1 1/2 cups (packed) fresh parsley leaves
1 1/2 cups mayonnaise
2 tablespoons mustard
Kosher salt
Freshly ground pepper

Steps:

  • At Kachka, they make mayo from scratch. But Hellmann's (a.k.a. Best Foods) will do just fine. Pulse 1 1/2 cups (packed) fresh parsley leaves, 1 1/2 cups mayonnaise, and 2 tablespoons mustard in a food processor until smooth; season with salt and pepper.

  • Pulse basil, garlic, salt, and cayenne in a food processor until finely chopped. Add mayonnaise and blend until smooth. Chill, covered, 1 hour (for flavors to develop).

300 g sweet potatoes, peeled & cut into 5mm rounds
1 tablespoon olive oil
400 g lentils, rinsed, well drained
1 egg
1/2 cup breadcrumbs
1/4 teaspoon chili flakes
1/4 cup red pepper, strips (marinated)
1 tablespoon sesame seeds
2 green onions, finely chopped
200 g fat free Greek yogurt
2 tablespoons mayonnaise
2 tablespoons flat leaf parsley, chopped
4 pita bread, split
40 g mixed salad greens
1 lebanese cucumber, sliced

Steps:

  • Preheat oven to 200.C.
  • Line a baking tray with baking paper.
  • Toss sweet potato with oil on tray, roast for 25-30 mins or until tender.
  • Meanwhile place lentils, egg, crumbs, chilli, pepper strips, sesame seeds and the onion in a bowl, mix well. Shape into 4 thick patties.
  • Heat remaining oil in a large non-stick frying pan over moderately low heat. Cook patties for 4 mins each side or until golden.
  • Whisk together yoghurt, mayo, parsley & remaining onion. Spread toasted rolls with yoghurt mixture. Sandwich with leaves, patties, sweet potato & cucumber.

1/2 yogurt
2 teaspoons lemon juice
1 teaspoon mustard
1 tablespoon olive oil
1 1/4 balsamic vinegar
1 teaspoon onion powder
1 garlic clove, minced
salt and pepper
1 tablespoon parsley, minced
1/4 cup cream cheese
1 bunch fresh parsley, chopped

Steps:

  • In a blender, mix everything except cream cheese until emulsified.
  • Pour mixtrue into a bowl and stir in cream cheese.
  • Check seasoning.
  • Refrigerate for 1-2 hour.
  • add chopped parsley before serving.
