This Pear and Blueberry Crumble is a simple fruit-based dessert made by combining diced pears with blueberries and topping it off with a hearty and crunchy oat topping.

1 cup rolled oats
¼ cup unbleached all-purpose flour (use almond flour for gluten-free)
¼ cup brown sugar (packed)
5 tablespoons unsalted butter (room temperature)
¼ teaspoon cinnamon
⅛ teaspoon salt
3 cups pear (peeled and diced)
3 cups blueberries (washed and picked)
3 tablespoons granulated sugar (add more if fruit isn't very sweet)
2 tablespoons unbleached all-purpose flour (use cornstarch for gluten-free)
2 teaspoon lemon juice (freshly squeezed)
¼ teaspoon cinnamon

Steps:

  • In a medium bowl, combine the oats, flour, brown sugar, cinnamon, salt and butter. Using your fingers, rub the softened butter into the ingredients until evenly distributed. Set aside.
  • With the rack in the middle position, preheat the oven to 375 °F. Lightly coat a 9x9 inch (or similar in size) baking dish with butter and set aside.
  • In a medium bowl, combine the peeled and diced pear, the blueberries, the granulated sugar, all purpose-flour, lemon juice and cinnamon. Mix well.
  • Add the fruit mixture to your baking dish and spread it evenly. Evenly top the fruit with the crumble topping.
  • Bake in the oven for approximately 45 to 55 minutes or until the fruit is bubbling around the edges and the top is golden brown and crisp.
  • Remove from the oven and let cool at least 15 minutes before serving.
  • Optional: Serve the crumble with your ice cream of choice or whipped cream.

1/3 cup sugar
3 tablespoons all-purpose flour
6 cups sliced peeled fresh pears
1 unbaked pastry shell (9 inches)
CRUMBLE TOPPING:
1/3 cup all-purpose flour
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, combine sugar and flour; add the pears and toss gently to coat. Spoon into pastry shell. In a small bowl, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over pie. , Bake at 400° for 45-50 minutes or until pears are tender and topping is golden brown. Cover edges loosely with foil during the last 30 minutes to prevent overbrowning. Cool on a wire rack.

homemade pie crust (my recipe makes 2 crusts; you'll just need 1)*
5 and 1/2 cups (800g) fresh blueberries*
1/2 cup (100g) granulated sugar
1/3 cup (41g) all-purpose flour
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1 teaspoon lemon zest
1/2 cup (100g) packed light or dark brown sugar
6 Tablespoons (46g) all-purpose flour
1 teaspoon ground cinnamon
6 Tablespoons (85g) unsalted butter, very cold and cubed
2/3 cup (50g) old-fashioned whole rolled oats

Steps:

  • Prepare my pie crust recipe through step 5.
  • In a large bowl, blueberries, granulated sugar, flour, cornstarch, lemon juice, and zest together until thoroughly combined. It will be pretty flour-y. That's ok. Place filling in the refrigerator until needed in step 4.
  • Preheat oven to 400°F (204°C).
  • On a floured work surface, roll out one of the discs of chilled dough (you can freeze the 2nd for later use, see note). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is smooth. Spoon the cold filling into the crust and discard the leftover juices in the bottom of the bowl, if any. Flute or crimp the edges of the crust. Place pie in the refrigerator until needed in the next step.
  • Mix the brown sugar, flour, and cinnamon together in a medium bowl. Using a pastry cutter, cut the cold butter into the brown sugar mixture until coarse crumbs are formed. Stir in the oats and sprinkle over pie.
  • Place the pie onto a large baking sheet and bake for 25 minutes. Keeping the pie in the oven, turn the temperature down to 375°F (190°C) and bake for an additional 30-35 minutes. After the first 20 minutes of bake time, I place a pie crust shield on top of the pie to prevent the edges from browning too quickly. I also loosely cover the whole pie with aluminum foil to prevent the crumble from browning too quickly as well.
  • Allow the pie to cool for 3 full hours at room temperature before serving. This time allows the filling to thicken up. Cover leftovers tightly and store in the refrigerator for up to 5 days.

½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Press the pie crust into the bottom and up the sides of a 9 inch pie plate. In a large bowl, stir together the sugar and flour. Mix in the lemon zest and lemon juice. Gently stir in the blueberries. Pour into the pie crust.
  • In a medium bowl, stir together the brown sugar, oats, flour and cinnamon. Mix in butter using a fork until crumbly. Spread the crumb topping evenly over the pie filling.
  • Bake for 40 minutes in the preheated oven, or until browned on top. Cool over a wire rack.

1/4 cup salted butter (cold)
1/4 cup shortening (cold)
1 1/2 cups all-purpose flour
4-5 Tablespoons cold water
4 cups pears (peeled, cored, and sliced)
1 cup blueberries (fresh or frozen)
1/3 cup white sugar
1 Tablespoon lemon juice
1/4 cup flour
1 1/2 cups oatmeal
1/2 cup flour
1 teaspoon cinnamon
1/2 cup brown sugar
6 Tablespoons butter
1/2 cup sliced almonds

Steps:

  • Add butter, shortening, and flour to a food processor. Pulse until the butter is pea-sized and begins to form a crumble. Slowly add in 4 Tablespoons of water and begin pulsing. If dough does not begin to form around the center of the processor add in the additional 1 Tablespoon until it does. Remove the dough from the food processor and place on a lightly floured piece of parchment paper. Place another piece of parchment paper over the top of the dough, pressing down with the palm of your hand to flatten slightly. Roll dough out to a 12" circle. Remove the top piece of parchment paper. Lift up the bottom piece of parchment paper with dough and flip over onto a 9" pie plate or tart pie baking dish. Press gently into place. Cut off any excess around the outer edges and crimp remaining. Poke the bottom of the crust with a fork and refrigerate until ready to use.
  • Combine the pears and blueberries in a medium bowl. Add the sugar and lemon juice. Sprinkle with the flour and stir until combined. Set aside.
  • Combine dry ingredients together in a medium bowl. Add in the butter. Cut together using a pastry cutter until well combined. Mix in the sliced almonds.
  • Preheat oven to 350. Remove the pie crust from the refrigerator. Pour the filling into the bottom of the pie crust. Spread out the fruit so it is evenly distributed. Sprinkle the crumble topping over the fruit filling. Bake in the oven for 45-55 minutes or until topping and crust are golden brown and pears are tender. **If crust begins to brown too quickly cover the edges with foil for the last 15-20 minutes or so.
