8 oz green beans
2 teaspoons olive oil
1/4 teaspoon Kosher salt
1/8 teaspoon pepper
1/4 cup Parmesan cheese (grated fresh preferred)
⅛ teaspoon garlic powder (optional)

Steps:

  • Preheat oven to 375° convection or 400° conventional. Clean and trim 1/2 pound of green beans. Try to use beans of constant size. The skinny ones with dry out.
  • In a medium bowl combine beans with 2 teaspoon olive oil. Mix well then add 1/4 teaspoon kosher salt and 1/8 teaspoon pepper and mix again.
  • Cover a baking sheet with parchment paper. Spread the beans evenly across the paper. Cover with 1/4 cup Parmesan cheese (fresh preferred).
  • Bake until browning some, 10-15 minutes.

This is a fast, easy and absolutely delicious way to make green beans. Saw it on the Food Network a while ago and it comes out perfect every time. Adjust cooking time and amount of cheese based on your personal preferences. After you've tried green beans, do the same exact recipe with asparagus or broccoli. My kids devour all 3 veggies so I always make more than we need and there aren't ever any leftovers.

3 -4 cups fresh green beans, stem ends snapped off
1 tablespoon extra virgin olive oil
1 -2 cup shredded parmesan cheese (I usually use 2 cups)
salt and pepper

Steps:

  • Preheat oven to 425 degrees.
  • Spread beans out evenly on a non-stick cookie sheet, doesn't have to be a single layer.
  • Drizzle lightly with extra virgin olive oil.
  • Sprinkle lightly with salt & pepper (optional).
  • Spread shredded parmesan evenly over beans.
  • Bake on center oven rack for 12 minutes.
  • Beans will be roasted and cheese will be melted, chewy and crunchy where it laid on the pan.

Steps:

  • Preheat the oven to 400 degrees F.
  • Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly.
