1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter, softened

Steps:

  • Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
  • Heat oven to 375°F.
  • Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.

  • Cook potatoes according to directions on package. Place in refrigerator to cool while preparing the remaining ingredients.

4 tablespoons unsalted butter, at room temperature
2/3 cup packed light brown sugar

1 cup semisweet chocolate chips
2/3 cup sweetened shredded coconut

Steps:

  • Preheat the oven to 350˚ F. Spread the oats on a large baking sheet and bake until lightly toasted, 10 to 12 minutes. Let cool. Line 2 separate baking sheets with parchment paper.
  • Combine the peanut butter and butter in a large bowl and beat with a mixer on medium speed.   • With a spoon make sure potatoes are mashed really good getting all lumps out.

If sauce is too thick ( this will depend on the peanut butter) add between 1-4 Tablespoons of water. The sauce should be a thick, but liquid, consistency.
  • Meanwhile, prepare Simply Potatoes Diced Potatoes with Onion according to package directions.
  • Combine sauce and simply potatoes and let cook together 2 minutes more, until the flavors meld together.
