancetta is golden and fish is cooked. 3. While the trouts are baking, make honey balsamic vinaigrette by just combining all the ingredients in a bowl and stir well. Next, sauté the mushrooms in a large pan of olive oil over medium heat. Lay them in an even layer and season with salt and black pepper. Cook for 3 to 4 minutes until starting to brown, stirring occasionally. In the meantime, cut leftover lemon into 3 wedges and reserve 2 wedges for serving. Stir in thyme leaves and a few squeezes of lemon juice. Stir and cook for another 1 to 2 minutes or until mushrooms are tender. Remove from heat and allow the mushroom to cool slightly. 4. Combine greens, mushroom and the dressing in a large bowl. Toss well and season with salt and black pepper if needed. Serve trouts with salad and lemon. Squeeze lemon over each trout and feast on!

PANCETTA-WRAPPED PORK ROAST

Pancetta-Wrapped Pork Roast image

A wrapping of pancetta (Italian bacon) keeps roast pork loin moist and imparts delicious flavor and crunch.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 1h10m

Number Of Ingredients 11

1 boneless pork loin (1 1/2 pounds)
Coarse salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
2 tablespoons finely chopped rosemary, plus several sprigs
1/4 pound pancetta or bacon, thinly sliced
8 to 10 cipollini or very small white onions, unpeeled
1 teaspoon unsalted butter, softened
1 teaspoon all-purpose flour
1 cup chicken stock, preferably homemade
Polenta Triangles for Pancetta-Wrapped Pork Roast, for serving
Steamed spinach, for serving

Steps:

  • Preheat oven to 375 degrees. Season pork with salt and pepper. Heat oil in a large cast-iron skillet over medium heat. Sear pork on all sides until browned, about 10 minutes total. Remove from heat.
  • Rub pork with chopped rosemary. Wrap with pancetta, overlapping strips slightly. Use toothpicks to secure pancetta, if necessary. Place a rosemary sprig on top; tie pork with kitchen twine, and remove toothpicks. Return pork to skillet. Scatter onions and rosemary sprigs around pork. Roast in oven, basting occasionally with cooking juices, until it reaches an internal temperature of 145 degrees on an instant-read thermometer, 30 to 35 minutes. Remove from oven. Transfer pork and onions to a platter; cover to keep warm.
  • Make pan sauce: In a small bowl, combine butter and flour. Pour off fat from skillet; place over medium heat. Add stock, scraping bottom of skillet to loosen browned bits. Bring to a boil; reduce liquid slightly, about 2 minutes. Whisk in butter mixture; cook until thickened. Season with salt and pepper. Slice pork, and drizzle with sauce. Serve with onions, polenta triangles and steamed spinach.

GRILLED PANCETTA-WRAPPED TROUT WITH VERJUS, CRUSHED GRAPES, AND FENNEL GRATIN

Grilled Pancetta-Wrapped Trout with Verjus, Crushed Grapes, and Fennel Gratin image

Rainbow trout is a delicious option for fish-loving home cooks. It's available year-round and won't break the bank even when you want to feed a crowd. Have your fishmonger bone and butterfly the trout for you, leaving the tail intact and keeping the two fillets attached on the fin side. This preparation is a study in contrasts, a three-way complement to the flaky flesh of the trout. The blushing sweet-tart sauce is made with both crushed grapes and verjus, the juice of unripe wine grapes. (The French used verjus in medieval and Renaissance times in much the same way we use vinegar or lemon juice today.) Less acidic and more complex than most vinegar, the verjus's refreshing fruitiness plays counterpoint to the salty cured Italian bacon wrapped around the trout. And finally, hidden within this lively package: rich, herbaceous sorrel cream, bringing us back to earth.

Number Of Ingredients 31

3 tablespoons unsalted butter
1 1/2 cups thinly sliced red onion
1 teaspoon thyme leaves
1 1/2 cups sliced sorrel
1/3 cup heavy cream
6 trout, 8 ounces each, boned and butterflied
6 slices pancetta, about 1/8-inch thick
1 cup red seedless grapes, picked from the stems
4 tablespoons extra-virgin olive oil
2 tablespoons sliced flat-leaf parsley
1 bunch watercress, cleaned, tough stems removed
Verjus sauce (recipe follows)
Fennel gratin (recipe follows)
Kosher salt and freshly ground black pepper
1 1/2 cups seedless red grapes
1 small shallot, thinly sliced
1 cup verjus
8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
1/2 lemon, for juicing
Kosher salt and freshly ground black pepper
1 tablespoon fennel seeds
1 1/2 pounds fennel (4 or 5 bulbs)
1 1/2 cups thinly sliced red onion
1 tablespoon thyme leaves
2 fresh bay leaves, sliced
1 tablespoon chopped fennel fronds or dill
1/3 cup extra-virgin olive oil
3/4 pound Yukon Gold potatoes, peeled
2/3 cup heavy cream
2 tablespoons chopped flat-leaf parsley
Kosher salt and freshly ground black pepper

