A moist, cake-like Irish Soda Bread that's not just for St. Paddy's Day... it's so easy and sooo delicious you'll be craving it all year 'round.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch cake pan.
- Stir together the flour, sugar, salt, baking powder, and baking soda in a large bowl. Using a pastry cutter, cut the butter gently into the flour mixture until well combined, and stir in the raisins. In another bowl, whisk the buttermilk and eggs together; lightly beat the buttermilk mixture into the flour mixture. Place the dough into the prepared cake pan.
- Bake in the preheated oven until the bread has risen and the top is golden brown, 45 minutes to 1 hour. A knife inserted into the center of the bread should come out clean. Cool the bread in the pan on a wire rack for 10 minutes before removing. Serve warm.

- Preheat oven to 350°. In a large bowl, combine the flour, sugar, caraway seeds, baking powder, salt and baking soda. In a small bowl, whisk eggs and sour cream. Stir into dry ingredients just until moistened. Fold in raisins. , Spoon into a greased 9-in. springform pan. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool on a wire rack for 10 minutes before removing sides of pan. Cut into wedges; serve warm.

Steps:
- Place raisins in a small bowl; pour in whiskey and allow to soak overnight.
- The next day, drain raisins and reserve the leftover whiskey.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 2-quart casserole dish.
- Whisk together flour, sugar, baking powder, salt, and baking soda in a large bowl.
- Stir drained raisins, orange peel, and caraway seeds into dry ingredients.
- Beat in buttermilk and 1/4 cup melted butter to make a thick batter.
- Transfer batter to prepared casserole dish.
- Bake in the preheated oven until top is golden brown and a toothpick inserted into the center comes out clean, about 1 hour and 10 minutes.
- Beat 1/2 cup butter in a bowl until fluffy; beat in reserved whiskey, 1 teaspoon at a time, to taste. Serve with soda bread.

- Preheat oven to 375°. Whisk together first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk together 1 egg and buttermilk. - Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
- Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
- Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

- Preheat oven to 425°. Whisk together the first 5 ingredients. Work the peanut butter into the flour mixture with your hands, two knives or a pastry cutter until it resembles coarse meal. Mix in the raisins.
- Add the buttermilk and mix with a wooden spoon or your hands for about 2 minutes. Don't overmix or it will become too stiff. Let the dough sit for a few minutes for the buttermilk to soak into the oats. Grease a baking sheet and place the dough on the baking sheet. Use your hands or a spoon to shape the dough into a round loaf that is about 3-4 inches tall in the center. Use a serrated knife to make a cross on top of the bread.
- Bake for 35-40 minutes, until the loaf is golden brown and sounds hollow when tapped. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a cooling rack or prop the loaf on it's side so the top and bottom of the loaf are both exposed to the air (so it doesn't get moist).

This oven baked traditional Irish soda bread has hints of orange zest and juicy currants to add a fresh burst of flavor to the slightly sweet bread.

- Preheat the oven to 375°F. Line a large baking sheet with parchment paper and set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, add the flour, sugar, baking soda, and salt. Stir to combine.
- Measure the buttermilk into a 2-cup liquid measuring cup. Add the egg and whisk them together with a fork. Add the orange zest to the cup and set aside.
- Keep the butter in the fridge until you are ready to work with it. Cut the butter into small cubes and add it to the stand mixer.
- Mix the butter into the flour on low speed until it has been completely incorporated in the mixture.
- Slowly add the reserved buttermilk to the mixing bowl and continue to mix on low speed until the dough forms.
- Sprinkle the reserved 1 tablespoon of flour over the currants in a small mixing bowl. Toss to coat, this will help them to not sink to the bottom of the dough while it bakes.
- Add the currants to the mixer and stir to combine, the dough will be very wet.
- Transfer the dough to a lightly floured baking mat. Knead it by hand a few times and form a round-shaped loaf. Transfer the dough round to the prepared baking pan and slice an X over the top.
- Bake for 55 minutes - 1 hour or until a cake tester inserted in the center comes out clean. The soda bread will sound hollow when you tap on it.
- NOTE: If the bread starts to darken too much before the baking time is over, you may lightly cover it with aluminum foil.
