Peach Basil Grilled Cheese image

This peach basil grilled cheese is an addictive combo that you won't want to stop eating, made with fresh seasonal produce.

1 Tbsp unsalted butter
2 pieces sourdough bread
1 peach, sliced thinly
2 oz gruyere, sliced
1 oz brie, sliced
2 tsp honey
4 leaves basil, chiffonade

Steps:

  • Butter the two slices of sourdough bread on one side.
  • Heat a medium skillet over medium heat. Once hot, add one slice of bread to the skillet, buttered side down.
  • Drizzle honey on top of the bread.
  • Top with brie slices, then gruyere slices.
  • Arrange peach slices on top of the cheese, then sprinkle with fresh basil. Top with the other slice of bread, buttered side up.
  • Once the bottom slice is golden brown, after approximately 2 to 3 minutes, carefully flip the sandwich.
  • Cook on the other side until toasted and golden brown, and the cheese is melted and gooey.
  • Slice in half, and serve immediately.

8 slices thick-cut bacon
1/4 cup packed fresh basil
2 tablespoons extra-virgin olive oil
1 teaspoon fresh lemon or lime juice
Kosher salt and freshly ground pepper

8 thick slices multigrain bread
2 peaches, halved, pitted and thinly sliced
Baby arugula, for topping
Cornichons or other pickles, for serving (optional)

Steps:

  • Cook the bacon in a large skillet over medium heat, turning a few times until crisp, about 8 minutes. Transfer to a paper towel-lined plate to drain, then cut each slice in half. While the bacon is cooking, pulse the basil, olive oil, lemon juice, 1 tablespoon water, 1/4 teaspoon salt, and pepper to taste in a mini food processor (or finely chop the basil and whisk with the other ingredients) until smooth. Add the mayonnaise and pulse until just combined. Toast the bread and spread evenly with the basil mayonnaise. Divide the peaches, bacon and arugula among half of the bread slices; top with the remaining bread slices. Serve with cornichons.

This delicious sandwich pairs fresh peaches with a slightly sweet sausage, melty cheese, and crunchy veggies!

Number Of Ingredients 13

1 pound ground pork
2 tablepsoons maple syrup
1 teaspoon red pepper flakes
1 teaspoon cumin seeds
1/2 teaspoon kosher salt
1 teaspoon crushed black pepper
2 fresh peaches, sliced
8 ounces cheddar (or gruyere) cheese, sliced thin or grated
1/2 red onion, sliced thin
1 cup sprouts
4 tablespoons unsalted butter, soft
Olive oil
8 slices bread

Steps:

  • 1) Stir together ground pork, red pepper flakes, syrup, cumin seeds, salt and pepper. Form pork into four even-sized thin patties. The patties should be roughly the size of the bread you are using.
  • 2) Add a drizzle of oil to a large skillet over medium heat. Add sausage patties and cook for about four minutes per side until the patties are cooked through. They should be thin patties and cook quickly.
  • 3) While the patties cook, slice onions, peaches, cheese, and butter bread.
  • 4) When the patties are done, remove from the pan and add bread slices, butter side down. Top with cheese, a cooked patty per sandwich, fresh peach slices (season with salt), red onion, and sprouts. Top with another piece of bread, butter side up.
  • (NOTE: If you grate the cheese and sprinkle a bit in between the layers, the sandwich will stick together better as the sandwich cooks.)
  • 5) Cook sandwich for 3-4 minutes per side until cheese is melted. If the cheese isn't melting well, you can add a drizzle of water to the skillet and cover with a bowl so the cheese melts quickly.
  • 6) When sandwiches are cooked through, remove from pan and cut in half. Serve immediately!

It's too hot to bake and I wanted something sweet. Taking my cue from the Recipe #223644 that I had left and some peaches that needed using up, I built a fun and tasty dessert sandwich. Brioche or challah bread would probably work well as would other soft fruits. Experiment with what you have on hand. The results might surprise you!

2 tablespoons cream cheese (use mascarpone if you have it)
1 ripe sweet peach, peeled, pitted and thinly sliced

Steps:

  • Slather 1 side of each bread slice with cream cheese.

2 pints peach ice cream
1 package (17.5 oz) sugar cookie mix (recommended: Betty Crocker)
1 stick butter
1 egg
3/4 teaspoon ground ginger
1 teaspoon minced ginger (recommended: Christopher Ranch)
2 tablespoons finely chopped crystallized ginger (recommended: McCormick's)

Steps:

  • Set up grill for indirect cooking over medium heat (no heat source directly under cookies).
  • Soften ice cream on the counter for 10 minutes. Scoop large balls of ice cream onto a parchment-lined baking sheet, spacing about 3 inches apart. Top the scoops with another piece of parchment. Gently flatten the scoops into 2-inch disks about 1-inch thick. Put the baking sheet in the freezer to harden while making the cookies.
  • In a mixing bowl, combine rest of the ingredients. Stir to form dough. Drop by rounded tablespoons onto foil baking sheet. Place foil baking sheet on another foil baking sheet (for stability and insulation) and set on grill away from heat. Cover grill and cook 12 to 16 minutes or until just baked and browned.
  • Remove from grill and let cool to room temperature.
  • Sandwich the ice cream disk between to cookies and wrap in parchment or waxed paper until ready to serve.
  • INDOOR: Preheat oven to 375 degrees F. Prepare cookies as directed and drop onto an ungreased cookie sheet. Bake in preheated oven for 10 to 14 minutes. Cool for 1 minute on cookie sheet before transferring to wire rack. Cool cookie completely, and then freeze for a minimum of 1 hour before completing ice cream sandwiches as directed.

1/4 cup peach preserves

1/4 teaspoon mustard seed
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground cinnamon
Dash cayenne pepper
Dash ground cloves
SANDWICHES:
1/4 cup fat-free mayonnaise
4 onion rolls, split and toasted
4 lettuce leaves

Steps:

  • Brush pork with mustard; place on a rack in a shallow roasting pan. Bake at 425° for 35-40 minutes or until a thermometer reads 160°.
