8 ounces Linguine Pasta
2 Tablespoons olive oil
6 Tablespoons butter
4 cloves garlic (minced)
1 teaspoon red pepper flakes
1 1/4 pound large shrimp
salt and pepper to taste
1 teaspoon italian seasoning
4 cups baby spinach
1/2 cup parmesan cheese
2 Tablespoons parsley (chopped)
1 Tablespoon lemon juice

Steps:

  • In a large pot cook the pasta in boiling water according to package directions. Drain and set aside.
  • Using the same pan, heat olive oil and 2 Tablespoons of butter. Add the garlic and red pepper flakes and cook until fragrant.
  • Add the shrimp and salt and pepper to taste. Cook until the shrimp start to turn pink. Add italian seasoning and spinach and cook until wilted.
  • Add the pasta back to the pot with the remaining butter, parmesan, and parsley. Still until mixed and butter is melted.
  • Add the lemon juice before serving and serve while hot.

1/3 cup olive oil
1/4 cup Parmesan cheese
4 cloves garlic, minced
1 tablespoon brown sugar
2 teaspoons soy sauce
1/2 teaspoon red pepper flakes, or more, to taste
1 pound medium shrimp, peeled and deveined
8 ounces penne
Kosher salt and freshly ground black pepper, to taste
1 green onion, thinly sliced

Steps:

  • In a medium bowl, whisk together olive oil, Parmesan, garlic, brown sugar, soy sauce and red pepper flakes. In a gallon size Ziploc bag or large bowl, combine shrimp and olive oil mixture; marinate for at least 30 minutes to overnight, turning the bag occasionally. In large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat a large skillet over medium high heat. Add shrimp and sauce mixture and cook, stirring occasionally, until pink, about 2 minutes. Stir in pasta and gently toss to combine; season with salt and pepper, to taste. Serve immediately, garnished with Parmesan and green onions, if desired.

1 cup dry bread crumbs
1 cup shredded Parmesan cheese
2 tablespoons dried parsley
1 ½ teaspoons garlic powder
1 pound large shrimp, peeled and deveined
2 tablespoons butter, melted, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass casserole dish with nonstick cooking spray.
  • Combine bread crumbs, Parmesan cheese, parsley, and garlic powder in a large resealable plastic bag. Seal and shake to mix ingredients together. Add shrimp and shake to coat.
  • Lay shrimp flat in the prepared baking dish. Sprinkle with any bread crumb mixture remaining in the bag. Drizzle melted butter over the top.
  • Bake in the preheated oven until starting to crisp, 15 to 20 minutes. Switch to broil setting until topping is light brown, 2 to 3 minutes.

2 tablespoons balsamic vinaigrette (I made my own, but bottled works just as well.)
1/2 lb shrimp, fresh or 1/2 lb frozen shrimp, thawed
2 ounces cream cheese
2 tablespoons chopped fresh basil, divided
1/4 lb thin spaghetti or 1/4 lb fettuccine noodles, cooked according to package directions
2 tablespoons shredded parmesan cheese

Steps:

  • Marinate the shrimp in the vinaigrette for 20 minutes or so. Drain the shrimp, retaining the marinade. In a large skillet over medium heat, cook shrimp until pink, about 3 minutes. Remove shrimp from skillet and keep warm. Place marinade, cream cheese and half of the basil in the skillet. Cook and stir until well blended; return shrimp to pan and continue cooking until heated thoroughly, stirring occasionally.
  • To serve, place a mount of noodles on plate; top with shrimp and sauce mixture. Sprinkle with remaining basil and the shredded parmesan cheese.
  • You can also add fresh chopped tomatoes for extra flavor, color and texture.
  • I only bought the shrimp and basil to make this meal; all other ingredients came from my pantry and fridge. Half a pound of shrimp cost $3.00, and the portion of basil I used about $0.50. The pasta was free, using coupons at a Harris Teeter doubling event, and I paid less that $1.00 for the entire package of cream cheese, making the portion I used about $0.25. Making my own vinaigrette cost pennies, as did shredding the Parmesan from a block. I would estimate the cost of this main dish to be around $4.00 0r less. The additional side dishes and bread would bring the total to somewhere between $5.00 or $6.00. Not bad for an elegant anniversary dinner!

3/4 lb raw shrimp, peeled, deveined and tails removed
1 teaspoon kosher salt
1 teaspoon fresh ground pepper
2 tablespoons flour (divided)
2 tablespoons olive oil
1 tablespoon butter
1 1/4 cups low sodium chicken broth
1/2 cup whipping cream
1/2 teaspoon cajun seasoning or 1/2 teaspoon Old Bay Seasoning
shredded parmesan cheese (optional)

Steps:

  • Sprinkle shrimp with salt, pepper and toss to combine. Sprinkle 1 tablespoon flour over the shrimp and toss to coat the shrimp. Repeat by sprinkling 1 more tablespoon flour and toss to evenly coat the shrimp.
  • Melt butter and olive oil in a large skillet over medium high heat. When hot, add the shrimp in a single layer and cook on each side, flipping once, until golden brown, approximately 3-4 minutes per side. Remove to plate.
  • Pour in the chicken broth. Cook for about 5 minutes, whisking the bottom of the pan to deglaze. Reduce heat to medium and pour in cream, whisking constantly. Cook sauce over medium heat until bubbly and the cream starts to thicken the mixture, about 5 minutes. Adjust seasonings as desired with cajun seasonings. If too thick, add a few tablespoons additional broth.
  • Add the cooked pasta and shrimp to the sauce and stir to combine. Dust with parmesan, if desired.

3/4 cup roma tomato, chopped
2 ounces cream cheese, cubed

1/4 lb fettuccine, cooked, drained
parmesan cheese, freshly grated

Steps:

  • Add the shrimp to a small bowl and pour the dressing over the shrimp; cover and refrigerate for 20 minutes.
  • Remove the shrimp from the marinade; set aside reserving the marinade.
  • Heat a large skillet over medium heat; add shrimp and cook 3 minutes or until shrimp turn pink, stirring frequently.
