Eating sauerkraut on New Year's is an old Pennsylvania Dutch tradition, said to bring good luck. The traditional meal consists of pork and sauerkraut served together, with sauerkraut representing luck and the pig representing rooting into the New Year. It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

- Preheat oven to 400 degrees F (200 degrees C).
- Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
- Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). Continue to cook roast until an instant-read thermometer inserted into the center reads at least 145 degrees F (63 degrees C), adding water if sauerkraut mixture looks dry, about 2 hours more.
- Remove roast from oven and allow to rest in a warm area before slicing, about 10 minutes.

POLISH PAPA'S PORK CHOPS
This is one of the many favorite recipes that I got from my father (the Polish Papa!). It's incredibly easy and very, very good. The apples, applesauce, and onion mixture cuts some of the sharpness of the sauerkraut. As a result, even people who claim to hate sauerkraut love this dish. If you REALLY love sauerkraut, use two cans with both the applesauce and apples. I usually do this, as the sauerkraut is a wonderful leftover.

Steps:
- Heat oven to 375°F.
- Spray a 9x13 baking dish with cooking spray.
- Mix the drained sauerkraut, applesauce or apples, and chopped onion in the baking dish. Spread out evenly.
- Shake the pork chops in the Shake and Bake until evenly coated. Place chops on top of the sauerkraut, but don't overlap.
- Sprinkle any coating mix remaining in the bag over the top of the pork and sauerkraut.
- Place, uncovered, in the preheated oven and bake for 45-60 minutes, or until the pork is done and the coating crispy.

SHREDDED PORK AND SAUERKRAUT

- Preheat oven to 350 degrees F (175 degrees C).
- Heat bacon grease in a large skillet over medium heat. Add onions; cook and stir until onions are translucent, about 5 minutes.
- Arrange sauerkraut and apples in a large roasting pan. Top with cooked onions and remaining bacon grease.
- Mix chicken broth, brown sugar, and mustard powder together in a microwave-safe bowl. Microwave on high until sugar dissolves and broth is heated through, about 2 minutes. Stir and pour over sauerkraut mixture, mixing to combine.
- Cut several deep slits in the top of the pork loin and place in the center of the sauerkraut mixture. Cover roasting pan with aluminum foil.
- Roast pork in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 250 degrees F (121 degrees C). Continue roasting pork until tender and pulls apart easily, 2 to 3 hours. Remove from oven and cool until easily handled, about 15 minutes.

POLISH PORK CHOPS WITH SAUERKRAUT
This is a fantastic way to prepare pork chops. I've been doing it for years. For the apples, I usually use Granny Smiths, but you can use any apple that you'd normally eat on its own. DON'T use a cooking apple. You need a sweeter apple to balance with the sauerkraut.

- Melt the butter in a flameproof casserole dish, and fry the chops till browned on both sides. Remove from pan and set aside.
- Add onion and garlic to the dish and fry till transparent.
- Season with salt and pepper, add the sauerkraut and the bay leaf, and then arrange the pork chops on top.
- Pour in the chicken broth. Bring to a boil, then lower the heat and allow to simmer for about 15 minutes.

- Mix sauerkraut, apples, onion, and caraway seeds in a large roasting pan. Stir 1/4 cup apple cider and brown sugar together in a separate bowl; pour over sauerkraut mixture.

- Remove from pan.
- To the pan add the onions and garlic.
- Reduce heat to medium and cook onions until translucent.

REALLY EASY PORK AND SAUERKRAUT BAKE
I threw this together when I was really craving kraut. It can be really hard to get good kraut in the UK but as I grew up Pennsylvania Dutch sometimes it is hard to ignore the calling of the kraut juice in my veins. This is really easy and reminds me of when my mother would slow cook pork and kraut for New Year's Eve. Using the lean pork steaks actually makes this pretty low fat. It goes well with mashed potatoes.

- Preheat oven to 350°F.
- Put the lean pork steaks (I try to make them fairly thin steaks as this is a quick recipe) in the bottom of an oven proof dish.
- Lay the sliced mushrooms over the top of the steaks and then top with the sauerkraut.

PORK CHOPS BAKED IN PEAR SAUERKRAUT
Served with mashed potatoes, this meal reminds me of time I spent in Germany. A real German hausfrau would cook up an apple in her sauerkraut, but using baby food is a real time-saver and still softens the flavor of the sauerkraut and makes it delicious.

- Heat oven to 375°F.
- Heat oil in a large ovenproof skillet over medium heat.
- Add pork chops and cook about 2 minutes per side, turning once, until lightly browned.
- Remove skillet from heat and remove chops to a plate.
- Sprinkle with pepper and salt.
- Meanwhile drain sauerkraut, rinse under cold water, and squeeze dry with paper towels.
- Mix sauerkraut and puréed pears in the skillet.
- Top with pork chops.
- Bake uncovered, 18 to 20 minutes, until centers of chops are opaque and barely pink.
- Serve with mashed potatoes.
- Note: My supermarket stores the bagged sauerkraut in the meat section near the bratwurst and other sausages.
- It really is better tasting than any of the canned or jarred kinds I've tried, if you can find it.
