FRESH PEAR VINAIGRETTE

Steps:
- Cut the pear into chunks and drop in the carafe of a blender with the lemon juice. Purée, then add the salt and pepper. Add the vinegar and blend well. With the blender running, drizzle in the oils until you have a nice, thick emulsified dressing. The dressing can be refrigerated in an airtight container for up to 8 hours. Shake well before using.
PEAR SALAD WITH HONEY VINAIGRETTE
Steps:
- Preheat the oven to 350 degrees F.
- In a bowl, toss the bread cubes, 3 tablespoons of the olive oil and some salt and pepper. Place on a half sheet tray and toast for 20 minutes.
- Assemble the salad in a large bowl with the pecans, lettuce, pears and croutons. Pour the remaining 1/4 cup olive oil, the honey, lemon juice and some salt and pepper in a Mason jar and shake.
- Pour the dressing over the salad and serve.
PEAR VINAIGRETTE
This is a light and lovely salad dressing that lends itself well to a simple and elegant salad. I love to use it on a salad of butter lettuce, arugula, goat cheese, and caramelized pecans - simply delicious!

- Blend the pear, white wine, garlic, Dijon mustard, white balsamic vinegar, black pepper, and sea salt in a blender until well combined; drizzle the olive oil into the mixture in a thin, steady stream while continuing to blend. Blend a few seconds longer until the salad dressing is thick and creamy.

ASIAN PEAR AND GINGER VINAIGRETTE

Steps:
- Cook ginger and oil in a small saucepan over medium heat, stirring occasionally, until ginger is golden, 10-15 minutes. Let cool. Strain ginger oil into a small bowl and set aside. Discard ginger.
- Purée Asian pear, vinegar, miso, lime zest, and both peppercorns in a blender, scraping down sides of blender as needed, until smooth. With motor running, gradually add reserved ginger oil and blend until emulsified; season vinaigrette with salt.
- DO AHEAD: Ginger oil can be made 1 week ahead; store airtight at room temperature. Vinaigrette can be made 1 day ahead; cover and chill.
FRESH PEAR AND CHERRY SALAD WITH VANILLA PEAR VINAIGRETTE
A mix of juicy pears, sweetened nuts, dried cherries, and feta cheese makes this is a show-stopping sweet salad! The taste and colors will impress! You may add more of the pear syrup to the dressing to make it thinner, or increase the amount of yogurt for creamier results.

- Combine sugar, cinnamon and walnuts in a skillet over medium heat. Mix together until sugar and cinnamon are melted and walnuts are evenly coated. Remove from heat. Spread walnuts on a large plate to cool.
- In the container of a blender, combine the drained pears, 1/3 cup of the reserved syrup from the can, vinegar, yogurt, honey, salt, pepper, vanilla extract, and nutmeg; blend until smooth.
- Assemble the salad by tossing together the mixed greens, spinach, pear slices, dried cherries, feta cheese, and walnuts in a serving bowl. Serve with dressing on the side.
