SNAP-PEA-AND-JICAMA SALAD WITH SEA SCALLOPS



Snap-Pea-and-Jicama Salad With Sea Scallops image

1/2 cup coarsely chopped basil
1/2 cup coarsely chopped mint
3 tablespoons lime juice
1/2 cup olive oil
1/2 teaspoon sugar
1 1/2 teaspoons kosher salt
1/8 teaspoon freshly ground black pepper
3/4 pound (about 3 cups) snap peas
1 small (about 3/4 pound) jicama, peeled and cut into 2-inch matchsticks
1 1/2 cups mung-bean sprouts
18 large sea scallops (about 1 1/2 pounds), sliced in half and patted dry
1 teaspoon kosher salt
2 tablespoons unsalted butter
Thinly sliced basil leaves for garnish
Thinly sliced mint leaves for garnish

Steps:

  • To make the vinaigrette, combine the basil, mint and lime juice in a blender and process, stopping twice to scrape down the sides, until combined. With the blender running, slowly pour in the olive oil. Add the sugar, salt and pepper.
  • To make the salad, bring a large saucepan that is 2/3 full of salted water to a boil. Add the snap peas and cook until they just begin to soften, about 2 minutes. Drain and immediately plunge the peas into cold water to stop the cooking. When cool, drain again and combine with the jicama and mung-bean sprouts.
  • Sprinkle the scallops with 1 teaspoon salt. Melt the butter in a heavy skillet over high heat. Sear the scallops until they are browned and just cooked through, about 1 1/2 minutes per side.
  • Toss the salad with half of the dressing and transfer it to a serving platter or individual serving plates. Top the salad with the scallops, then drizzle both the scallops and the salad with the remaining vinaigrette and sprinkle with the mint and basil.

My son-in-law frequently requests this crisp pea salad of mine. It has plenty of fresh ingredients and a tangy dressing. Peas are positively palate-pleasing paired with cashews in the cool side dish.

3/4 cup vegetable oil
1/4 cup cider or red wine vinegar
1 garlic clove, minced
2 to 3 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/2 to 3/4 teaspoon salt
1/2 teaspoon lemon juice
1/4 teaspoon pepper
1/4 teaspoon sugar
1 package (10 ounces) frozen peas, thawed
2 celery ribs, thinly sliced
1/2 cup sour cream
4 bacon strips, cooked and crumbled
3/4 cup chopped cashews
Lettuce leaves and tomato wedges, optional

Steps:

  • For dressing, combine the first nine ingredients in a small bowl; mix well. Cover and refrigerate for 1 hour. , In a large bowl, combine peas, celery and onions. Combine sour cream and 2 tablespoons dressing (refrigerate remaining dressing); mix well. Fold into the pea mixture. Just before serving, stir in bacon and cashews. If desired, serve on lettuce with a tomato garnish.

2 (3 ounce) packages ramen noodles (flavor packets saved for another use) broken into pieces
½ cup rice vinegar
¼ cup reduced-sodium soy sauce
1 clove garlic, minced
1 teaspoon ground ginger
¼ teaspoon crushed red pepper flakes
black pepper to taste
1 tablespoon peanut oil
3 tablespoons toasted sesame oil
2 (10 ounce) packages frozen petite peas, thawed
1 jicama, peeled and diced
2 (8 ounce) cans water chestnuts, drained and diced
3 stalks celery, diced
3 green onions, chopped
1 cup cashew pieces

Steps:

  • Toast the dry ramen noodles in a skillet over medium heat until golden brown, stirring frequently, about 10 minutes. Spread the noodles into a large mixing bowl to cool; set aside. Make the dressing by whisking the vinegar, soy sauce, garlic, ginger, red pepper flakes, and black pepper together in a small bowl. Whisk in the peanut oil and sesame oil until blended and thick.
  • Combine the peas, jiciama, water chestnuts, celery, green onions, and cashews in the bowl containing the toasted noodles. Pour the dressing overtop, and toss to mix immediately prior to serving.

Jicama, a root vegetable with tan skin and white flesh, is available at most supermarkets. Its mild sweetness and crunchy texture make it a refreshing addition to salads.

1 lime
3 tablespoons fresh lime juice
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
1 pear, halved, cored, and thinly sliced
1 small jicama (about 12 ounces), peeled, quartered, and thinly sliced
1/2 cup fresh cilantro

Steps:

  • Cut peel and pith from lime. Slice lime along membranes to release segments, and reserve segments.
  • Whisk lime juice and oil in a medium bowl, and season with salt and pepper. Add pear, jicama, and cilantro, and toss to combine. Fold in reserved lime segments, and season with more salt if desired. Serve immediately.

I created this recipe to try and duplicate a salad I had at Dayton's River Room over 15 years ago. It has changed a bit over the years but is always a hit at my house.

1 large jicama (enough to make four cups of julienne sticks)
1 cup dry roasted salted peanut, lightly crushed
1 large red bell pepper, diced
1 -2 bunch fresh cilantro, to taste
1 cup sugar
1 cup white vinegar
1/2 teaspoon red pepper flakes

Steps:

  • Peel and julienne the jicama (don't grate it or it will be a soggy mess).
  • Put the peanuts in a zip bag and smash them with a can or mallet a couple of times.
  • Boil sugar and vinegar until sugar dissolves and let cool a bit and add crushed red pepper flakes.
  • Chop cilantro.
  • Mix jicama, 1 - 1 1/2 bunch cilantro and red peppers and toss with sugar/vinegar mixture.
  • Take remaining cilantro and sprinkle over salad, top with peanuts.
