PEAR & BLUEBERRY COBBLER

2 cups fresh blueberries
2 cups peeled and chopped fresh pears
1 tablespoon sugar
2 tablespoons fresh squeezed lemon juice
1/2 cup brown sugar
1/2 cup old-fashioned oats
1/2 cup flour
1/2 teaspoon cinnamon
6 tablespoons cold butter (diced)

Steps:

  • 1) Preheat oven to 350 degrees. Spray four individual ramekins with cooking spray, place them on a parchment lined sheet pan and set aside.
  • 2) In a medium bowl mix the blueberries, pears, sugar, and lemon juice until the fruit is well coated. Set aside while you make the topping.
  • 3) In a food processor pulse the brown sugar, oats, flour, cinnamon, and butter until well combined and mixture begins to come together into chunks.
  • 4) Pour fruit evenly among the four ramekins and sprinkle the topping evenly over each one. I like my topping piled high! Bake for about 30 minutes or until fruit is bubbly and topping is lightly browned. Let sit for a few minutes before serving, or serve at room temperature. Great with vanilla ice cream!

  • Bake uncovered 20 minutes. Stir fruit mixture. Sprinkle with granola.
  • Bake 15 to 20 minutes longer or until light golden brown and bubbly. Let stand 5 to 10 minutes before serving. Serve warm with ice cream.

1/2 cup peach preserves, warmed
TOPPING:
1/3 cup all-purpose flour
1/3 cup sugar

1/8 teaspoon ground nutmeg
3 tablespoons cold butter
1 cup granola with fruit and nuts

Steps:

  • Place pears in a large bowl; sprinkle with cornstarch and toss to coat. Gently stir in preserves just until combined. 3 tablespoons white sugar
⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt
½ cup butter, softened
½ cup white sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
  • In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.

I've made a number of cobblers and crisps in my day. I thought I'd stick to a baking concept that I was familiar with and experiment with flavors. I've never made one, or tried one, with these 3 flavor combinations. I bought 4 pears at the store last week, not really intending to use them for this recipe...but since nobody took them in his lunch this week (Bill...*ahem*)...I used them to make this dessert! I still had a large bag full of fresh blueberries in the freezer, so I was in luck!

4 bartlett pears, peeled and seeded and sliced
1 tablespoon lemon juice
1/2 cup brown sugar
1 teaspoon cinnamon
1 teaspoon ground ginger
1 tablespoon flour
1/2 teaspoon salt
1 cup frozen blueberries or 1 cup fresh blueberries
1 tablespoon butter or 1 tablespoon margarine, for dotting
3/4 cup flour
3/4 cup sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
1 egg
1 teaspoon vanilla
3 tablespoons milk
sprinkles ginger

Steps:

  • Preheat the oven to 350°F and grease a deep dish pie plate, 9" square or round baking dish.
  • Combine the pears, lemon juice, cinnamon, ginger, flour and salt in a mixing bowl. Toss well. Add the frozen or fresh blueberries and toss again. Set aside and prepare the batter.
