PEACH AND BLUEBERRY CRUMBLES

Peach and Blueberry Crumbles image

Provided by Ina Garten

Categories     dessert

Time 1h10m

Yield 5 to 6 servings

Number Of Ingredients 12

2 pounds firm, ripe peaches (6 to 8 peaches)
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 cup fresh blueberries (1/2 pint)
1 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 pound (1 stick) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Immerse the peaches in boiling water for 30 seconds to 1 minute, until their skins peel off easily. Place them immediately in cold water. Peel the peaches, slice them into thick wedges, and place them in a large bowl. Add the lemon zest, lemon juice, granulated sugar, and flour. Toss well. Gently mix in the blueberries. Allow the mixture to sit for 5 minutes. Spoon the mixture into ramekins or custard cups.
  • For the topping, combine the flour, granulated sugar, brown sugar, salt, cinnamon, and the butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed until the butter is the size of peas. Rub the mixture with your fingertips until it's in big crumbles, then sprinkle evenly over the fruit. Place the ramekins on a sheet pan lined with parchment paper and bake for 40 to 45 minutes, until the tops are browned and crisp and the juices are bubbly. Serve warm or at room temperature.
  • If you want to make these early, store the unbaked crumbles in the refrigerator and bake before dinner.

Categories     dessert

Time 1h

Yield 6 servings

Number Of Ingredients 15

1 teaspoon unsalted butter, at room temperature
Two 16-ounce bags frozen sliced peaches
1 1/2 cups frozen blueberries
1/4 cup freshly squeezed lemon juice
3 tablespoons turbinado sugar
2 tablespoons arrowroot
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
1 cup old-fashioned rolled oats
1/3 cup all-purpose flour
1/3 cup turbinado sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon kosher salt
6 tablespoons unsalted butter, chilled and cut into cubes
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 400 degrees F.
  • For the filling: Butter a 7-by-3-inch round baking dish and set aside. In a large bowl, toss together the sliced peaches, blueberries, lemon juice, sugar, arrowroot, vanilla and salt. Pour the mixture into the prepared baking dish.
  • For the topping: In a separate bowl, mix together the oats, flour, sugar, cinnamon and salt. Categories     dessert

Time 1h50m

Yield 8 servings

Number Of Ingredients 17

4 tablespoons unsalted butter, at room temperature, plus more for the dish
1 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
1/4 teaspoon finely grated orange zest
1 large egg
1/2 cup milk
2 cups blueberries
1 large peach, chopped
1/4 cup granulated sugar
2 tablespoons packed light brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon freshly grated nutmeg
Pinch of salt
2 tablespoons unsalted butter, at room temperature
Vanilla ice cream, for serving

Steps:

  • Make the cake: Preheat the oven to 375 degrees F. Butter an 8-inch square baking dish. Whisk the flour, baking powder and salt in a medium bowl. Beat the butter, granulated sugar and orange zest in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg until combined. Reduce the mixer speed to low and gradually beat in the milk (it may look curdled). Add the flour mixture and beat, scraping down the bowl occasionally, until smooth. (The batter will be thick.) Stir in the blueberries and peach and spread in the prepared dish.
  • Make the topping: Mix the granulated sugar, brown sugar, flour, nutmeg and salt in a small bowl. Work in the butter with your fingers until clumpy; scatter over the batter.
  • Bake until the top is golden and set and a toothpick inserted into the center comes out clean, about 1 hour. Let cool at least 30 minutes. Serve with ice cream.

Time 1h10m

Yield 128

Number Of Ingredients 6

10 cups peeled and quartered peaches
6 cups white sugar, divided
1 tablespoon lemon juice
1 cup fresh blueberries
1 tablespoon butter
½ teaspoon pure almond extract

Steps:

  • Immerse 8 pint jars in simmering water until jam is ready. Wash lids and rings in warm soapy water.
  • Combine peaches, 5 cups sugar, and lemon juice in a large stainless steel or other nonreactive pot over medium heat. Bring to a low boil and cook for 10 to 20 minutes.
  • While peaches are cooking, combine blueberries and remaining sugar in a separate pot over medium heat. Bring to a low boil and cook until just starting to thicken, 10 to 15 minutes.
  • Add blueberries to the pot with the peaches and cook until thickened to the consistency of jam, about 10 minutes more. Remove from heat, add butter and almond extract, and stir well.
  • Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw on rings.

PEACH BLUEBERRY PIE

Peach Blueberry Pie image

This is my favorite pie for summertime. My husband loves an all-blueberry pie, but peaches and blueberries are so beautiful together, I throw the peaches in for me. Provided by Dorie Greenspan

Categories     dessert

Time 2h

Yield 8 servings

Number Of Ingredients 13

3 cups all-purpose flour
1/4 cup sugar
1 1/2 teaspoons salt
10 ounces unsalted butter, very cold (frozen is fine)
1/3 cup vegetable shortening, cut into 4 pieces, very cold (frozen is even better)
1/2 cup ice water
1/2 cup sugar, plus additional for dusting
1 lemon
2 1/2 pounds peaches, peeled and cut into chunks
2 1/2 pounds fresh blueberries
salt
6 tablespoons all-purpose flour
1 large egg, beaten with 1 teaspoon water, for egg wash

Steps:

  • For the crust: Place the flour, sugar, and salt in a food processor fitted with a metal blade; pulse just to combine the ingredients. Drop in the butter and shortening and pulse only until the butter and shortening are cut into the flour. Don't overdo the mixing-what you're aiming for is to have some pieces the size of fat green peas and others the size of barley. Pulsing the machine on and off, gradually add the water until the dough looks evenly moistened and soft curds form.
  • To roll out the dough: Scrape the dough out of the bowl and onto a work surface. Gather together and divide in half, then form into two disks. Place a disk between two pieces of parchment paper and, with a rolling pin, roll it out, continually turning it ⅛ of a turn and rolling until the disk is just bigger than the pie pan. Place into the buttered pie pan and trim the edges. Make a second disk of crust using the same method; then place both in the refrigerator to chill.
  • For the filling: Place the sugar in a large bowl and grate the lemon zest directly over the sugar; combine the sugar and zest with your fingers. Add the peaches and blueberries and toss, then let sit for about 5 minutes. Taste the filling and add a squirt of lemon juice and more sugar if needed. Stir in a pinch of salt and flour and gently mix.
  • Preheat oven to 425 degrees F. Assemble the pie: Remove the pie shell and top crust from the refrigerator and pile the filling into the chilled pie shell. Place water around the edge of the shell, then lay the flat crust on top of the fruit. Squeeze the edges of the top and bottom together; use a fork to crimp the dough to seal it. Brush the crust with an egg wash. Sprinkle sugar on top, then use a knife to make steam vents in the dough, along with a hole in the center. Place pie on a parchment-lined baking sheet and bake 20-30 minutes; then check on the pie, lower the temperature to 375 degrees F, and bake another 30 minutes. (If the crust is browning too quickly, lay a piece of foil on top before returning to the oven.)
  • The pie is finished when the crust is a beautiful golden brown and the filling is bubbling up through the slits. Remove the pie from the oven and allow it to rest for 30 minutes before slicing.
