- Shrimp: In a pan over medium heat, saute shrimp in 1 tablespoon of whole butter. While the shrimp is cooking, splash it with white wine. Then add to taste, some chopped scallions, a pinch of parsley and a bit of cayenne pepper and paprika.
- After the shrimp is almost ready, add it to the sauce for 3 to 4 minutes. so the Creole flavor cooks into the shrimp. Prepare the serving plates with cooked rice. Ladle the shrimp and Creole sauce into the rice beds, making sure there is lots of sauce. (Creole dishes feature "Lots of Gravy"). - Preheat a large nonstick pan or skillet over medium-high heat with about 3 teaspoons of olive oil.
- Wash shrimp and pat dry with a paper towel or other clean towel. Place panko crumbs in a small bowl. In a second bowl whisk together flour and 1 tablespoon creole seasoning. In a third bowl, whisk together egg and milk. Dip shrimps into the flour, tossing to coat. Then dip them in the egg mixture, and finally into the panko crumbs.
- Add shrimp to preheated pan (if your pan is not big enough, do half of the shrimp at a time) and cook 3-4 minutes on the first side, until browned. Carefully flip shrimp and cook 3-4 minutes on second side. Don't stir the shrimp around, they will lose their coating. Transfer to a plate lined with a paper towel to absorb any extra oil.
- In a small bowl whisk together mayo and remaining creole seasoning. Serve as dipping sauce with the shrimp. Enjoy!

- Place a large skillet over medium-high heat and melt butter. When butter is melted, add onion, bell pepper, celery, garlic and ½ tsp salt. Cook 6–8 minutes, stirring often, until veggies begin to soften.
- Add tomato sauce, diced tomatoes with juice, Worcestershire sauce, cayenne pepper and bay leaf then stir to combine. Bring liquid to a boil then reduce heat to low and simmer for 25–30 minutes, stirring occasionally, until tomatoes begin to break down and sauce thickens to about the consistency of ketchup. You can cook longer if you would like a thicker consistency.
- Add peeled and deveined shrimp and increase heat to medium. Cook 5–6 minutes or until shrimp are just cooked through. Remove from heat, discard bay leaf and season to taste with salt and pepper, then add a few dashes of hot sauce for extra spice and a pinch of sugar if it’s a little too tart.
