Steps:
- Heat oil in a pan, add the garlic (and chilli) and fry for 1 min.
- Stil in the tomatoes and stock and simmer for 10 minutes.
- Stir in the butter and basil and add the monkfish and the prawns to the mixture.
- season with pepper and cook for 5 minutes until the monkfish is opaque abd the prawns turn pink.
- meanwhile cook the pappadelle in a large pan of boiling salted water Drain the past and add to the tomato and seafood sauce and serve at once.
PASTA WITH MONKFISH AND TOMATOES

- Cook the pasta according to package directions. While pasta is cooking, heat the oil in a large skillet or saute pan over medium-high heat and cook the garlic, crushed red pepper, and monkfish chunks for 1-2 minutes, stirring. Add the tomatoes and cook for another 2 minutes, or until the fish is cooked. Turn off the heat. When the pasta is done, drain and mix the pasta and the spinach into the monkfish in the skillet, being sure to coat the pasta with the pan juices. Serve hot, seasoning to taste with salt, pepper, and Parmesan if using. This pasta dish will pair well with a range of wines, from rich white wine (such as an oaked California Chardonnay) or a dry rosé, to even a light bodied red. This recipe makes enough for company. It can be halved. Variations: Try with fresh basil in place of (or in addition to) the spinach.
SEARED MONKFISH WITH BALSAMIC AND SUN-DRIED TOMATOES
I was recently introduced to monkfish (sold as "monkfish tail" in fish markets) and it has become a new favorite of mine. It's often called "poor man's lobster" because its firm flesh and delicate, slightly sweet flavor are similar to lobster. Served with a balsamic, garlic, and sun-dried tomato topping, this recipe comes together in a snap.

- Combine sun-dried tomatoes, 2 tablespoons olive oil, balsamic vinegar, tomato oil, garlic, and sugar in a small bowl. Toss to coat and set aside.
- Use a sharp knife to cut the purple translucent membrane away from each fillet. Cut each fillet crosswise into 3 to 4 pieces. Season with salt and pepper.
- Heat 1 tablespoon olive oil and butter in a large skillet over medium-high heat. Sear monkfish until golden brown, about 3 minutes. Flip and continue cooking until opaque throughout, 2 to 3 minutes more. Reduce heat to low, remove fish to a plate, and cover with aluminum foil to keep warm.
- Pour sun-dried tomato mixture into the skillet and quickly stir around the pan until just warmed, about 20 seconds. Spoon topping over fish and garnish with parsley.

- Bring a large pot of salted water to a boil. Add linguine and cook, stirring occasionally, until tender yet firm to the bite, 9 to 10 minutes, or according to package instructions. Drain pasta, reserving 1/4 cup pasta water, and set aside.
- Wipe out the pot, and heat 2 tablespoons olive oil over medium heat. Add tomatoes, stirring occasionally, and cook until they start to burst, 5 to 7 minutes; crush some with the back of a spoon. Stir in white wine, olives, red pepper flakes, salt, and pepper; reduce heat and simmer for 2 to 3 minutes.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add scallops all at once, coating with oil; don't move or shake the pan for 1 minute. Gently flip the scallops, and cook until firm and opaque, 1 to 2 minutes more. Add garlic to the skillet and cook until fragrant, about 30 seconds. Do not overcook scallops.
- Add the pasta to the tomato mixture, toss to coat, and add reserved pasta water, if necessary. Divide the pasta mixture evenly among 4 shallow bowls and top with the scallops. Lightly drizzle with more olive oil, if desired, garnish with parsley, and serve.

- Preheat the oven to 400 degrees F (200 degrees C). Place tomatoes on a baking tray and drizzle with olive oil.
- Bake in the preheated oven for 15 minutes.
- Meanwhile, melt butter in a large frying pan over medium heat. Add onion, chile pepper, garlic, and ginger; fry until golden brown and slightly charred, about 10 minutes.
- Remove tomatoes from the oven and add to the frying pan, including oil from the baking tray. Add vinegar, oregano, parsley, cilantro, bouillon cube, salt, and pepper. Continue to fry until tomatoes reduce into more of a paste, about 5 minutes more.
- Add monkfish and cover with excess paste, making sure fillets are completely surrounded. Reduce heat and cook until fish flakes easily with a fork, 5 to 10 minutes more. Serve immediately.

