KID'S FAVORITE PASSOVER PIZZA
Adults love this one, too! It's perfect for the 4th or 5th day of Passover when you start running out of creative cooking steam! You can add any vegetables you like or have on hand.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread marinara sauce on the pieces of matzo. Sprinkle garlic salt and oregano over the tomato sauce. Cover with cheese, tomato slices, and olives. Place pizzas on cookie sheets.
- Bake for 5 minutes at 350 degrees F (175 degrees C), or until cheese has melted.

PASSOVER PIZZA DOUGH
This Passover pizza dough is made with fine matzah meal plus margarine and 5 large eggs. Bake in the oven and add your favorite toppings.

Steps:
- Preheat oven to 350°F Heat the water, margarine and salt in a pot until the margarine is melted. Bring this mixture to a boil, remove from the flame and add all the matzoh meal into the pot at once, stirring very quickly. Return to low heat and cook for 1 minute. Keep stirring. The dough should come away from the sides of the pot and form a rough ball. Remove from the heat and let cool for about 5 minutes. Beat in 1 egg. When the dough is smooth and the egg has been fully incorporated into it, beat in another. Keep doing this until all 5 eggs have been added and the mixture is completely smooth. (You will get your daily exercise if you do this by hand with a wooden spoon) Spread the dough thinly on a baking sheet covered with parchment paper in the form of a pizza pie. Wet your fingers with cold water to better form the pies. You can make one large or several smaller crusts. Bake for about 15 minutes, until the crusts can hold their shape.Remove from the oven and let cool for about 10 minutes. Afterwards, you can put on your sauce, cheese and toppings and bake for another 15 to 20 minutes .
PASSOVER PIZZA
This recipe was invented in response to a request. I've been making Passover Rolls for years, I don't know why I never thought of turning the dough into pizzas!

- Preheat the oven to 350 degrees F.
- Spread parchment paper on a baking sheet.
- Heat the water, margarine and salt in a pot until the margarine is melted.
- If you are using kosher for Passover margarine this may take some time.
- Bring this mixture to a boil, remove from the flame and tip all the matzoh meal into the pot at once, stirring furiously.
- Return to low heat and cook for 1 minute.
- Keep stirring.
- The dough should come away from the sides of the pot and form a rough ball.
- Remove from the heat and let cool for about 5 minutes.
- Beat in 1 egg.
- When the dough is smooth and the egg has been fully incorporated into it, beat in another.
- Keep doing this until all 5 eggs have been added and the mixture is completely smooth.
- You will get a good workout if you do this by hand with a wooden spoon.
- Spread the dough on the baking sheet covered in parchment paper in pizza crust formation.
- You can make one large of several smaller crusts.
- I would go with the smaller crusts, as the dough bakes into a delicate"bread" and one large crust may not be supportive enough.
- Bake for about 15 minutes, until the crusts can hold their shape.
- Remove from the oven and let cool for about 10 minutes.
- Spread the tomato sauce evenly over the pizza crusts.
- Sprinkle the cheese over the tomato sauce.
- Sprinkle oregano over the top.
- If you want to add any toppings, this is the time and place.
- One of my kids likes olives on her pizza, another likes chopped tomatoes.
- Bake in the oven for another 15-20 minutes, or until the cheese is bubbly.
CHRISTIAN PETRONI'S PIZZA DOUGH
For the most tender pizza crust, use "00" flour, a finely ground style popular in Italy for making pizza and pasta. Use this dough to make Christian Petroni's Tenderoni Pizza, Margherita Pizza, and White Pizza. Martha and Christian Petroni prepared these recipes on episode 503 of Martha Bakes.

- Combine the water and yeast in the bowl of a stand mixer and stir to dissolve. Add the flour all at once, and mix, using the dough hook on the lowest setting, for two minutes.
- Add the salt and continue mixing on medium-low speed for 6 to 7 minutes until the dough is smooth and elastic. Transfer the dough to a bowl and cover with a damp towel or plastic wrap. Refrigerate for 24 hours. It should doubled in size.
- Turn dough out onto work surface and divide into eight 8-ounce portions. Form each portion into a ball with lightly oiled hands. Divide the shaped dough among two sheet pans lined with non-stick baking mats or lightly brushed with oil. Lightly brush dough with oil and cover with plastic wrap, and refrigerate for another 24 hours.
- Bring dough to room temperature one hour before shaping dough for pizza.
PASSOVER PIZZA (LOW-FAT KID'S FAVORITE)
Matzo sheets take the place of pizza crust, feel free to add on other toppings of choice --- the amounts listed are only a guideline, all amounts may be adjusted to taste.

I've been making this for years, but never seemed to put it up here on Zaar. I Googled myself today (painful) and this recipe came up, I had submitted it to a discussion list about 10 years ago.

- Lightly butter a 9 x 13 inch pan.
- Wet the matzos lightly with water.
- Fit 2 1/2 matzos on the bottom of the pan.
- Cover the matzos with half of the tomato sauce and arrange the sliced cheese over the sauce.
- Cover the cheese with the remaining matzos and pour the remaining sauce over the whole thing.
- Sprinkle the top with onion and garlic powder.
- Beat the eggs with the milk and pour this over the matzos.
- Bake in a preheated 375 degree F oven for 30 minutes or until the custard is set.
- Let rest for 10 minutes before cutting into serving portions.

FAMOUS CALIFORNIA PIZZA DOUGH
One product of my online interview with Wolfgang Puck was being given his pizza dough recipe to publish. I don't think this recipe is any kind of secret, and I'm sure it's been published many times, but I had never personally tried it, so I decided to do this recipe check out this iconic dough for myself.

Steps:
- Combine yeast, honey, and 1/4 cup warm water in a large bowl with a whisk. Let stand to dissolve, about 10 minutes.
- Add salt, 1 tablespoon olive oil, remaining 3/4 cup warm water, and 1 cup flour to the mixture and stir until a batter forms. Add another 1 cup flour; stir to combine. Add 1/2 cup more flour and combine.
- Turn dough out onto a surface dusted with 1/4 cup flour. Knead until a smooth, fairly firm, slightly sticky dough is achieved, adding more flour as needed.
- Transfer dough to a lightly oiled bowl and cover with a damp towel. Let sit in a warm place until doubled in size, 30 to 40 minutes.
- Turn dough out onto a lightly floured cutting board and pat down with your hand. Divide dough into 4 equal pieces. Stretch and fold each piece down and under, tucking as you go, to form pizza dough rounds.
- Cover with a towel and let sit in a warm place until doubled in size, 20 to 30 minutes.
- Preheat the oven to 450 degrees F (230 degrees C). Dust a baking sheet with cornmeal.
- Transfer dough rounds to a lightly floured board and press each piece out to desired thickness, starting in the center, until 8 to 10 inches wide. Form a crust shape around the outer edges with your fingertips.
- Transfer one round of pizza dough to the prepared baking sheet and brush with 1 tablespoon olive oil. Top with any sauce and toppings you like.
- Bake in the lower rack of the preheated oven for 5 minutes. Move to the center of the oven and continue to bake until golden, about 10 minutes more. Repeat to bake remaining pizzas.