Steps:

  • Heat a medium sauté pan over medium heat for 1 minute. Add the butter, and when it foams, stir in the red onion. Add the thyme, a healthy pinch of salt, and a pinch of black pepper. Sauté about 10 minutes, until the onion is translucent and soft. Add the sorrel to the pan, and stir to combine. Turn the heat up to medium-high, add the cream, and cook, stirring continuously, about 3 minutes, as the cream reduces and coats the onions. Taste for seasoning, and transfer to a plate to cool completely.
  • Lay the trout, skin side down, on a cutting board, open like a book. Season lightly with salt and pepper, and spread the sorrel onions on one side of each fish. Fold the fish back together, and wrap each trout with a piece of pancetta, spiraling the meat around the fish like the stripe on a candy cane. Refrigerate the fish until 15 minutes before cooking.
  • Light the grill 30 to 40 minutes before cooking.
  • Meanwhile, using a mortar and pestle, pound the grapes until they're partially crushed. Transfer to a bowl, and stir in 2 tablespoons olive oil, the parsley, a healthy pinch of salt, and a pinch of black pepper.
  • When the coals are broken down, red, and glowing, brush the trout with the remaining 2 tablespoons olive oil and season with salt and pepper. Grill the trout 3 to 4 minutes on each side, rotating the fish a quarter-turn after a couple of minutes, to get the skin crispy.
  • Scatter the watercress on a large platter, and place the trout on top. Spoon the warm verjus sauce over the fish, and top with the crushed grapes. Serve the fennel gratin at the table.
  • Place the grapes, shallot, and verjus in a small saucepan over medium heat. Add 1/8 teaspoon salt, and simmer until the liquid is reduced by three-quarters. Let the mixture cool until lukewarm.
  • Transfer to a blender, and, with the motor running, add the cold butter a little at a time, blending until the butter is just incorporated. Taste for seasoning, and add a little lemon juice, a pinch of pepper, and more salt if you like. Return the sauce to the pan, cover, and keep in a warm place. Reheat just before serving.
  • Preheat the oven to 425°F.
  • Toast the fennel seeds in a small saucepan over medium-high heat 2 to 3 minutes, until they release their aroma and are a light gold color. Using a mortar and pestle, pound the seeds coarsely.
  • Trim the root end of the fennel, cut the stalks off where they meet the bulb, and peel off any outer layers that are brown or bruised. Cut the bulb in half lengthwise, leaving the core intact. Place the halves, cut side down, on a cutting board, and slice the fennel thinly lengthwise. You should have about 6 cups of sliced fennel.
  • Toss the fennel in a large bowl with the onion, thyme, bay leaves, fennel fronds, fennel seeds, and 1/3 cup olive oil. Season with 1 1/2 teaspoons salt and a pinch of pepper.
  • Slice the potatoes on a mandoline into 1/16-inch-thick slices. Toss the potatoes in a medium bowl with the cream and 1 teaspoon salt.
  • Add the potatoes and parsley to the fennel, scraping all the cream into the bowl. Toss well to combine, and taste for seasoning.
  • Arrange one layer of potato slices in the pan, overlapping them slightly, on the bottom of a gratin dish. (For this recipe, I like to use a copper or black iron dish, so the potatoes get extra crisp.)
  • Toss the remaining fennel-potato mixture again, and arrange it over the layer of potatoes. Pour all the remaining creamy juices over the top. Bake about 45 minutes, until the potato is cooked and the fennel is golden and slightly crispy on top.
  • You can stuff and wrap the fish the morning before you plan to grill it. Both the fennel gratin and the verjus sauce can also be prepared ahead of time and reheated before serving.

  • Place a sheet of wax paper on a work surface. Arrange 6 to 8 slices of the pancetta in 2 overlapping rows to form a 6-by-8-inch rectangle. Set 1 fish on the bottom edge of the pancetta.
