CHICKEN POTPIE WITH CORNBREAD BISCUITS
A showstopper of a dinner made for cold nights, this spin on classic chicken pot pie is the perfect all-in-one dinner when you're craving something hearty and comforting. The cornmeal and buttermilk biscuits that bake on top of the filling are the best of both worlds: crisp and flaky on top and soft and dumpling-like on the bottom. A hint of sweetness in the biscuits makes them reminiscent of classic American cornbread. This is not a recipe for rushed weeknights, though you can save time by making the biscuit dough and prepping the vegetables in advance (see Tip).

- Heat the oven to 400 degrees and line a sheet pan with parchment paper.
- Pat the chicken breasts dry and place them on the prepared sheet pan. Rub all over with olive oil and sprinkle generously with salt and pepper. Roast until just cooked through, 35 to 45 minutes, depending on the size of the breasts. Set aside until cool enough to handle, then discard the skin and bones and shred the meat into bite-size pieces.
- While the chicken roasts, begin making the biscuits: In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. Whisk until well combined. Add the butter, and working quickly, cut the butter into the flour using your fingers or a pastry cutter, until it forms crumbles about the size of peas. Switch to a fork, and stir constantly while adding the buttermilk in a slow, steady steam. Mix just until a wet, sticky dough forms. (Do not overmix!) Scrape the dough onto a piece of plastic wrap, pat it into a mound, then wrap and chill it in the refrigerator while you make the filling.
- In a 10-inch cast-iron skillet, melt the 3 tablespoons butter over medium heat. Add the carrots, celery, onion and rosemary, season with salt and pepper, and cook, stirring occasionally, until tender, 10 to 12 minutes.
- Add the flour and cook, stirring constantly, for 30 seconds, or until no white clumps of flour are visible. Add the chicken stock, milk, 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and bring to a simmer over medium heat. Turn the heat to low and simmer, stirring often and scraping the bottom of the pan, until very thick, 7 to 10 minutes; remove from heat. Add the sherry, chives and chicken, and stir until well combined.
- Unwrap the chilled biscuit dough and place it on a well-floured surface. Working quickly (you want the biscuits to be as cold as possible when they go into the oven) lightly press the dough with your hands into a rectangle about 3/4-inch thick. Fold the dough in half and press once more to a 3/4-inch-thick rectangle. Cut out biscuits with a 2 1/2- to 3-inch-round cutter and arrange them on top of the filling. (You should have about 10 biscuits.)
- Brush the tops of the biscuits with the egg wash. Place the skillet on a sheet pan to catch any drips, and bake, uncovered, for 20 to 30 minutes, until biscuits are puffed and golden. Cool for 10 minutes to let the filling thicken slightly, then serve.
SOUTHERN CHICKEN-CORNBREAD CASSEROLE
There's down-home goodness in every bite of this sweet-and-savory casserole. The blend of cornbread and cream-style sweet corn adds a hearty and flavorful touch.

- Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- In large bowl, mix chicken, poultry seasoning, garlic powder, sour cream and milk. Season well with salt and pepper. Fold in cheese and green onions. Spoon mixture evenly into dish.
- Make cornbread mix as directed on pouch, substituting cream style corn for the milk and adding the egg and melted butter. Spread evenly over chicken mixture.

- Preheat the oven to 375˚F (190˚C). Grease 2 baking sheets with nonstick spray and line with parchment paper.
- Make the cornbread: In a medium bowl whisk the buttermilk, eggs, and melted butter until smooth.
- In a large bowl, combine the flour, cornmeal, salt, sugar, baking powder, and baking soda, and whisk to combine.
- Add the wet ingredients to the dry ingredients and mix until fully incorporated.
- Divide the batter between the prepared baking sheets, and use a spatula to smooth the top.
- Bake for 15 minutes, until golden brown.
- Meanwhile, make the barbecue sauce: Add the ketchup, Worcestershire, apple cider vinegar, Dijon mustard, paprika, brown sugar, and black pepper to a medium saucepan over medium heat and whisk to combine. Bring the sauce to a boil, then reduce the heat to low and simmer for 10 minutes.
- Make the coleslaw: In a large bowl, add the mayonnaise, Dijon mustard, pepper, apple cider vinegar, paprika, and salt, and whisk to combine.
- Add the green cabbage, red cabbage, and shredded carrots, and stir until fully coated.
- Add the shredded chicken to a large bowl, and pour the barbecue sauce over the chicken, stirring until fully coated.
- Invert one of the cornbread sheets onto a large cutting board and peel off the parchment paper. Spread the chicken over the cornbread in an even layer. Top with the slaw. Invert the other cornbread sheet on top of the slaw and peel off the parchment paper.
- Slice into 12 equal pieces. Top each piece with 2 pickle slices and secure with toothpicks.

PASTA WITH CHICKEN AND CORNBREAD
Like so many of you, I have grandchildren, each with their own fussy palate. I am always trying to come up with recipes that all will eat at the same time. I am sure that this is not diet food nor the healthest meal I've ever made but this concoction was enjoyed even by the adults!. I made a lot but the recipe can be cut down as you need. And....since everything is cooked prior to going into the casserole, you can make this up to two days before, hold in fridge, and heat it up when you are ready!

- Poach chicken breasts in broth with bay leaf on medium heat. Add enough water to the pot to cover the chicken. Do not overcook. Remove from broth to cool and set aside the broth -- do not throw away.
- To a large pot of boiling, salted water, add pasta. Bring water back to a boil, stir pasta and cook only five minutes after boil restarts. Strain and rinse with cold water. Set aside. The pasta will still be raw in center but will finish cooking in the oven.
- Prepare cornbread mix re: package directions. Pour into a lightly greased 9x13 pan. Bake until a deep golden brown crust appears. Set aside to cool.
- In large mixing bowl, stir together the canned soup ,milk, horseradish, sage, and pepper. This will be rather stiff. Add milk in small amounts until you have a custard consistency. Stir in the pasta and mix well covering all the pasta.
- Cut chicken into cubes. Cut cornbread into cubes. Once all is cooled down, fold into the soup mixture. Let sit, covered about 20 minutes. Gently stir. If it appears dry, add some of the leftover broth until it is creamy again.
- Cover with foil Bake at 350 degrees for 20 minutes, uncover, continue baking until top is lightly browned.
- ++If you are not use to using ground sage, try the 1/4 teaspoons.
- Of course, you know your own family so add onions, mushrooms and any other veggie you know will be eaten.
