1 tablespoon good olive oil
8 ounces dry cured center cut applewood smoked bacon, diced
2 1/2 pounds chuck beef cut into 1-inch cubes
Kosher salt
Freshly ground black pepper
1 pound carrots, sliced diagonally into 1-inch chunks
2 yellow onions, sliced
2 teaspoons chopped garlic (2 cloves)
1/2 cup Cognac
1 (750 ml.) bottle good dry red wine such as Cote du Rhone or Pinot Noir
1 can (2 cups) beef broth
1 tablespoon tomato paste
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
4 tablespoons unsalted butter at room temperature, divided
3 tablespoons all-purpose flour
1 pound frozen whole onions
1 pound fresh mushrooms stems discarded, caps thickly sliced
Country bread or Sour Dough, toasted or grilled and rubbed with garlic clove
1/2 cup chopped fresh parsley, optional

Steps:

  • Preheat the oven to 250 degrees F.
  • Heat the olive oil in a large Dutch oven. Add the bacon and cook over medium heat for 10 minutes, stirring occasionally, until the bacon is lightly browned. Remove the bacon with a slotted spoon to a large plate.
  • Dry the beef cubes with paper towels and then sprinkle them with salt and pepper. In batches in single layers, sear the beef in the hot oil for 3 to 5 minutes, turning to brown on all sides. Remove the seared cubes to the plate with the bacon and continue searing until all the beef is browned. Set aside.
  • Toss the carrots, and onions, 1 tablespoon of salt and 2 teaspoons of pepper in the fat in the pan and cook for 10 to 15 minutes, stirring occasionally, until the onions are lightly browned. Add the garlic and cook for 1 more minute. Add the Cognac, stand back, and ignite with a match to burn off the alcohol. Put the meat and bacon back into the pot with the juices. Add the bottle of wine plus enough beef broth to almost cover the meat. Add the tomato paste and thyme. Bring to a simmer, cover the pot with a tight-fitting lid and place it in the oven for about 1 1/4 hours or until the meat and vegetables are very tender when pierced with a fork.
  • Combine 2 tablespoons of butter and the flour with a fork and stir into the stew. Add the frozen onions. Saute the mushrooms in 2 tablespoons of butter for 10 minutes until lightly browned and then add to the stew. Bring the stew to a boil on top of the stove, then lower the heat and simmer for 15 minutes. Season to taste.
  • To serve, toast the bread in the toaster or oven. Rub each slice on 1 side with a cut clove of garlic. For each serving, spoon the stew over a slice of bread and sprinkle with parsley.

3 tbsp vegetable oil
1 ½kg stewing or braising steak, cut into small chunks
2 large onions, chopped
2 carrots, chopped
2 celery stalks, chopped
2 bay leaves
2 thyme sprigs or rosemary sprigs
3 tbsp plain flour
750ml bottle red wine
1 beef stock cube
1 tsp caster sugar
2 tbsp tomato purée
100g unsmoked bacon lardons
6 small shallots or baby onions, halved or quartered
300g closed cup mushrooms, halved or quartered
mashed potatoes or crusty bread, to serve

Steps:

  • Turn the slow cooker to low and heat 2 tbsp of the oil in a large frying pan. Season the meat and fry for 3-4 mins in batches until browned all over, scooping out each batch with a slotted spoon and transferring the browned meat to a plate.
  • Tip the onion, carrot and celery into the pan and fry for 5-10 mins until soft. Add the herbs and flour and cook for another 2 mins. Pour a splash of the wine into a bowl, then add the stock cube, sugar and tomato purée and mix to form a paste. Scrape the paste into the onion mix and pour in the remaining wine. Bring the mixture to a bubble, then transfer to the slow cooker. Stir in the browned beef, topping up with a splash of water to cover the meat if needed. Simmer on low for 6-8 hrs until the meat is falling apart but still holding its shape.
  • About 35 mins before serving, heat the remaining oil in a pan. Fry the bacon, shallots and mushrooms for 5-8 mins until caramelised and the veg is starting to soften, then tip into the slow cooker. Simmer the stew gently on high for 30 mins. If you want a thicker gravy, use the reduce function or leave the stew uncovered. Serve with mashed potatoes or crusty bread, if you like.

3 pounds beef stew meat
1-3/4 cups dry red wine
3 tablespoons olive oil
3 tablespoons dried minced onion

1 pound whole fresh mushrooms, quartered
24 pearl onions, peeled (about 2 cups)

Steps:

  • Place beef in a large resealable bowl; add wine, oil and seasonings. Turn to coat. 3 lbs lean beef, cleaned and cut into 1 cubes (top sirloin's good)
1 (750 ml) bottle red wine (A Burgundy is fine, but any Merlot also works)
2 small onions or 1 large onion, finely chopped
2 carrots, peeled, cut lengthwise and sliced
2 celery ribs, washed and chopped into 1/4-inch pieces
2 large garlic cloves, minced
5 slices bacon, sliced into 1/4 pieces
3 tablespoons olive oil
1 cup flour
salt
pepper
1 tablespoon fines herbes
1 sprig fresh rosemary, chopped
other spices or herbs, to your taste
6 big brown italian mushrooms, cleaned and sliced (cremini!)
1 teaspoon garlic powder
parsley, chopped, for garnish

Steps:

