What a delightful twist to a delicious side! We loved the addition of peaches and pecans... and have no fear; the flavor of the whiskey is nearly impossible to detect.

Number Of Ingredients 5

1/4 c jack daniel's whiskey
1 pkg rice, long-grain/wild rice blend
1 Tbsp real butter
1 can(s) peaches,drained and cubed
1/4 c pecans coarsely chopped

Steps:

  • 1. Add enough water to the whiskey to make 2-1/3 cups of liquid.
  • 2. In a cast iron Dutch oven - that is what I use - combine with rice seasoning packet and butter; bring to a boil. Add rice, cover and simmer over med-low heat untill liquid is absorbed. (About 25min.)
  • 3. Stir in peaches and pecans; heat through. Serves 6.

In Nada, Texas, Monica Staff uses leftover rice to create this creamy dessert with old-fashioned flavor. Beneath its sweet cinnamon and peach topping is a saucy rice pudding-like layer.

2 cups cooked rice
1 ½ cups milk
¼ cup sugar
⅛ teaspoon salt
2 large eggs eggs, lightly beaten
½ teaspoon vanilla extract
1 (15 ounce) can sliced peaches, drained
⅓ cup packed brown sugar
½ teaspoon ground cinnamon
¼ cup sour cream

Steps:

  • In a saucepan, combine rice, milk, sugar and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally. Stir a small amount of rice mixture into eggs; return all to the pan. Cook and stir for 2-3 minutes or until a thermometer reads 160 degrees F. Remove from the heat; stir in vanilla. Pour into a greased shallow 1-qt. baking pan. Top with peaches. Combine brown sugar and cinnamon; sprinkle 1 tablespoonful over peaches. Broil for 3-5 minutes or until browned. Let stand for 5-10 minutes.
  • Serve in bowls; sprinkle with remaining cinnamon-sugar. Top with sour cream if desired.

Wild Rice-Pecan Patties image

You won't need much time to prepare these elegant rice patties. The combination of wild rice, pecans and mushrooms is outstanding!

2 cups cooked wild rice
1 cup soft bread crumbs (1 1/2 slices)
1/3 cup chopped pecans
1/2 teaspoon garlic salt
2 eggs
1 jar (2 1/2 ounces) mushroom pieces and stems, drained and finely chopped
1 jar (2 ounces) diced pimientos
2 tablespoons vegetable oil

Steps:

  • Mix all ingredients except oil.
  • Heat oil in 10-inch skillet over medium heat. Scoop wild rice mixture by 1/3 cupfuls into skillet; flatten to 1/2 inch. Cook about 6 minutes, turning once, until light brown. Remove patties from skillet. Cover and keep warm while cooking remaining patties.
