BAKED PENNE WITH ITALIAN SAUSAGE

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. Toss with cooked pasta, and place in a 9x13 inch baking dish. Sprinkle top with mozzarella.
- Bake in preheated oven for 20 minutes, or until cheese is melted.

Steps:
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and allow to heat. Add onion and peppers to hot oil; cook until they begin to get tender, 3 to 4 minutes. Add sausages and cook, breaking them up with a wooden spoon, until lightly browned, 4 to 5 minutes. Add garlic and saute for 1 to 2 minutes. Add marinara sauce, water, spinach, pasta, basil, and Italian seasoning; mix to combine. Cancel Saute function.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 5 minutes. Then release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in 1/2 cup shredded Italian cheese until combined. Serve with remaining cheese sprinkled on top.

- Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook the chicken, sausage, onion and red and green peppers in oil over medium heat for 6-8 minutes or until chicken is no longer pink. Add garlic; cook and stir 1 minute longer., Stir in the Alfredo sauce, soup, pepper and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Stir in cheese. Drain pasta; add to chicken mixture and toss to coat., Serve desired amount immediately. Cool remaining mixture; transfer to freezer containers. Freeze for up to 3 months., To use frozen pasta: Thaw in the refrigerator overnight. Transfer to a large skillet; cook and stir over medium heat for 10-12 minutes or until heated through.

- In a Dutch oven, saute sausage until no longer pink; drain. Remove and set aside. In the same pan, saute the zucchini, pepper and mushrooms in oil until tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan., Add the crushed tomatoes, diced tomatoes, cheese, hot sauce, Italian seasoning, sugar and salt. Stir in sausage. Bring to a boil. PENNA PASTA WITH ITALIAN SAUSAGE & CHICKEN
Just wonderful! Your tummy, family & guests will thank you! This recipe was Inspired by: Bon Appetit and Neil Pagano - Oct. 1998. UPDATE 5/26/08: I have made this with and w/o the chicken. I have also used both red and white wine depending on what I had on hand. Either way, it's a winner.

- Boil large pot of water for pasta. Cook pasta according to package directions. This can be done later if you are making ahead of choose to simmer longer than suggested.
- Heat the oil in a heavy skillet over medium, add chicken. Sauté until no longer pink. I let the edges get a bit browned w/o over cooking. Remove with a slotted spoon, drain and transfer to a bowl.
- Add wine to skillet and boil reducing to 2T, scrapping up the browned bits.
- Pour wine over chicken in the bowl, set aside.
- Add oil to hot skillet, add sausage, onions and bell pepper to the skillet. Cook until sausage is no longer pink and onions & peppers are tender.
- Breaking up sausage into bite size pieces while cooking. Add the chicken back into the pot.
- Mix in tomatoes with juices, tomato sauce, chicken stock, garlic and rosemary. Simmer until reduced to saucy consistency, about 10 minutes. (as suggested by Bon Appetit). I allow it to simmer longer.
- Add pasta to the finished chicken & sausage mixture and toss.
- Add 1/2 - 1 cup cheese, toss to combine.
- Top with parsley right before serving.
- Serve with additional cheese at table.
- NOTE: 4/17/11 It's been a while since I've made this. I re-ordered the ingredient list because I found it confusing as originally written.

EASY CHICKEN SAUSAGE PENNE PASTA RECIPE

- In a stock pot bring 2 quarts of water to boil. Season with salt. When the water comes to a full boil add the penne pasta and cook until al dente consistency, approximately 9-11 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet or electric skillet. Once hot, add the diced onion, diced sweet bell pepper and sausage pieces. Cook until the sausage is just cooked through. Add the minced garlic and cook for 1 additional minute.
- Add the pasta sauce and stir. Heat the pasta sauce for 3-4 minutes, stirring frequently.
- Stir in the Parmesan cheese and baby spinach. Cook until the spinach is wilted, 3-4 minutes.
- Drain cooked pasta sauce and add it to the skillet. Stir and coat the pasta with the sauce.
- Sprinkle the Italian blend cheese on top and cover the skillet with a lid until the cheese melts.
- Garnish with chopped fresh parsley and additional Parmesan cheese, if desired.

PENNE PASTA WITH HOT ITALIAN SAUSAGE

Steps:
- Brown ground beef in large skillet, drain.
- Cut hot italian sausages into 4-5 pieces, brown in skillet, remove.
- Add enough butter to the pan to saute green peppers, red peppers and onion. Season with salt and pepper. Saute 5 minutes.
- Add garlic to pepers and onions.
- When garlic is fragrent, add ground beef, hot italian sausages, basil, oregano and pasta sauce.
- Combine.
- Fold in penne pasta and ricotta cheese, transfer to two greased 8x8 baking dishes.
- Top with Mozzarella and Parmesan cheese.
- Bake at 400F until cheese is melted and browned.
- Serve with garlic bread, enjoy!
