1/2 cup nut butter of choice (I used a combo of cashew, almond, and sunflower butter, but feel free to use peanut butter!)
1/2 cup pumpkin puree
1/4 cup chia seeds
1/4 cup honey
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup coconut, shredded
Dark chocolate chips to taste

Steps:

  • Mix the ingredients together. Form into balls. Refrigerate for an hour or freeze for future use.

1 1/4 C Peanut Butter (we recommend CB's One-Ingredient)
1/2 C Coconut Milk Powder
1/4 C Honey (we recommend local raw)
2 Tbsp Blackstrap Molasses
3 Tbsp Collagen Powder (we recommend Vital Proteins)
1/2 C peanuts, ground, crushed or chopped into a fine powder

Steps:

  • In a medium mixing bowl, combine peanut butter, coconut milk powder, honey, mollasses and collagen powder. This is probably best by spatula or hand, as the peanut butter is too thick to be effectively mixed in a food processor.
  • Place peanut powder in a small bowl. Roll peanut butter mixture into 1 inch balls, then roll in the peanuts. Repeat until mixture is used up.
  • Store in the refrigerator for up to four weeks

I have a chef friend, Nancy Russman in Louisville Kentucky, who spends a lot of her time teaching kids to cook and eat healthier snacks. When she first met me and my son there at a Julia Child birthday party I was cooking for, she made a big impression on him, much bigger than Julia! Probably because she's very short, and closer to his size than Julia. She taught him the cheer of "Go Cats!" in support of the Louisville Wildcats. We also had a nice tour of the Louisville Slugger Baseball Bat Factory, a visit to a bourbon distillery for another Julia party and a visit to my favorite goat cheese maker, Judy Schad, in nearby Greenville Indiana. This is one of Nancy's kid-friendly recipes that the kids can help make.

1/2 cup icing sugar
1/2 cup honey
1/2 cup peanut butter
1 1/2 cups Rice Krispies (Rice Bubbles)
1/2 cup non-pareils (hundreds and thousands)

Steps:

  • Combine icing sugar, peanut butter and honey in a small bowl.
  • Add Rice Krispies (Rice Bubbles) and mix well.
  • Put non-pareils in a shallow bowl.
  • Make small balls from the mixture and toss in the non-pareils.
  • Put onto lined tray and refrigerate for an hour until firm.
  • Store in the fridge for a week.
  • You can toss them alternatively in grated chocolate or chocolate sprinkles etc.
  • NB: I found that the balls were a bit dry and the non-pareils didn't stick easily. I first dipped the balls into a mixture of 1 tablespoon of honey and two tablespoons of water, and then into the coating. This worked well for me, but I believe my peanut butter wasn't very oily which is why the mixture turned out a bit stiff. If you see that your balls are a bit dry, I recommend the extra step.
