PEAR SORBET WITH RASPBERRY SAUCE
I clipped this recipe out of the newspaper several years ago and then modified it to suit my family's taste. It serves as a casual dessert or it makes a lovely presentation in pretty glass dessert dishes with the raspberry sauce drizzled over it.

Steps:
- In a large saucepan, combine the pears, water, sugar and 4-1/2 teaspoons lemon juice. Cook and stir over medium heat for 15-20 minutes or until pears are tender. Cool slightly. , In a blender, process pear mixture for 1-2 minutes or until smooth. Transfer to a 13-in. x 9-in. dish. Cover and freeze for 45 minutes or until edges begin to firm; stir. , Freeze 2 hours longer or until firm. Just before serving, process again in a blender for 2-3 minutes or until smooth., For sauce, press raspberries through a sieve; discard seeds. Stir in remaining lemon juice. Serve with sorbet.

Steps:
- Bring sugar and 1 cup water to a boil in a large saucepan. Cook, stirring occasionally, until sugar dissolves. Let syrup cool.
- Pulse raspberries and remaining 3/4 cup plus 4 teaspoons water in a food processor until smooth. Strain through a fine sieve set in a deep bowl or a large glass measuring cup. Using a rubber spatula, gently press down on the mixture to extract as much liquid as possible; discard solids.
- Transfer raspberry puree to a deep bowl or airtight container. Add syrup, and stir until well combined. Refrigerate for at least 1 hour.
- Pour mixture into an ice cream maker, and freeze according to manufacturers' instructions. Transfer sorbet to a large airtight container, and freeze for at least 2 hours.
PEACH AND STRAWBERRY SORBET
Fresh peaches and strawberries are sweetened with orange juice and brown sugar to make a refreshing summertime treat. This simple sorbet recipe requires an ice cream maker.

- Bring water to a boil in a small saucepan; remove from heat and add sugar. Stir until completely dissolved. Pour syrup mixture into a heat-proof container, cover halfway with plastic wrap, and place in the refrigerator until completely chilled, 45 to 60 minutes.
- Put blackberries, strawberries, and peach slices into a blender and blend until pureed. Add the fruit puree to the chilled sugar syrup and strain the mixture to remove the seeds. Stir in lemon juice. Cover and refrigerate until the mixture is chilled, about 1 hour.

PEACH AND VANILLA GELATO AND RASPBERRY SORBETTO COCKTAIL
Steps:
- Place 4 martini glasses in the freezer 30 minutes before serving.
- Using a small ice cream scoop, put one scoop each of the peach gelato, vanilla gelato and raspberry sorbet into each glass. Top with chilled prosecco and garnish with mint.
PEACH SORBET
Steps:
- In a saucepan over medium heat, poach the peaches in 1 cup of the sugar and the water until they are just tender, about 10 minutes. Remove peaches from the liquid and allow to cool. Place them in a blender and add the lemon juice, corn syrup, salt and the remaining quarter cup of sugar. Blend until smooth. If necessary, pass the peach mixture through a fine sieve.
- Place the mixture in an ice cream machine and process according to manufacturer's directions.
