TOM'S OVEN STEAK FRIES
So easy! The prep for this recipe takes less than 5 minutes! The result is delicious fries that my whole family loves. Dip them in ketchup, honey mustard, ranch, or your favorite dipping sauce! This is tweaked (only very slightly) from the Oven Steak Fries recipe from FlyLady.com.

Steps:
- Preheat oven to 400 degrees.
- Combine oil, paprika, cumin, salt, and pepper in a large bowl.
- Place potato wedges in the bowl and coat with spices.
- Transfer potato wedges to a large ungreased baking sheet (do not overcrowd).
- Bake until the potato wedges are golden and crisp (about 40 minutes). Serve immediately!

- Preheat the oven to 500 degrees F (260 degrees C).
- Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
- Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
- Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

EASY STEAK FRITES

- Season the tots with the paprika and half the Montreal seasoning. Bake according to the package instructions.
- Meanwhile, melt the butter in a large cast-iron skillet over medium-high heat. Sprinkle the steaks on both sides with the lemon pepper seasoning and the remaining 2 teaspoons Montreal seasoning. Add the steaks to the skillet and cook for about 3 minutes per side for medium-rare. Remove to a cutting board to rest.
- For the peppercorn horseradish sauce: Add the sour cream, mayonnaise, horseradish, peppercorns, Worcestershire and Montreal seasoning to a bowl, then stir until well combined.
- Mound the tots on a platter and place the steaks alongside. Pour the sauce into a bowl to serve. Garnish with fresh parsley.
PAPRIKA FRIES WITH DILL MAYO

- For the fries: Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.
- Stir the salt into a large bowl of cold water until dissolved, then add 1 cup ice cubes. Submerge the potato wedges and soak for 20 minutes. Drain the potatoes and pat them dry.
- Toss the potatoes in the oil on the baking sheet. Bake, tossing halfway through, until browned, about 1 hour.
- Combine the paprika, garlic powder and onion powder in a small bowl. When the potatoes are done baking, toss with the spice mixture and season as desired with salt and pepper.
- For the dill mayo: Meanwhile, combine the mayonnaise, yogurt, mustard and dill in a medium bowl. Season with salt and pepper. Serve with the fries.

- In a large mixing bowl, whisk together olive oil, paprika, garlic powder, chili powder and onion powder.
- Add potato wedges to olive oil mixture and toss until evenly coated.
- Cover a baking sheet in foil and spread coated potato wedges onto it.
- Bake for 40-45 minutes or until golden and cooked through.

- Preheat oven to the temperature the bag indicates.
- Toss fries in a large bowl with oil, paprika, and seasoned salt until covered.
- Lay fries in a single layer on a baking sheet, and bake according to instructions on the package
- When there are five minutes left on the timer, melt butter in a skillet on the stove.
- Add garlic and cook over low heat until fragrant.

SWEET POTATO STEAK FRIES WITH CRUNCHY SPICES
Sweet potato fries in restaurants are usually double-deep-fried; it's difficult to make them crisp in an oven, but this recipe does the trick at the last minute with brown sugar and spices.

- Heat the oven to 425 degrees. Cut the skins off the sweet potatoes, squaring off the round sides to make each potato into a large rectangle. Cut into long fries about 1/4-inch thick and 1 inch wide. (If not using potatoes immediately, soak in water for up to 1 day. Drain and pat dry before cooking.)
- Put two large sheet pans in the oven to heat. Toss the potatoes, and skins if you like, with oil, paprika and 2 teaspoons of the salt. Arrange in one layer on the hot pans. (Don't use parchment paper; it will make the potatoes soggy.) Roast until tender and starting to brown on the bottom, about 15 minutes.
- Meanwhile, grind the cumin, coriander and 1 teaspoon salt together. Mix in the brown sugar.
- Remove pans from the oven and raise the heat to 450 degrees, or set to broil. With a spatula, carefully loosen the fries and turn each one over. Sprinkle with the spice and sugar mixture. Return to the oven and bake just until the fries are blistered and sizzling vigorously, about another 5 minutes. (If your oven has a convection feature, use it.) Do not overcook, or the fries will become leathery. Cool slightly.