- Heat two tablespoons of the oil in a heavy skillet over medium heat and add the garlic. Saute briefly while stirring; do not brown. Add the pepper flakes, onions, leeks and celery. Stir. Add the saffron and stir. Cook for two minutes, stirring often. Add the tomatoes, wine, bay leaf, salt and pepper. Blend in the parsley and fennel seeds. Bring to a boil, cover and simmer for 15 minutes. Stir often.
- Add the fish to the pan and stir. Cover and cook for about four minutes, then add the scallops. Cover and cook two minutes more.
- Meanwhile, boil the linguine al dente and drain. Put the linguine in a heated baking dish and spoon the remaining two tablespoons of oil over it. Sprinkle with pepper and toss briefly. Remove the bay leaf from the seafood sauce and spoon the sauce over the pasta. Toss and serve immediately.

- Slice monkfish into medallions about one-inch thick. Place in a dish, sprinkle with lemon juice and season with salt and pepper.
- Heat one tablespoon of oil in heavy skillet, add bread crumbs and saute until they are golden. Remove from pan and wipe out pan.
- Heat another two tablespoons of the olive oil in the skillet. Add onion and saute over medium heat until tender. Add garlic and saute briefly, then add tomatoes. Stir tomatoes in with other ingredients for a minute or two, just enough to warm them without cooking them through. Remove vegetables from pan.
- Add one more tablespoon of the oil to pan and cook the monkfish over medium heat, about three minutes on each side, until just cooked through. The monkfish will probably not take on any color. Arrange monkfish medallions on a warm platter or on individual plates.
- Return tomato mixture to skillet, add remaining two tablespoons of oil, stir, season with salt and pepper and add basil. Pour this mixture around the medallions of fish. Sprinkle the fish with the bread crumbs and serve.

- Holding back the sun-dried tomatoes with your fingers, drain the oil from the jar into a large pot. Coarsely chop the sun-dried tomatoes and add them to the pot, along with the nuts and olive oil. Set over medium-low and cook, stirring often, until the nuts are toasted, 5 to 6 minutes. Scrape into a large bowl (reserve the pot), then stir in the garlic and 1/2 teaspoon each salt and pepper.
- Fill the reserved pot with water (no need to wash) and bring to a boil. Season water with salt, add the pasta and cook until just past al dente. (The pasta will not cook further in the sauce.) Drain the pasta.
- While the water is coming to a boil, coarsely chop the ripe tomatoes. Add to the sun-dried tomato mixture, season with 1 teaspoon salt and stir to combine. (Tomato mixture can be made up to 2 hours ahead.)
- Add the drained pasta to the tomato mixture and stir to combine. Let sit until room temperature, about 15 minutes or up to 2 hours. Pasta salad will keep up to 3 days if refrigerated.
- When ready to eat, taste the pasta salad. If flavors are muted, add salt and lemon juice or red wine vinegar. If it's too sweet, add black pepper and lemon juice or red wine vinegar. Stir in the greens and eat.

Add the tomatoes, fish stock, pepper flakes, and a little salt to the pan and toss occasionally until the tomatoes break down and release their juices and the meat is opaque and cooked through, about 10 to 12 minutes. Using a slotted spoon or wire skimmer, transfer the fish to a bowl, cover, and set aside.
- Add the pasta, parsley, and a small ladleful of the pasta cooking water to the pan and toss until the pasta is al dente and well coated with the sauce, about 2 minutes, adding a little more pasta cooking water, if more liquid is needed.
- Divide the pasta among the plates and portion the fish on top. Drizzle with a little olive oil and serve immediately garnished with minced parsley.

- Cut the monkfish into fairly thick slices. Remove the central bone with a knife, being careful to remove any skin residues too. Then cut the monkfish fillets into pieces of about 2 cm (1 inch) and keep aside.
- In a large frying pan sauté the 2 cloves of garlic, peeled and left whole, in 6 tablespoons of extra virgin olive oil. Add the cherry tomatoes – washed and cut in half – and some fresh parsley leaves finely chopped. Stir then add a pinch of fine salt to taste, cover with the lid and cook over low heat for about 10 minutes.
- Now remove the garlic and add the monkfish previously cut into pieces. Keep cooking for another 5 minutes so as to cook the fish as well.
- Meanwhile, boil plenty of water (about 2 liters) in a pot, for the pasta. When it boils, add a tablespoon of coarse salt. Add the pasta (we opted for spaghetti) and cook following the cooking times indicated on the package. Usually it goes from 8 to 12 minutes.
