Steps:
- Preheat oven to 375 degrees F.
- In a mixing bowl, combine tapioca, peaches, sugar (if used), cinnamon and nutmeg.
- Mix thoroughly.
- Pour the fruit mixture into a buttered 9" X 13" baking dish.
- In a bowl mix thoroughly the ingredients for the Cobbler Dough.
- Spread over the fruit mixture.
- In a medium mixing bowl, stir together DRY cobbler topping ingredients.
- Sprinkle evenly over the cobbler dough layer.
- Then pour the boiling water evenly over the cobbler.
- (Do Not Stir.) Bake for 1 hour and 20 minutes or until knife inserted comes out clean and top has a golden crust.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine peaches, Chinese five-spice powder, and lemon zest in a bowl.
- Stir sugar and water together in saucepan pan over medium heat until simmering, 2 to 3 minutes. Stir in peach mixture; cook and stir for 2 minutes. Remove from heat and set aside.
- Combine sugar and self-rising flour in a large bowl. Pour in milk; whisk to form a smooth batter.
- Pour melted butter into a Dutch oven. Pour batter over the melted butter.
- Gently place peaches and syrup on top of batter. As the cobbler bakes, they will sink down into the batter.
- Bake until syrup is bubbling and crust has risen and is golden brown, about 50 minutes.

- In a bowl, combine peaches and 3/4 cup sugar; set aside. Pour butter into an 8-in. square baking dish. SHEILA'S PEACH COBBLER WITH PECANS
Homemade peach cobbler with fresh-picked peaches baked in a cast iron skillet. Serve with your favorite ice cream, (my husband loves pecan pralines and cream). I made this recipe up because I was ready to be finished with the peaches! LOL! You can use any baking type dish you like. It was old fashioned and baked nicely in the cast iron skillet.

- Preheat oven to 400 degrees F (200 degrees C).
- Stir peaches with lemon juice in a bowl to prevent fruit from browning. Transfer to a cast iron skillet and stir in 1 1/2 cup white sugar, pecans, and 1 teaspoon cinnamon. Bring to a soft boil, stirring often.
- Whisk self-rising flour, 1/2 cup white sugar, brown sugar, and 1 teaspoon cinnamon in a bowl. Stir melted butter into the mixture (batter should resemble cooked oatmeal). - Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

- Combine 2 cups sugar, flour, and nutmeg in a large Dutch oven; add peaches, and set aside 15 minutes. Bring peach mixture to a boil. Reduce heat; cook over low heat, stirring occasionally, 10 minutes or until peaches are tender and mixture thickens. Remove from heat; add almond extract and butter. Stir gently until butter melts. Set aside.
- Roll one-third of pastry to 1/8- inch thickness on a lightly floured surface; cut into 3/4-inchwide strips, and place on an ungreased baking sheet. Bake at 425° for 10 to 12 minutes or until golden brown. Cool completely, and set aside.
- Spoon half of peach mixture into pastry shell; arrange cooked pastry strips evenly over filling. Spoon remaining peach mixture over pastry strips.
