Provided by Paula Deen

Categories     comfort food     Family Supper     International

Time 20m

Yield 8

Number Of Ingredients 15

3 tablespoons lard, bacon fat, or olive oil
1 3/4 cups andouille sausage chopped
1 yellow onion chopped
1 green bell pepper chopped
2 celery stalks with leaves chopped
3 cloves garlic finely chopped
2 teaspoons ground cumin
1 teaspoon dried thyme
1 lb dried red beans
1 1/2 teaspoons salt
1 teaspoon hot sauce
3 bay leaves
6 cups cooked rice
3 tablespoons chopped fresh parsley, for garnish
1/4 cup scallions, sliced

Steps:

  • In a large pot or a Dutch oven, heat the fat, lard or oil over medium-high heat. Add the sausage and cook until golden, 5 to 7 minutes. Add the onion, bell pepper, celery, and garlic. Cook, stirring, until softened, 5 to 7 minutes. Stir in the cumin and thyme and cook for 1 minute.
  • Add the beans, salt, hot sauce, bay leaves, and enough water to cover the beans by 2 inches. Bring the mixture to a boil. Immediately reduce to a simmer, cover, and cook for 1 ½ hours. Uncover and simmer until the beans are tender and the sauce has thickened, 30 to 45 minutes, adding more water if necessary. Remove and discard the bay leaves. Serve over the rice, topped with the scallions. Garnish with the parsley.

GREEN BEANS WITH NEW POTATOES

Green Beans with New Potatoes image

This easy green bean with potatoes recipe from Paula Deen is a classic side dish perfect for entertaining. Ingredients include fresh green beans, onion, bacon grease and salt pork. Prep time is about 10 minutes and cooking time is 10 minutes on the stovetop.

Provided by Paula Deen

Time 10m

Yield 10

Number Of Ingredients 9

1/2 stick sliced butter
1 cut into slivers onion
12 small red potatoes
2 to 3 teaspoons Paula Deen's House Seasoning
2 cups plus more if needed chicken broth
1/4 cup bacon grease
1/4 lb sliced salt pork
3 lbs fresh green beans
to taste pepper

Steps:

  • Remove the ends from the beans. Snap the beans in two, place into a colander, wash, and set aside to drain.
  • Meanwhile, in a large cast-iron Dutch oven, lightly brown the salt pork in the bacon grease over medium heat, turning often, for approximately 10 minutes. Toss the green beans into the pot, stirring them with a wooden spoon to coat well with the pork fat. Add the stock and House Seasoning. Cook over medium-low heat, covered tightly, for approximately 30 minutes, or until the beans are half done.
  • While the beans are cooking, peel a center strip from each new potato with a potato peeler. At the end of 30 minutes, add the potatoes and onion to the beans; add 1/4 cup more broth if needed. Cook, covered tightly, until the potatoes are tender, approximately 25 to 30 minutes, periodically checking the pot to make sure a small amount of liquid remains. When the potatoes are tender, tilt the lid slightly, off to the side of the pot, and continue to cook until the green beans are wilted, approximately 15 minutes. While cooking, add butter and season with pepper.

PAULA DEEN'S PINTO BEANS

Paula Deen's Pinto Beans image

Or as we call them "Red Beans" in Texas. I've been making "Red Beans" for as long as I've been cooking, but I saw Paula make her's on the Foodnet Work and I liked the way she cooked her "ham hocks" and saved the liquid for the beans. The whole onion is a different twist on my way of cooking beans, too. It calls for her "house seasoning" but I just broke it down. These are wonderful, trust me.

Provided by True Texas

Categories     Beans

Time 5h10m

Yield 10 serving(s)

Number Of Ingredients 8

1 lb dry pinto beans
1 teaspoon chili powder
1/2 lb ham hock
4 cups water
1 onion, leave whole
salt, to taste
pepper
garlic powder

Steps:

  • Wash beans and soak overnight in cold water.
  • Drain the beans and dump into a slow cooker.
  • Stir in chili powder and oregano. If using ham hock: Pre-soak ham in a seperate pot, for a least 2 hours, or refrigerate up to 24 hours. Cook ham hock on top of oven for about 30 minutes, save the liquid and add to your beans.
  • Add the ham hock beans and more liquid to cover beans.
  • Add the onion (whole) to your beans then season with salt, pepper and garlic salt.
  • Cook on high for at least 5 hours or until beans are tender.
  • Serve up beans with some of the ham hock in them and cornbread.

  • Paula Deen’s Crockpot Potato Soup. How can a thick, creamy, crazy-delicious soup take just 10 minutes? That’s the magic of the Crockpot! This recipe uses frozen hash browns and cream of chicken soup for a short prep-time, and it includes cream cheese for that velvety finish.
  • Copycat Texas Roadhouse Pot Roast. I always remember pot roast being this ceremony in my house. It took forever to prepare and hours to cook, but it was all worth it when it came to the table.
  • Trisha Yearwood Crockpot Mac and Cheese Recipe. Mac and cheese is quintessential comfort food, and Trisha Yearwood has it down. Don’t be afraid of mixing up your cheeses with this recipe.
  • Instant Pot or Slow Cooker Korean Beef Tacos. If I have the option, I’ll always choose shredded meat in my tacos. It’s tender, flavorful, and I just prefer the texture to ground meat.
  • Easy Slow Cooker Mongolian Beef. I usually make Mongolian beef in my wok, and I have to admit that it can sometimes be a little tough. So it just makes sense to use the slow cooker.
  • Crockpot Pineapple Chicken. You won’t believe it, but adding pineapple to your next chicken dish will be a game-changer. This chicken will not only be insanely juicy, but it will cook right in a pineapple-juice sauce.
  • Crockpot Steak and Gravy. If you ask any Brit, a meat and potato dinner is not complete without a generous helping of gravy, and I couldn’t agree more!
  • Slow Cooker Swedish Meatballs. Be honest: do you go to Ikea just to wander around and then stock up on frozen meatballs? Me too! I’ve been to Sweden a few times, and I’m always delighted to see meatballs on the menu.
  • Crockpot White Chicken Chili. After eating beef and tomato chili for days on end, it’s nice to have a change of pace. This white chicken chili couldn’t be more different, but it delicious and filling all the same.
  • Slow Cooker Thai Peanut Chicken. On my trip to Thailand, I probably went overboard with the food. It’s just so fresh and exciting! And one of my all-time favorite things is the peanut sauce.
