PEANUT BUTTER AND VANILLA FRUIT ROLL-UPS
This is from the recipe booklet that came with my dehydrator. Makes awesome fruit roll-ups! The cooking time is the drying time.

Steps:
- In a blender, mix all ingredients until pureed.
- Pour mixture onto fruit roll sheets made for your dehydrator.
- Dry in a food dehydrator at 135F for 4-8 hours, or until leathery and pliable.
- Remove from sheets while still warm.
- Let cool completely, cut into desired number of pieces and roll in plastic wrap. Store in an airtight container.

EASY PEANUT BUTTER ROLL
I love a good peanut butter roll. This recipe is quick and easy. It's a potato candy without the potato! My husband loves it.

Steps:
- 1. Empty can of frosting into a bowl.
- 2. Add enough powdered sugar to make a soft dough, a little on the sticky side.
- 3. Using more powdered sugar, sprinkle a large piece of wax paper.
- 4. Add frosting mixture and knead until it reaches a true soft dough.
- 5. Roll out to desired thickness.
- 6. Spread with peanut butter.
- 7. Roll up to make a log. Roll log in wax paper and refrigerate until chilled then cut into pieces.
- 8. I don't chill mine-for some reason it disappears before it gets to the frig. Also do not use too much powdered sugar when rolling it out. It will dry out the dough and make it crack. enjoy!
PEANUT BUTTER ROLL UPS
VERY quick and easy to make. My mom use to make these and at one point was hooked on them on a regular basis. I love sweet stuff but a warning, these are VERY sweet.

- 1. To make the dough, mix together the confectioners sugar, vanilla and butter.
- 2. Once the dough is mixed together, break it down into smaller sections and spread it out into long strips.
- 3. Cover each dough strip in Peanut butter, roll up and then slice into small bite size pieces. Each piece should be about the thickness of your thumb.
OLD FASHIONED KENTUCKY PEANUT BUTTER ROLL
My grown children say the holidays are just not the same if I do not make this candy. It may take a couple of times making this to master it, but friends it's well worth it!!!!

Steps:
- 1. First beat the 3 egg whites until stiff. Next prepare the surface to roll out the candy. Cover the surface with wax paper and spread a thick layer of powdered sugar. Next mix all ingredients except vanilla, egg whites, and peanut butter in a large pot and boil. Stirring continuously, until ball forms. (Like when making fudge or candies) the ball should be hard and have a soft crack. Add vanilla. Slowly pour the mixture over the egg whites while mixing with a blender the whole time. Continue to mix until the candy has cooled and resembles the texture of marshmallow cream. Pour onto powdered sugar working surface and roll thin (powder sugar your roller) Spread a thin layer of peanut butter. Roll up and cut. (Cut the pieces using a piece of thread to keep its form and layers).
AFTER SCHOOL FRUIT ROLLS
In this twist on the classic peanut butter and banana sandwich, peanut butter is spread on flour tortillas, and then wrapped around a cinnamon and honey-sweetened mixture of bananas and raisins.

- Combine fruit, honey and cinnamon in a bowl. Spread each tortilla with 1 tablespoon peanut butter, leaving a 1-inch border. Spoon fruit filling down the center of each tortilla. Sprinkle with nuts, if desired. Fold in 2 sides of tortilla to meet in center, then roll up, bottom to top. Place seam-side down. Halve each tortilla on a sharp diagonal.
