These are a delicious, creamy, and chocolate-free version of a no-bake cookie. My husband is NOT a chocolate fan and has been so thrilled that I came up with this simple but yummy recipe for him!

½ cup butter
⅓ cup whole milk
½ cup white sugar
½ cup brown sugar
½ cup honey
1 pinch salt
1 cup crunchy peanut butter
3 ½ cups instant oatmeal, or more as needed

Steps:

  • Combine the butter, milk, white sugar, brown sugar, and honey in a large pot over medium-high heat; bring to a rapid boil for 90 seconds. Stir the salt and peanut butter into the mixture and remove immediately from the heat. Add the oatmeal quickly and mix to combine. Make sure the texture is thick with a little bit of sauce, but not too much sauce. If needed add extra oatmeal.
  • Drop rounded spoonfuls of the dough 2 inches apart onto aluminum foil or waxed paper; allow to sit 1 to 2 hours before serving.

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie mix, oil, water and egg until soft dough forms. Stir in cereals.
  • Onto ungreased cookie sheet, drop and shape dough by rounded measuring tablespoonfuls 2 inches apart.
  • Bake 9 to 11 minutes or until golden brown. Cool 1 minute; remove from cookie sheet to cooking rack.

½ cup honey
1 large egg
2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Combine peanut butter, shortening, sugar, honey, and egg in a large bowl; beat with an electric mixer until thoroughly combined.
  • Mix flour, baking powder, salt, and baking soda together in a bowl. Add to the wet ingredients and mix until blended. Stir in peanuts.
  • Shape dough into a 10x2-inch log. Wrap in waxed paper and chill in the refrigerator for 3 hours.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  • Remove dough from the refrigerator and cut into 1/8-inch slices. Place 1 inch apart on the prepared cookie sheets.
  • Bake in the preheated oven until edges are golden, 8 to 10 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely. Repeat to bake remaining cookies.

1 1/2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1/2 teaspoon salt
1 stick unsalted butter, at room temperature
3/4 cup hot honey
1 large egg, at room temperature
3/4 cup chunky peanut butter
1 teaspoon vanilla
1/3 cup sugar
2 teaspoons chile flakes
3/4 cup honey roasted peanuts, chopped

Steps:

  • Whisk the flour, baking soda and salt together in a medium bowl. In a large bowl, beat the butter until smooth with an electric mixer. Pour in the honey, continuing to beat the entire time. Beat in the egg until fully combined. Mix in the peanut butter and vanilla until smooth and creamy, then stir in the dry ingredients until well combined. Cover and chill until firm, about 1 hour.
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Combine the sugar, chile flakes and peanuts in a medium bowl. Scoop a heaping tablespoon of dough and roll it into a ball. Roll in the sugar mixture to coat. Place on a prepared cookie sheet and press the top down to flatten with the back of a fork. Repeat with the remaining dough, leaving 2 inches between each cookie. Bake until golden and set, about 15 minutes. Cool on the baking sheet for 5 minutes, then remove to a wire rack to cool completely.

1 cup rolled oats
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup unsalted butter
2/3 cup sugar
2 tablespoons peanut butter
1/3 cup honey
1 cup roasted unsalted peanuts, finely chopped
3/4 cup confectioners' sugar
2 tablespoons butter, softened
1 tablespoon water

Steps:

  • Preheat your oven to 350°.
  • Coat a baking sheet with melted butter or oil.
  • Sift the flour into a large bowl and stir in the oats, the baking powder, and the salt In a pan, over medium heat, mix together the butter, sugar, peanut butter, and honey until melted.
  • Add the contents of the pan to the flour mixture and stir to combine.
  • Form teaspoonfuls of mixture into balls and place on baking sheets, allowing room for spreading. Flatten or "Squish" the dough balls lightly with a fork.
  • Bake for ten minutes or until golden in color.
  • Cool on baking sheet before removing from sheet.

3 teaspoons coconut oil, divided
1/3 cup all-natural creamy peanut butter
1 teaspoon honey, optional

Steps:

  • Combine 1/2 cup carob chips and 1 teaspoon coconut oil in a microwave-safe bowl. Microwave, uncovered, on high for 30 seconds; stir. Microwave, stirring every 30 seconds, until carob is melted and smooth, about 1 minute longer. Carob should not exceed 90°. Spoon teaspoons of carob mixture into silicone molds or foil-lined mini muffin cups; press spoon into center of each cup so mixture coats the sides of liners about halfway up. Freeze until set., Combine peanut butter, 1 teaspoon coconut oil and if using, honey, in a microwave-safe bowl. Microwave, uncovered, on high for 30 seconds; stir until smooth. Cool slightly. Drop 2 teaspoons of peanut butter mixture over carob. Freeze until set., Melt remaining 1/2 cup carob chips and 1 teaspoon coconut oil in a microwave-safe bowl, stirring every 30 seconds. 1/2 cup brown sugar
1/2 cup peanut butter
1/2 cup honey
1 egg
1 teaspoon vanilla
1 cup whole wheat flour
1 1/2 cups graham wafer crumbs
1 teaspoon baking powder
1/4 teaspoon salt
21 peanuts (optional)

Steps:

  • Cream shortening with sugar.
  • Beat in peanut butter, honey, egg and vanilla.
  • Combine dry ingredients and blend into peanut butter mixture.
  • Drop by teaspoon onto lightly greased baking sheet, flatten with floured fork.
  • Top each with peanut halve if desired.
  • Bake at 375° for 7-9 minutes.
  • I baked mine for 11 minutes.
