CRISPY PAN-FRIED PORK CHOPS
Coat pork chops with breadcrumbs and herbs and then crisp them to perfection in a skillet.

Steps:
- Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.
- Dredge a pork chop in the flour, shaking off the excess, dip it into the eggs and then coat evenly with the breadcrumbs. Set aside on a piece of wax paper or baking sheet. Repeat with the remaining pork chops.
- Heat a large skillet over medium heat with enough oil to come halfway up the sides of the chops (about 1/4 cup). When the oil shimmers, add the chops and fry until golden brown and crispy, 3 to 4 minutes on each side. Drain on paper towels briefly. Serve hot with cooked spinach and lemon wedges.
PANKO-CRUSTED PORK CUTLET WITH CUCUMBER-DAIKON RELISH
Steps:
- For the dressing: Wisk together the rice wine vinegar, fish sauce and brown sugar in a small bowl and set aside.
- For the relish: Combine the mint, daikon, scallion, cucumber, garlic, chile and cilantro in a medium bowl. Pour the dressing on top and stir together. Let rest while cooking the pork chops.
- For the pork chops: Place the flour and some salt in one bowl, eggs in another, and the panko and coconut in another. Dredge the pork chops in the flour, then the egg, and then the panko mixture. Repeat with other pork chop.
- Heat some olive oil in a medium saute pan over medium-high heat. When hot, fry the pork chops until golden brown on both sides and 145 degrees F at the center, 7 to 10 minutes per side. Remove from the pan and rest for about 5 minutes.
- Serve the pork chops alongside the relish.
PANKO CRUSTED PORK CHOPS

Steps:
- Preheat oven to 350 degrees F.
- Line baking sheet with parchment paper. This will help prevent the breading from sticking to the baking sheet.
- Set up 3 stations, I use pie plates for this.
- Station 1 - all purpose flour
- Station 2- mix together eggs and milk
- Station 3 - mix together panko bread crumbs, paprika, garlic powder, thyme, salt & pepper
- Dust pork chops with flour, shake off excess.
- Immediately dip into egg mixture.
- Next press into bread crumb mixture ensuring a good coating of bread crumbs.
- Heat olive oil to large frying pan.
- Brown the pork chops on medium heat just until golden brown on each side.
- Transfer to baking pan to finish cooking in the oven for thicker cut pork chops.
- Bake at 350º for 20-30 minutes until internal temperature reaches 145 degrees.
- If using thinner cut pork chops you can skip baking in the oven and just use the stovetop.

- Season pork chops on all sides with Montreal steak seasoning.
- Melt 2 tablespoons butter in a large skillet over medium heat. Cook chops in melted butter until browned and slightly pink in the center, about 7 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Add remaining butter to the pan as needed so that about 3 tablespoons pan drippings remain in the pan when the chops are finished cooking. Transfer pork chops to a plate and return skillet to medium-high heat.
- Mix flour, basil, and beef bouillon together in a bowl. Stir black pepper into skillet with the pan drippings and cook for 1 minute. Add flour mixture and cook, stirring constantly, until browned, about 2 minutes. Pour milk into flour mixture; cook and stir constantly until mixture is thick and bubbly, 4 to 6 minutes. Pour sauce over pork chops and serve.

- Combine onion, jalapeno peppers, habanero peppers, garlic, and Worcestershire in the bowl of a food processor; puree until smooth.
- Pour a thin layer of marinade in the bottom of a medium rectangular glass or ceramic container so the bottom is completely covered. Place 4 pork chops in the bowl and cover in marinade. Add last 4 pork chops and pour in remaining marinade, ensuring all pork chops are coated. Cover and refrigerate, 8 hours to overnight.
- Pour marinade and chops into a large saucepan. Add water and bring to a boil. Continue to boil, 10 to 12 minutes.
- Meanwhile, combine flour, onion soup mix, cayenne, garlic powder, and seasoned salt for batter in a small mixing bowl.
- Transfer boiled chops to a cutting board, softly pat with a paper towel to remove excess liquid, and coat with batter. Discard any remaining boiling liquid.
- Heat enough oil in a large frying pan over medium-high heat that it fills the pan to 1/4 inch.
- Fry chops in the hot oil until golden brown, 1 to 2 minutes; flip and continue to cook until golden brown, 1 to 2 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- Heat oven to 350°F.
- Mix together panko, salt, cumin, paprika, chipotle, ancho, pepper, ginger, garlic powder, onion powder, and Parmesan cheese.
- Coat pork chops with crust mixture by rolling them in it as well as pressing it into the meat.
- Heat sesame oil in large skillet until very hot.
- Cook pork chops on the stove until each side is crispy.
- Put into the oven for 15-25 minutes depending on thickness of the pork chop. Enjoy!
