Huckleberry Peach Cobbler image

This cobbler combines huckleberries and peaches. Blueberries can be substituted if huckleberries aren't available. It's great served warm with vanilla ice cream. This cobbler works great with either fresh or frozen fruits.

Provided by SBURBANK

Categories     Desserts     Fruit Dessert Recipes     Peach Dessert Recipes

Time 1h15m

Yield 6

Number Of Ingredients 14

2 cups huckleberries
3 cups sliced peaches
¼ cup cornstarch
⅔ cup white sugar
2 tablespoons butter
1 cup all-purpose flour
2 teaspoons baking powder
¼ cup white sugar
¼ teaspoon salt
¼ cup rolled oats
1 teaspoon grated lemon zest
¼ teaspoon ground cinnamon
¼ cup butter
½ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • If you're using frozen fruit, thaw and drain it before proceeding. Combine fruit in an ungreased 2-quart casserole dish. Mix the cornstarch and 2/3 cup sugar, and toss with fruit mixture. Dot with 2 tablespoons butter and set aside.
  • Sift the flour, baking powder, sugar, and salt into a bowl. Stir in the oats, lemon zest, and cinnamon. Cut in 1/4 cup butter until it's the size of small peas. Stir in milk to form a stiff batter. Spoon dollops of cobbler batter over the fruit in the casserole dish; the batter may not entirely cover the fruit.
  • Bake in the preheated oven until the fruit is bubbling and the topping is golden brown, about 30 minutes. Allow to cool about 15 minutes. Serve warm.

Number Of Ingredients 7

129 ounce can sliced peaches (in juice), (do not drain)
1 tablespoon cinnamon sugar
1 1/2 cups all-purpose flour
1/2 cup sugar

  • Then pour in heavy cream.
  • Combine until all the flour mixture has become moist. It will be very thick.
  • Using a spoon, begin plopping the topping all over the peaches. Just put it on in clumps. Doing your best to cover the peaches. Don't worry about smoothing it out.
  • Bake for about 40 minutes.
  • Top will be golden brown, and you can stick a toothpick in the top to make sure the topping has completely baked through (toothpick should come out clean.) Serve with ice cream.

PEACH COBBLER RECIPE BY TASTY

Peach Cobbler Recipe by Tasty image

Sweet, juicy peaches are the star of this dessert. Tossed with warming spices and a secret ingredient (hint: it's peppery), they're baked between two layers of flaky pie crust, making it a true staple of the South. If peaches aren't in season, try using canned peaches instead.

Provided by Matt Ciampa

Categories     Desserts

Time 1h30m

Yield 8 servings

Number Of Ingredients 18

10 medium peaches
1 ¼ cups dark brown sugar
½ teaspoon cinnamon
¼ teaspoon ground nutmeg
1 tablespoon vanilla extract
1 teaspoon lemon juice
½ teaspoon kosher salt
⅛ teaspoon black pepper
1 ½ tablespoons cornstarch
½ stick unsalted butter, cubed
4 tablespoons unsalted butter, melted, plus more for greasing
¼ cup all purpose flour, plus more for dusting
3 refrigerated pie crusts, 9 in (22 cm)
1 large egg yolk
1 tablespoon water
2 tablespoons granulated sugar
½ teaspoon cinnamon
vanilla ice cream, for serving

Steps:

  • Preheat the oven to 425°F (220°C).
  • Peel, pit, and slice the peaches into wedges. You should have about 10 cups.
  • Make the peach filling: In a large pot, combine the brown sugar, cinnamon, nutmeg, vanilla, lemon juice, salt, pepper, and peaches. Turn the heat to medium and gently stir until the sugar is completely dissolved. Cook for 3-5 minutes, until the mixture is simmering and the peaches have started to release their juices.
  • In a small bowl, mix the cornstarch with 2 tablespoons of syrup from the pot until the cornstarch dissolves. Stir the mixture back into the filling and bring to boil. Cook until the syrup thickens and turns opaque, 3-4 minutes. Remove the pot from the heat.
  • Make the crust: Grease a 9 x 13-inch casserole dish with melted butter.
  • On a lightly floured flat surface, unroll 2 of the pie crusts. Overlap the crusts at the center so it looks like a Venn diagram, then use a floured rolling pin to roll over the overlapping portions to seal together. Flour the top of the crust, then roll onto the rolling pin. Unroll over the prepared baking dish. Gently lift the edges of the crust so the bottom sits flush against the bottom of the baking dish. Let the edges hang over the sides of the pan.
  • Use a slotted spoon to transfer the peach filling into the crust, draining off any excess juices. Save any leftover syrup for serving. Dollop the cubed butter over the peaches.
  • Lightly roll out the remaining pie crust, then unroll over the peach filling. Fold the edges of the top and bottom crusts together to seal.
  • In a small bowl, whisk the egg yolk with the water. Brush all over the top of the crust.
  • In a separate small bowl, mix together the sugar and cinnamon. Liberally sprinkle over the crust.
  • Cut 3 large diagonal slits into the top of the crust to release steam.
  • Bake the cobbler for 35-45 minutes, until the crust is golden brown and the filling is bubbling. If the edges of the crust are getting too dark, cover with foil and continue baking.
  • Let the cobbler cool for 25-30 minutes before serving with vanilla ice cream. Drizzle with some of the reserved peach syrup.
  • Enjoy!

