2 1/2 cups sugar
1/2 cup water
1/2 cup corn syrup
1 teaspoon vanilla
3 large egg whites

Steps:

  • First beat 3 egg whites until stiff.
  • Prepare the surface to roll out the candy. Cover the surface with wax paper and spread a thick layer of powdered sugar.
  • Next mix all ingredients except vanilla in a large pot and boil. Stirring continously, until ball forms. (Like when making fudge or candies) the ball should be hard and have a soft crack. Add vanilla.
  • Slowly pour the mixture over the egg whites while mixing with a blender the whole time. Continue to mix until the candy has cooled and resembles the texture of marshmallow cream.
  • Pour onto powdered sugar and roll thin.
  • Spread a thin layer of peanut butter.
  • Roll up and cut. ( cut the pieces using a piece of thread to keep it's form and layers).

These peanut butter and banana roll-ups are so quick to come together and make for a perfect breakfast treat!

2 bread slices
2 tbsp smooth peanut butter
1 banana
1 egg
2 tbsp milk
¼ tsp ground cinnamon
¼ tsp vanilla extract
unsalted butter (for pan frying)

Steps:

  • Remove the crust from the slices of bread and roll out flat using a rolling pin.
  • Spread a thin layer of peanut butter on each slice.
  • Add ½ of a banana to one end of each slice and roll into a log. Pinch the ends to seal closed.
  • Whisk together the egg, milk, cinnamon, and vanilla extract to form the batter.
  • Quickly dip the roll-ups into the batter until all sides are coated. Shake off the excess batter.
  • Melt butter on a pan and cook roll-ups until all sides are brown. Serve whole or slice into pieces!

enough powdered sugar to well coat working surface

Steps:

VERY quick and easy to make. My mom use to make these and at one point was hooked on them on a regular basis. I love sweet stuff but a warning, these are VERY sweet.

16 oz confectioners sugar
1 tsp vanilla
1 stick butter
peanut butter

Steps:

  • 1. To make the dough, mix together the confectioners sugar, vanilla and butter.
  • 2. Once the dough is mixed together, break it down into smaller sections and spread it out into long strips.
  • 3. Cover each dough strip in Peanut butter, roll up and then slice into small bite size pieces. Each piece should be about the thickness of your thumb.

4 3/4-5 1/4 cups all-purpose flour
1/4 cup sugar
2 (1/4 ounce) envelopes fast rising yeast
1 1/2 teaspoons salt
1 1/4 cups milk
1/4 cup water
1/2 cup peanut butter
1 large egg
1/4 cup chopped peanuts
2/3 cup peanut butter
1/3 cup sugar
2 tablespoons butter, softened
1 large egg
2 ounces semisweet chocolate
1 tablespoon butter

Steps:

  • In a large mixing bowl, combine 1 C flour, sugar, undissolved yeast and salt.
  • Heat milk, water and peanut butter until warm- about 120-130°F.
  • Gradually add to dry ingredients.
  • Beat for 2 minutes at medium speed by electric mixer.
  • Add egg and 1/2 C flour, beat 2 minutes at high speed.
  • Stir in enough remaining flour, by hand to make a soft dough.
  • Knead on light floured surface until smooth and elastic- about 8- 10 minutes.
  • Combine peanut butter filling ingredients until smooth.
  • Cover and let rest 10 minutes.
  • Divide dough into 2 equal portions.
  • Roll each half to 14 x 8 inch rectangle.
  • Spread with filling.
  • Roll up tightly from long side, pinching the seam to seal.
  • Cut into 8 equal pieces.
  • Place cut side up in each of 2 greased 9 inch round cake pans.
  • Cover and let rise in warm draft-free place until double in size- about 45 minutes.
  • Bake at 375°F for 20- 25 minutes or until done.
  • Remove from pans and cool on a wire rack.
  • Melt chocolate glaze ingredients together, stirring until smooth.
  • Drizzle over rolls.
  • Sprinkle with chopped peanuts.
