1/2 cup creamy peanut butter
2 tablespoons butter, softened
1 pinch salt
1 teaspoon vanilla extract
3 -4 tablespoons milk
1 1/2 cups sifted powdered sugar
1/4 cup sifted unsweetened cocoa powder (Dutch process)

Steps:

  • In a medium bowl, using an electric mixer on high speed, cream together the peanut butter, butter, and salt until light and smooth.
  • Blend in the vanilla and add 3 Tbsp.
  • of the milk until well blended.
  • Gradually beat in the powdered sugar and cocoa powder, adding more milk, if necessary, to achieve a smooth, spreadable consistency.

2-1/2 cups confectioners' sugar
1/3 cup baking cocoa
1/4 teaspoon salt
4 to 5 tablespoons 2% milk

Steps:

  • In a large bowl, cream butter and peanut butter until light and fluffy. Beat in vanilla. Stir in the confectioners' sugar, cocoa, salt and enough milk to achieve a spreading consistency.

From my grandmothers handwritten recipe box collection. Recipe is from a Mrs Edna Brown of Brisbane Australia dated as 1977. An easy slice suitable for lunch boxes.

1 cup self raising flour
1/4 cup brown sugar
1/2 cup coconut
1/2 cup salted peanuts, chopped fine
1/4 lb butter, melted
1 1/3 cups icing sugar
1 tablespoon cocoa powder (heaped)
1 tablespoon butter
2 -3 tablespoons hot water

Steps:

  • In a bowl, mix the flour, b. sugar, coconut, peanuts and butter together. Mix well.
  • Press into a 15x20 cm tin (greased) and bake for 15-20 minutes (or until cooked).
  • Pour icing over the top while hot and let set.
  • Keep in the tray and slice when cold.
  • To make icing, mix all ingredients in a bowl and stir well to combine.
