ASPARAGUS PASTA SALAD

- Heat shallot and oil in microwave safe covered dish for 30 seconds or in a small pan on the stovetop over medium low heat for 5 minutes. Allow oil to cool back to room temperature.
- Hold a spear of asparagus at each end and snap it. The spear breaks where the tender tops meet the tough bottoms. Line the broken spear up with the bundle of cleaned asparagus. Cut the spears using the guideline of the snapped spear. Par boil the asparagus tops in 1 inch simmering water covered for 3 to 5 minutes. Cool under cold running water and drain. Cut asparagus into 1-inch pieces on an angle and add to a bowl. Combine chopped, cooked asparagus with shredded endive, red bell pepper, cooked pasta, green peas and chopped parsley. The peas will defrost as you toss salad. Pour vinegar into a small bowl and whisk in cooled shallot oil. Pour dressing over salad and toss. Season salad with salt and pepper, to your taste and toss again.

- Place asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain and cool. In a large bowl, combine asparagus with the remaining ingredients; toss to coat. Cover and refrigerate for 3-4 hours or overnight.

CARAMELIZED CORN AND ASPARAGUS PASTA WITH RICOTTA
This summery pasta features caramelized corn, crisp-tender asparagus and earthy turmeric, which provides the dish's sunny hue. It's not easy to cook corn to the point of browning without losing all its moisture, but a pinch of sugar helps speed up the caramelization process. Vermouth lends acidity to the light, glossy garlicky sauce, but you could use wine, or even a tablespoon of lemon juice or champagne vinegar for lift. Fresh ricotta provides richness.

- Bring a large pot of salted water to a boil over high. Meanwhile, prepare the corn: Slice the corn kernels off the cobs, and add the cobs to the pot of water. (This lends a hint of sweetness.)
- Once the water comes to a boil, add the pasta and cook over medium-high, according to package instructions, until tender but toothsome, just shy of al dente.
- In a large, deep skillet, heat the oil over medium-high. Add the corn kernels and sugar, season with salt and pepper, and cook, stirring occasionally, until they begin to caramelize, about 6 minutes. Stir in the asparagus, scallions and 1 teaspoon turmeric, and cook, stirring frequently, until just softened and corn is caramelized, 2 to 3 minutes. Transfer to a bowl.
- Once the pasta is just short of al dente, reserve 1 1/2 cups pasta water, then drain the pasta, and discard the corn cobs.
- Add the butter, garlic and remaining turmeric to the large skillet and cook over medium until butter melts and starts to foam, about 3 minutes. Whisk in vermouth to deglaze, and cook 1 to 2 minutes, then whisk in 1 cup pasta water.
- Add the pasta, and toss with tongs over medium heat until thoroughly coated and al dente, 1 to 2 minutes, adding pasta water as needed. Remove from heat, stir in half the corn mixture and season to taste with salt and pepper.
- Divide pasta among plates. Dollop with ricotta and top with remaining corn mixture. Drizzle with olive oil. If using lemon, shower the pasta with lemon zest, then cut the lemon into quarters, for squeezing on top, and serve immediately.
PASTA SALAD WITH ASPARAGUS AND FRESH HERBS
Nice summer recipe that can be modified easily to suit different tastes or seasons. I have a small assortment of herbs in my garden so I used what I have. Use any combination you'd like. Toasted pine nuts would also be a good addition.

- Cook asparagus in a 6-8 quart pot of boiling, salted water until tender, about 4-6 minutes. Remove asparagus to large bowl. Using same water, cook peas 2 minutes. Remove and add to asparagus. Then add pasta to boiling water and cook until al dente.
- While pasta cooks pulse basil and other herbs, oil, salt and pepper and 1/2 cup feta in a food processor until chopped, then add to vegetables.
- Drain pasta. Mix together pasta and vegetable mixture. Then add parsley, scallions and remaining 1/2 cup feta and toss.

- In a large pot of boiling salted water, cook pasta until al dente according to package instructions. Drain and rinse pasta under cold water; leave in colander and set aside.
- Meanwhile, in a small saucepan, heat oil and garlic over medium heat. Cook, stirring, until garlic is fragrant and sizzling, about 1 minute. Remove from heat; let stand 10 minutes.
- Pour garlic oil through a sieve into a large bowl; discard garlic. Add pasta and herbs to oil. Season generously with salt and pepper; toss to combine. Cover and refrigerate until ready to serve, chilled or at room temperature.

- Stand asparagus, tips up, in two inches of water and steam, covered, until still slightly al dente. Remove to a serving platter.
- Meanwhile, make sauce. Combine basil, mint, lemon juice, chives, parsley, salt and pepper in blender or food processor. Add two tablespoons olive oil. Blend until smooth, adding more oil if necessary. You will probably need 3 to 4 tablespoons.
- Correct seasonings and pour sauce over asparagus. Serve at room temperature.

- Preheat an outdoor grill for medium-low heat and lightly oil grate.
- Place the ears of corn on the grill and cook until the kernels are tender, about ten minutes turning frequently. Remove the ears from the grill and cool. Cut the kernels off of the cob.
- Fill a large saucepan with lightly salted water and bring to a boil over high heat. Add asparagus and cook until just tender, about 1 minute. Drain in a colander and rinse immediately under cold, running water until well chilled. Set aside.

- In a glass measuring cup, mix the whole eggs, egg yolks, olive oil and a pinch of salt. Put the flour in a food processor. Drizzle the egg mixture over the flour and process in long pulses until the dough is evenly moistened and forms small clumps, about 2 minutes. Transfer the dough to a work surface and knead until smooth and silky, about 2 minutes. Shape into a ball, wrap in plastic and let stand at room temperature for 15 minutes or refrigerate overnight.
- Cut the dough into quarters; work with 1 piece at a time and keep the rest covered. Flatten the dough slightly and run it through successively narrower settings on a pasta machine until you reach the last setting. Trim the ends and cut the pasta sheet into 12-inch lengths. Drape the pasta sheets over a drying rack and let dry for 10 minutes. Repeat with the remaining dough.
- Lightly flour 2 pasta sheets and stack them on top of each other. Starting at a short end, roll up the sheets very loosely. Trim the edges and, using a large knife, cut the rolled dough into 1/4-inch-wide strips. Unroll the strips, toss lightly with flour and transfer to a baking sheet lined with wax paper. Repeat the process with the remaining sheets of pasta. Toss the cut pasta occasionally to separate the strands.
- Bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until barely al dente, 2 to 3 minutes. Drain the pasta, reserving 1 1/2 cups of the cooking water.
