Rimfire Cheese Balls image

These yummy creations were on an antipasto platter at the Rimfire Winery at Maclagan (near Toowoomba, Queensland). I just HAD to ask the chef for the recipe! They've become a family favourite.

Yield 8-10 as part of an antipasto or cheese platter

Number Of Ingredients 5

125 g Philadelphia Cream Cheese
1/2 cup tasty cheese, any variety,grated
1/4 cup parmesan cheese, freshly grated
1/2 teaspoon curry powder (or to taste)
2 tablespoons mild paprika

Steps:

  • In a small bowl combine cheeses and curry powder.
  • Add at least enough curry powder to turn the mixture a pale yellow'eggy' colour- and more if you want it to taste really hot.
  • Beat until well combined.
  • Sprinkle 1 tablespoon of the paprika onto a plate or chopping board.
  • Take half of the cheese mixture and roll it into a ball.
  • Now roll the ball in the paprika until well covered.
  • Wash and dry hands and repeat with the rest of the cheese mixture.
  • Place cheese balls into a plastic box, cover with a lid and refrigerate until cold.
  • Serve with water biscuits (cheese crackers).

3 ½ cups shredded sharp Cheddar cheese
1 (1 ounce) package Ranch-style dressing mix
2 cups chopped pecans
4 pecan halves

Steps:

  • In a large bowl, mix together cream cheese, Cheddar cheese, and dressing mix. Form into one large ball or two smaller balls. Roll in chopped pecans to coat surface. Decorate the top with pecan halves. Refrigerate for at least 2 hours, or overnight.

Steps:

  • Beat cream cheese and cheddar cheese in small bowl with electric mixer on medium speed until well blended.
  • Mix in all remaining ingredients except pecans; cover. Refrigerate several hours or overnight.
  • Shape into ball; roll in pecans. Serve with assorted NABISCO Crackers.

Number Of Ingredients 9

1/2 pound Roquefort or other good blue cheese
6 tablespoons softened butter
1 1/2 tablespoons minced chives
2 tablespoons finely minced celery
Pinch of cayenne pepper
1/8 teaspoon freshly ground black pepper
1 teaspoon Cognac
1/2 cup fine stale white-bread crumbs
2 tablespoons very finely minced parsley

Steps:

  • Crush the cheese in a bowl with 4 tablespoons of the butter and work it into a smooth paste. Beat in the chives, celery, seasonings and Cognac. If mixture is very stiff, beat in more butter by fractions. Check seasoning carefully, adding salt if necessary (probably not). Using two teaspoons, shape into quenelles or roll into balls around 1/2 inch in diameter.
  • Toss breadcrumbs and parsley in a wide shallow bowl. Roll the cheese balls in the mixture so they are well covered. Chill. Serve as is or pierced with a toothpick.

1/4 cup finely chopped white onion
1 tablespoon Worcestershire sauce
TOPPINGS:
Blue paste food coloring
1/2 cup finely shredded Swiss cheese, chopped
1/2 cup finely chopped white onion
1 can (4-1/4 ounces) chopped ripe olives
1/2 cup finely shredded cheddar cheese
1 package (2-1/2 ounces) thinly sliced dried beef
1/2 cup finely chopped red onion
1/2 cup finely chopped green onions (green tops only)
1/2 cup diced sweet yellow pepper
1/2 cup diced sweet red pepper
15 small water chestnut slices
2 tablespoons cream cheese, softened
1 teaspoon whole milk
Black paste food coloring
2 breadsticks
Assorted crackers

Steps:

  • In a large bowl, beat the cream cheese, ricotta and sour cream; add beef. Beat in the cheddar cheese, cereal, onion and Worcestershire sauce. Cover and chill for 30 minutes., In a small shallow bowl, combine blue food coloring and Swiss cheese; set aside. Shape cheese mixture into 16 balls. Roll one ball in white onion for the cue ball. Roll another cheese ball in olives for the eight ball. Roll a third ball in colored Swiss cheese; make a stripe of colored Swiss cheese on a fourth ball., With remaining cheese balls, make six solid-colored balls and six striped balls by rolling in the cheddar cheese, beef, red onion, green onions, yellow pepper and red pepper. Cover and refrigerate until serving., Thoroughly pat water chestnuts dry with paper towels. In a small bowl, combine the cream cheese, milk and black food coloring. Cut a small hole in a corner of a pastry or plastic bag; insert round tip #4. Fill bag with cream cheese mixture. Write numbers on water chestnuts; lightly press one water chestnut onto each ball (except cue ball). , Arrange pool balls on a wooden cutting board. Use breadsticks for pool cues. Serve with crackers.
