This is the perfect salad for summertime, when peaches are at their ripest and juiciest. Arugula brings a peppery bitterness that pairs beautifully with the sweetness of ripe peaches. Add in the salty, creamy tang of feta, and you have an easy salad that's truly special.

Summer Vinaigrette 1 clove of garlic, smashed and cut in half (optional) 1 tablespoon white wine vinegar Pinch of sea salt 2 tablespoons extra virgin olive oil 1 tablespoon water 1 tablespoon of mint, cut into a chiffonade 2 tablespoons basil leaves, cut into a chiffonade For the salad: 2 teaspoons minced shallot or red onion 1 large peach, diced 5 ounces baby arugula, pre-washed (see Chef Tips) ⅓ cup feta cheese ¼ cup roasted pistachios, roughly chopped

Steps:

  • Prepare the dressing as described here, but put the mint and basil aside. Stir in the minced shallot.
  • Add the peaches, arugula, feta and pistachios. Just before serving, add the herbs and toss to combine.

1 tablespoon balsamic vinegar
2 teaspoons fresh lemon juice
1/4 teaspoon salt (preferably sea salt)
3 tablespoons extra-virgin olive oil
4 firm-ripe peaches (1 1/2 lb total)
24 thin slices pancetta (Italian unsmoked cured bacon; 1 1/4 lb)
2 tablespoons olive oil
6 oz baby arugula (6 cups)
2 1/2 oz finely crumbled ricotta salata (1/2 cup)
Coarsely ground black pepper to taste

Steps:

  • Whisk together vinegar, juice, and salt, then add extra-virgin oil in a stream, whisking until emulsified.
  • Cut an X in bottom of each peach and immerse in boiling water 15 seconds, then transfer to a bowl of ice water. Peel peaches and cut each into 6 wedges, then unroll pancetta slices and wrap one slice around each wedge, overlapping ends of pancetta. Heat remaining oil in a 12-inch nonstick skillet over moderate heat until hot but not smoking, then cook peaches in 2 batches, turning over occasionally with tongs, until pancetta is browned on all sides and cooked through, about 5 minutes per batch. Transfer to a plate and keep warm, covered loosely with foil.
  • Divide arugula and warm pancetta-wrapped peaches among 8 salad plates. Drizzle with dressing and sprinkle with ricotta salata and pepper. Serve immediately.

2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
2 teaspoons clover honey
1/4 cup extra-virgin olive oil

3 ripe peaches, halved and pitted cut into 8 slices
2 ounces baby arugula
8 ounces gorgonzola
1 loaf ciabatta, cut into 1/2-inch rounds, grilled with olive oil and sprinkled with salt and pepper

  • Heat the olive oil in a medium saute pan over medium heat. Add the pancetta and cook until golden brown and crispy. Remove the pancetta with a slotted spoon to a paper towel-lined plate, and reserve the oil.
  • Vinaigrette: Whisk together the lemon juice, balsamic vinegar, and honey in a large bowl and season with salt and pepper.
  • Toss the peaches with some of the vinaigrette add the arugula and toss to combine. Transfer the greens to a platter, top with the peach halves and sprinkle the top with the gorgonzola and crispy pancetta. Serve with toast schmeared with fig preserves and gorgonzola.

1 tablespoon balsamic vinegar
1 tablespoon chopped shallot
1 teaspoon Dijon mustard
½ teaspoon salt, or more to taste
4 peaches, halved and pitted
4 skinless, boneless chicken breast halves
8 cups baby arugula

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk 1/4 cup olive oil, balsamic vinegar, shallot, Dijon mustard, and 1/2 teaspoon salt together in a bowl until dressing is well mixed.
  • Brush 1 teaspoon oil onto cut-side of peaches.
  • Place peaches, cut-side down, onto grill and cook until heated through, about 4 minutes. Transfer peaches to a plate.
  • Brush remaining oil onto both sides of chicken breasts and season with salt.
  • Cook chicken on grill until no longer pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Slice chicken into thin pieces and cut peaches into 1/2-inch thick pieces.
