PASTA AL TONNO
Steps:
- Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions. Reserve 1 cup of the cooking water, then drain the spaghetti in a colander.
- While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the capers and garlic and cook, stirring, until the garlic is golden, about 1 minute. Add the bruschetta topping, red pepper flakes and a pinch of black pepper and cook, stirring, until hot, about 4 minutes.
- Add the drained spaghetti to the skillet along with the tuna, parsley and about 1/2 cup of the reserved cooking water. Add more cooking water to loosen if desired and serve.
FRESH TOMATO PASTA SAUCE
This is a wonderful sauce to make with fresh home grown tomatoes. I freeze this after its made for use as a quick and easy pasta meal. This sauce even tastes better the next day! It is the perfect way to use an abundance of tomotoes!

Steps:
- Heat the oil in a large saucepan, cook the onion and garlic together, stiriing until the onion is soft. Add the tomatoes, salt and wine and simmer uncovered for about 15 minutes or until the tomatoes are soft.
- Add the remaining ingredients, simmer uncovered for 10 minutes or until thickened. Remove bay leaves from sauce.
- When cooled refrigerate for up to 3 days.
- Use sauce as desired.
PENNE WITH TOMATO SAUCE PASTA RECIPE BY TASTY

- Heat a large sauté pan over medium heat. Add the olive oil and onion, and cook until the onion is translucent, 8-10 minutes.
- Add the chile flakes and garlic, and cook for another 2 minutes, until fragrant. Stir in tomatoes and simmer uncovered for 20 minutes.
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Save ½ cup (120 ml) of pasta water, then drain.
- Add the drained pasta to the sauce. Stir well, adding a little pasta water if needed to loosen the sauce. Season with salt to taste.
- Enjoy!

HOMEMADE RAVIOLI WITH TOMATO SAUCE
A little bit of work for this one, but well worth the effort for a special occasion. My husband has even helped make these once to help satisfy one of my pregnancy cravings!!

- Sauce-In a saucepan, or crock pot, combine all ingredients.
- Heat until boiling.
- Cover, reduce heat and simmer at least 30 minutes, until flavours are well blended.
- Noodles- Mix together.
- Knead for 10 minutes or until dough is elastic.
- Add more water or flour accordingly.
- Filling- Mix all ingredients together.
- Roll out dough, cut into small rectangles, or circles.
- (I use a hunky bill's perogy maker and fill the pouches as directed.) Fill pockets with filling.
- Seal the edges with a little bit of water and pinch closed.
- (Or add a second layer of dough on to your perogy maker and use rolling pin to seal edges.) Cook in boiling water for 15 minutes.
- Serve with prepared sauce.
- Especially good with garlic bread and sprinkled with parmesan cheese.
PASTA WITH A SAUCE OF TOMATO AND HOMEMADE TONNO SOTT'OLIO
Though it cooks for only 15 minutes, this tomato sauce gets loads of flavor from both the tonno and the olio of your marinated tuna. But you don't want just to boil the tuna and tomatoes together: it is essential to add the fish, the oil, and all the other ingredients to the big skillet at the right time. The technique of skillet sauces, and how to finish pasta and sauce together, is explained in depth on pages 89 to 93\. For this chunky sauce, I recommend a short dried pasta with lots of nooks and crannies, like cavatelli or campanelle or conchiglie. These will catch some tuna for you with each bite, so you don't end up with all the tuna swimming in the bottom of your bowl.

- Lift a few chunks of tuna from the oil and hold them over a bowl (don't wipe or drain them-drips of oil are fine). With your fingers, break the chunks into flaky bits, 3/4 inch wide or so, to get 4 cups total.
- Meanwhile, bring a pot of salted water to a boil, and start cooking your pasta shortly after you've started the sauce.
- Pour 1/3 cup of the marinating oil into a 14-inch skillet, scatter in the onion, and set over medium-high heat. Sprinkle with 1/4 teaspoon salt, and cook, stirring, for 1 1/2 minutes or so, until the onion is sizzling. Clear one side of the skillet and drop in the capers, more or less according to taste, and stir to toast them in the hot spot for 1 1/2 minutes, then stir and cook with the onion for another minute.
- Drop in the flaked tuna and cook, still over medium-high heat, for 2 minutes, stirring occasionally. Sprinkle on another 1/4 teaspoon salt and the oregano. Let the tuna caramelize lightly but not darken. (If the pan seems very dry, add another tablespoon or two of oil.) Drop peperoncino, to taste, into a hot spot, and toast for a minute, then stir in with the other ingredients.
- Pour the crushed tomatoes and juices into the pan; slosh the tomato container with a cup or so of boiling pasta water and pour that in too. Now stir in 2 more tablespoons of tuna-marinating oil, and bring the sauce to an active bubbling boil.
- Cook for 10 minutes or more, at the same time as the pasta. Lift the pasta from the pot while it is still slightly undercooked, and drop it into the skillet of simmering sauce. Toss and cook pasta and sauce together until the pasta is fully cooked and the sauce coats it well and is not soupy. Remove from the heat, and toss pasta with the parsley; drizzle over another tablespoon or two of tuna-marinating oil, and toss again.
- Serve immediately in warm bowls.
SPAGHETTI CON POMODORO E TONNO
Steps:
- Warm 1/4 cup of the olive oil in a small saucepan set over medium-high heat. Add the onions and cook, stirring, until softened, about 3 minutes. Add the tomatoes, crushing them well with the back of a slotted spoon or by squeezing them through your fingers while adding them to the pan. Season with salt and pepper, and stir in the basil. Cover and bring to a boil. Reduce the heat to medium-low and simmer until the sauce thickens, about 20 minutes. Drain half of the olive oil from the canned tuna. Flake the tuna into the tomato sauce. Cover and simmer to heat through, 8 to 10 minutes. Remove from the heat and set aside while the pasta cooks. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, following the package instructions. Drain, then toss the pasta with the remaining 2 tablespoons olive oil. Add about 3 ladlesful of sauce and continue tossing. Distribute evenly among four dinner plates. Ladle the remaining sauce on top, and serve immediately.
CAPELLINI POMODORO (PASTA WITH FRESH TOMATO SAUCE)
Years ago, an Italian restaurant served a dish called capellini pomodoro which I ordered often, sometimes adding grilled chicken or shrimp to the pasta. This is my own quick version.

Steps:
- Bring a large pot of lightly salted water to a boil. Fill a large bowl with ice and cold water.
- Score a shallow "x" in the bottom of the tomatoes. Add tomatoes to the boiling water and cook uncovered until skin starts to peel off, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Peel tomatoes.
- Transfer peeled tomatoes to a food mill, and process until smooth.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain, saving 1/4 cup of the pasta water for the sauce.
- While pasta cooks, melt butter in a large skillet over low heat. Add garlic and salt and cook until fragrant, 1 to 2 minutes. Add pureed tomatoes and as much pasta water as desired. Simmer until thickened, 3 to 5 minutes. Season with salt and pepper to taste.
- Divide pasta amongst 4 serving bowls. Top with tomato sauce and sprinkle with fresh basil. Serve immediately.
