FRIED ZUCCHINI
Giada De Laurentiis' Fried Zucchini, from Everyday Italian on Food Network, are crispy and vegetarian, covered with crunchy panko breadcrumbs and Parmesan.

Steps:
- Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
- Stir 1 1/2 cups Parmesan, the panko, and salt in a medium bowl to blend. Whisk the eggs in another medium bowl to blend. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet.
- When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
- Arrange the fried zucchini on a platter. Sprinkle with the remaining Parmesan and serve.
AIR FRYER CRISPY ZUCCHINI FRIES

- In a shallow dish, whisk together flour and a large pinch each of salt and pepper. In a second shallow dish, beat together one whole egg and yolk of second egg. Discard extra egg white. In a third shallow dish, whisk together breadcrumbs, Parmesan cheese, paprika (if desired), and a large pinch each of salt and pepper. Dredge zucchini in flour mixture, then dip in beaten egg, and then dredge in breadcrumb mixture.
- Working in batches, spray zucchini on both sides with oil and place in air fryer basket in a single layer. Set temperature to 400 degrees, and air fry for 5 minutes. Turn zucchini, spray with oil, and air fry for 5 minutes more. Repeat with remaining zucchini.
CRISPY OVEN ZUCCHINI FRIES

- Preheat oven to 425 °F
- Add flour to a pie plate and whisk in some salt and pepper. Beat the eggs together in another pie plate.
- In a third pie plate, whisk together the panko, Parmesan, smoked paprika, and another big pinch of salt and pepper.
- Dip the zucchini in the flour, then in egg, and then through the breadcrumb mixture. Place on a sheet tray spritzed with non-stick spray. Bake for 10 minutes, flip, and continue cooking for 10 minutes more until golden and crisp.

Steps:
- Heat oil to 325° in a deep fryer or a large deep pot, no more than half full.
- Slice potatoes into wedges (peel or leave on potato skins).
- Fry potatoes for 2 minutes and drain, allow to cool off.
- Turn oil up to 360°.
- In a bowl combine flour, salt and black pepper and set aside.
- In another bowl add evaporated milk.
- Dip cool potato fries in evaporated milk than into flour mixture.
- Fry 5-10 minutes or until browned.
- Drain on paper towel and enjoy.

- Combine flour, salt, nutmeg, baking soda, cinnamon and sugar in large bowl.
- In a separate bowl combine eggs, oil, water, zucchini and lemon juice.
- Mix wet ingredients into dry.
- Fold in nuts.
- Bake in 2 standard loaf pans for 1 hour, or 5 mini-loaf pans for 45 minutes, or until tester inserted comes out clean.