  • In a large pot, cook the bacon pieces at medium-low heat, stirring occasionally until the pieces are completely crispy and are swimming in bacon fat. Scoop out the bacon and set aside.
  • Put the flour into a large zip lock bag with about a tsp of salt and ditto of pepper. Mix well. Coat the meat cubes in this mixture in 4 batches, removing each batch as it's coated.
  • Increase the heat under the pot to high, and brown the meat in batches. If the bacon fat mysteriously disappears, replace with olive oil, or vegetable oil if you want. I know you're not supposed to heat olive oil but it didn't do me any harm, and vegetable oil sometimes forms a nasty-tasting slick on the surface of this dish -- Set the browned meat aside in a bowl.
  • Once all the meat is browned, add oil if needed and put the onion, carrot and celery in the pan. Stir over medium-high heat until thoroughly softened. Season to taste with salt and pepper if you like, then add the minced garlic and the meat back in along with its juices. Stir, then add the whole bottle of wine to the pan.
  • A word about spices. Before you start simmering, I like adding the herbs at this stage. Lots of fine herbs, definitely some fresh, chopped rosemary, but the truth is, I sort of make it up as I go along at this point. Cover and simmer over low heat for at least 4-5 hours.
  • During the final half-hour of simmering, sprinkle the mushrooms with garlic powder and fry until crispy. Set aside.
  • Taste the stew. Add salt, pepper and spices where needed. Another flying-by-ear operation! Guilty secret: last time I made this, I added 2 tbsp of Emeril's Essence to the stew and that worked beautifully!
  • Serve in a big bowl and sprinkle with the fried mushrooms and parsley. Serve with (or over) potatoes or pasta.

3 slices bacon, chopped
3 tablespoons butter, divided
16 white mushrooms, medium in size, wiped with damp cloth to clean, thinly sliced
1 cup frozen pearl onions, defrosted and drained
Salt and pepper
2 pounds lean sirloin, 1-inch thick, trimmed and cubed into 1-inch pieces
3 tablespoons flour
1 cup burgundy wine
1 1/2 cups store-bought beef stock
Bouquet of 3 or 4 sprigs each sage and fresh thyme, tied with kitchen string
12 ounces wide egg noodles, cooked to package directions
2 tablespoons butter, cut into small pieces
1/4 cup chopped fresh parsley leaves, 2 handfuls
12 blades fresh chives, snipped or finely chopped

Steps:

  • Heat a large deep skillet with a heavy bottom and a lid over medium-high heat. Add bacon to the pan and brown. Remove crisp bacon bits with slotted spoon. Add 1 1/2 tablespoons butter to the pan and melt into bacon drippings. Add mushrooms to the pan and turn to coat evenly with butter and bacon drippings. Season the mushroom slices with salt and pepper. Saute mushrooms 2 to 3 minutes and add onions to the pan. Continue cooking onions and mushrooms 2 to 3 minutes longer, then transfer to a plate and return pan to the heat. Add remaining butter to the pan and melt it, then add meat to very hot pan and brown evenly on all sides, keeping the meat moving. Add flour to browned meat in the pan and cook the flour 2 minutes. Add wine to the pan slowly while stirring. When the wine comes up to a bubble and you have scraped up the pan drippings, add the stock and bouquet of fresh sage and thyme sprigs to the pot. Cover the pan. When the liquid boils, reduce heat to medium. Cook covered 5 minutes, remove lid and add mushrooms, onions and bacon back to the pot. Simmer with the cover off until sauce thickens a bit. Adjust seasoning and remove herb bouquet.
  • Toss hot egg noodles with butter and herbs. Place a bed of noodles in a shallow bowl and pour beef burgundy over the noodles and serve.

BEEF SIRLOIN STEW BOURGUIGNON

This is a "killer" beef dish! I have made this using a small prime rib roast cut into cubes and added in the ribs bones also. You will need 2 (750-ml) bottles of red wine and brandy for this, how could this be bad LOL! or just reduce the wine and add in more beef broth, but it will not have the same flavor! This complete dish can be made 1 day ahead, and really it should be, as it tastes even better the following day! Serve this with crusty garlic bread.

3 -4 lbs sirloin tip roast or 3 -4 lbs steak, cut into about 1-1/2-inch cubes

6 large carrots, cut into about 1-inch chunks
2 lbs small baby onions (can use a small bag frozen)

2 1/2 cups beef broth
1/4 cup brandy
2 (750 ml) bottles dry red wine
2 lbs small white button mushrooms
2 tablespoons dried thyme
1 tablespoon brown sugar (or to taste)
1 -2 tablespoon tomato paste
salt and black pepper

Steps:

  • Set oven to 350 degrees.
  • In a large Dutch oven over medium heat cook the bacon until crisp (about 8 minutes) remove to paper towels.
  • Season the flour with seasoning salt and pepper.
  • Coat the beef in the flour mixture, then brown well in oil on all sides for about 6 minutes; transfer to a large bowl.
  • Add in small onions and carrots to the pot and saute until light brown (about 6 minutes).
  • Add in chopped garlic and saute for 1 minute.
  • Remove the carrots and onions to a bowl.
  • Add in 1 cup broth and brandy to the pot; boil until reduced to a glaze (about 8-10 minutes) scraping up the browned bits with a wooden spoon.
  • Return the beef and carrots, onions and bacon back to the pot.
  • Add in wine, mushrooms, thyme, sugar, tomato paste and 1-1/2 cups beef broth; bring to a boil, stirring occasionally.
  • Cover the pot and place in oven; cook for about 1-1/2 hours or until beef is tender.
  • Remove the pot from oven and ladle the liquid from the pot into a medium saucepan (spoon off any fat).
  • Boil the liquid until reduced to about 2-1/2 cups, or a little more (about 35-40 minutes).
  • Season with salt and pepper.
  • Pour the liquid back over the beef and veggies.
  • Rewarm over low heat before serving.
  • Delicious!