PEACH COBBLER

Peach Cobbler image

Made with fresh, frozen, or canned juicy peaches, this cobbler is perfectly spiced, perfectly sweetened, and topped with a delicious homemade buttermilk biscuit topping.

Provided by Kristen Chidsey

Categories     Dessert

Time 1h

Number Of Ingredients 18

6 cups sliced peaches (about 5-6 peaches, peeled)
1/4 cup dark brown sugar
1 tablespoon cornstarch
1 lemon (juice and zest)
1/2 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
⅛ teaspoon ground ginger
1/8 teaspoon salt
2 cups all-purpose flour
1/2 cup granulated sugar
1 and 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter (cold and cubed)
1/2 cup buttermilk (see note about homemade buttermilk)
1 egg
1 tablespoon milk or buttermilk
1-2 tablespoons granulated sugar

Steps:

  • Preheat the oven to 350 degrees. Grease a 8x8 inch pan well with butter.

  • Spoon filling into prepared pan and bake for 15 minutes.
  • Remove from the oven and then prepare the biscuit topping.
  • Prepare biscuit topping by whisking together flour, sugar, baking powder, baking soda, and salt together in a large bowl. Cut in the cold butter, using a pastry cutter, food processor, or two forks, cut the butter into the mixture until it resembles wet sand and the butter is about the size of peas.
  • Drizzle in the milk and gently mix until just biscuit dough is JUST combined--do not over mix!
  • Dollop dough all over peach filling.
  • Mix together the egg and remaining buttermilk.
  • Brush the top of the biscuit dough with egg wash and then sprinkle with granulated sugar.
  • Bake for 37-42 minutes, or until lightly browned and biscuit topping is cooked through.

BOURBON PEACH COBBLER

Bourbon Peach Cobbler image

Peach Cobbler filled with bourbon peach and topped with buttery and crumbly pie crust dough. This peach cobbler recipe is so easy and a summertime staple!

Provided by Rasa Malaysia

Categories     Dessert Recipes

Time 1h5m

Number Of Ingredients 10

8 peaches, peeled and sliced, about 6 to 8 cups
1/4 cup bourbon
3/4 cup sugar, divided, plus more for dusting
2 tablespoons corn starch
1 teaspoon ground cinnamon
1 1/2 cups all-purpose flour, sifted
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 sticks unsalted butter, cold
3/4 cup heavy cream, plus more for brushing

Steps:

  • Heat the oven to 375°F (190°C).
  • In a large bowl, add the peaches, bourbon, 1/4 cup sugar, cornstarch, and cinnamon and mix well to coat the peaches evenly; set aside.
  • Prepare the dumplings: Into food processor add the flour, 1/2 cup sugar, baking powder, and salt. Cut 1 1/2 sticks of butter into small pieces. Add it to the flour mixture and pulse until the mixture looks like wet sand. Pour in the cream and mix just until the dough comes together. Don't overwork; the dough should be slightly sticky but manageable.
  • In a 10-inch cast iron skillet over medium-low heat, melt the remaining 1/2 stick of butter. Add the peaches and cook gently until heated through, about 5 minutes. Transfer the mixture to a baking dish (or leave in the skillet). Drop the dough by tablespoonfuls over the warm peaches. There can be gaps, the dough will puff up and spread out as it bakes. Brush the top with some heavy cream and sprinkle with some sugar; put it into the oven on a baking sheet to catch any drips. Cook for 40 to 45 minutes until the top is browned and the fruit is bubbling.
