PASSION FRUIT PAVLOVA
Pavlova is named after Russian ballerina Anna Pavlova. She toured Australia and New Zealand in the 1920s, and both countries take credit for inventing the dessert. Some people say it was inspired by her tutu; others say it was created in the spirit of her light, airy style of dancing.

- Preheat the oven to 275˚ and line a baking sheet with parchment paper. Using a plate or cake pan as a guide, trace a 9-inch circle on the parchment with a pencil, then flip over the parchment on the baking sheet (the circle should still be visible); set aside.
- Make the meringue: Whisk the egg whites, 1/4 teaspoon vinegar and the salt in a large bowl with a mixer on medium speed until soft peaks form, 2 to 4 minutes. Gradually beat in the sugar, 1 tablespoon at a time, until dissolved. Increase the mixer speed to medium high and beat until stiff peaks form, 3 to 4 minutes. Add the cornstarch, vanilla and the remaining 1/2 teaspoon vinegar and beat until just combined, 10 to 15 seconds.
- Spread the meringue into a 9-inch round on the prepared baking sheet (use the pencil marking as a guide) and make a shallow well in the center. Transfer to the oven and immediately reduce the oven temperature to 225˚. Bake until crisp and dry, about 2 1/2 hours. (The meringue should still be white or a very pale cream color.) Turn off the oven and open the door slightly (use the handle of a wooden spoon to prop it open about 1/2 inch). Let the meringue cool completely in the oven, about 1 1/2 hours. Carefully remove the meringue from the parchment and transfer to a platter.
- Make the whipped cream: Beat the heavy cream, sugar and vanilla in a large bowl with a mixer on medium-high speed until soft peaks form, about 2 minutes.
- Just before serving, top the meringue: Gently stir the passion fruit pulp to loosen. Top the meringue with the whipped cream and passion fruit. Serve immediately.
PASSION FRUIT FOOL
There is something about the fragrant astringency of passion fruit, which when mixed with the bland, soft thickness of whipped heavy cream, makes one feel about as near to sensation heaven as it's possible to get at lunchtime.

- Chill 6 small wineglasses. Cut passion fruit in half, and scoop out pulp with a teaspoon into a bowl. Mash lightly, cover and refrigerate. Using an electric mixer or by hand, whisk cream until lightly thickened. Refrigerate cream until needed, up to 4 hours.
- When ready to serve, remove cream from refrigerator, and add sugar, lemon juice and liqueur. Whisk mixture until thickened but still slightly floppy. Fold in passion fruit. Spoon into glasses, and serve.

- Pour a cup of sugar (200g) and ⅓ cups (80ml) of passion fruit juice into a saucepan over a medium heat. Let the sugar melt and form a golden color. Don't over stir. Take off the heat.
- Spoon the caramel into each ramekin, and swirl it around so the bottom is covered. Set aside to cool.
- In another saucepan, heat heavy cream, whole milk, vanilla extract, and two tablespoons of passion fruit juice. Stir until well mixed and hot.
- In a large bowl, mix egg yolks, eggs, and gradually pour in the hot passion fruit cream mixture until fully incorporated. Pour the mixture through a sieve to make the mixture smooth.
- Place the ramekins into a large roasting pan. Pour hot water into the pan to come roughly halfway up the sides of the ramekins. Pour the mixture into the ramekins and bake at 350˚F (180˚C) for 45 minutes.
- Let the flan cool outside the oven, and then refrigerate it for at least two hours.
- When you're ready to serve the flan, run a knife around the edges to loosen, place a dish over the top of the ramekin and quickly invert it.

- Make ahead: Passion Fruit Simple Syrup.
- Combine 1 cup water, 1 cup granulated sugar, and the scooped insides of about 6 ripe passion fruits in a saucepan over medium high heat. bring to a boil, stirring until sugar is fully dissolved. Reduce heat to low, simmering for 20 minutes, uncovered. Remove from heat, let cool, then transfer to an airtight container and refrigerate. Do not discard passion fruit seeds! That's what makes the syrup so pretty.
- Combine all ingredients except egg white in a cocktail shaker over ice. Shake until thoroughly chilled.
- Strain contents of shaker into a standby glass, dump ice, put cocktail mixture immediately back into chilled shaker and add egg white. Shake vigorously for about thirty seconds or until egg white is foamed.
- Pour (don't strain) contents into a coupe glass.
- Garnish with a floating slice of passion fruit and a passion fruit leaf and vine tendril, if you've got them.
