2 cups oats, either quick or old-fashioned (uncooked)
2 cups Pillsbury BEST® All Purpose Flour
1 1/4 cups light brown sugar, firmly packed
1 cup lightly toasted walnuts*, chopped
1 1/2 tsps. ground cinnamon
1/4 tsp. grated nutmeg
1 tsp. grated lemon peel
1/2 tsp. salt
2 tbsps. fresh lemon juice
1 cup butter, chilled, cut into small pieces
Crisco® Original No-Stick Cooking Spray
1 (12 oz.) jar Smucker's® Seedless Blackberry Jam
Powdered sugar, if desired

Steps:

  • HEAT oven to 325 degrees F. Toss together in a large mixing bowl oats, flour, brown sugar, walnuts, cinnamon, nutmeg, lemon peel and salt until well blended.
  • SPRINKLE mixture with lemon juice, then with a pastry blender or two knives, cut in the butter pieces until mixture is crumbly.
  • SPRAY 13 x 9-inch baking pan with no-stick cooking spray. Reserve 2 cups of the oat mixture, then sprinkle remainder in pan, pressing with fingers to form a crust
  • BAKE 10 minutes, or until set. Let cool slightly, then spread blackberry jam evenly over crust. Sprinkle evenly with reserved oat mixture, pressing down gently.
  • RETURN to oven; bake 15 to 20 minutes, or until crust is golden brown.
  • *To toast nuts: Place walnuts in dry nonstick skillet; cook over medium heat, shaking pan until nuts are lightly browned.

Lemon curd:
1 cup plus 2 tablespoons sugar
2/3 cup fresh lemon juice
1/2 cup (1 stick) unsalted butter, cut into pieces
3 tablespoons grated lemon peel
3 large eggs
1 cup whipping cream
1/2 cup milk
Cookies:
3 tablespoons dark corn syrup
2 tablespoons firmly packed dark brown sugar
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon brandy
1/3 cup all purpose flour
2 1/2-pint baskets fresh blackberries

Steps:

  • For lemon curd:
  • Bring 1 cup sugar, lemon juice, butter and peel to boil in heavy large saucepan, stirring to dissolve sugar. Whisk eggs in bowl to blend.
  • Gradually whisk in hot butter mixture. Return to saucepan and stir over low heat until curd thickens and leaves path on back of spoon when finger is drawn across, about 2 minutes; do not boil.
  • Divide curd evenly between 2 bowls. Add remaining 2 tablespoons sugar, then cream and milk to 1 bowl and whisk to combine. Cover and chill lemon curd and lemon cream until cold.
  • Transfer lemon cream to ice cream maker and process according to manufacturer's instructions. Freeze ice cream in covered container. (Can be prepared 3 days ahead. Keep curd refrigerated. Keep ice cream frozen.)
  • For Cookies:
  • Preheat oven to 350°F. Butter nonstick cookie sheet. Combine first 4 ingredients in heavy small saucepan. Stir over medium heat until sugar dissolves. Bring to boil. Remove from heat; whisk in flour. Form 2 cookies by spooning 1 tablespoon batter for each onto prepared cookie sheet, spacing evenly. Bake until cookies are lacy and golden, about 10 minutes. Cool cookies on sheet just until firm enough to lift without breaking, about 30 seconds. Working quickly, lift 1 cookie from sheet, using spatula. Drape over inverted 3/4-cup custard dish. Gently flatten cookie on dish bottom; mold and crimp sides to form cup. Repeat with remaining cookie, returning cookie sheet to oven briefly if cookie hardens. Repeat baking and molding of remaining batter. Cool. Gently remove cookie cups from dishes. (Can be made 1 day ahead. Store airtight.)
  • Stir lemon curd over low heat just until slightly warm. Place 1 cookie cup on each plate. Fill with scoops of ice cream. Spoon some lemon curd over. Sprinkle with berries.

1 package (12 ounces) silken tofu, firm or extra-firm, drained
1 cup fresh blackberries

Steps:

  • Combine 2 1/2 teaspoons of the lemon zest, lemon juice, honey, and tofu in a blender.
  • Puree ingredients until smooth, scraping down sides of blender with rubber spatula as necessary.
  • Divide lemon cream evenly among four bowls or serving glasses. Garnish each portion with blackberries and reserved lemon zest. Serve immediately or refrigerate.

Everybody loves traditional strawberry Eton mess, but blackberries also work beautifully with homemade meringue and luscious lemon cream

600ml tub whipping cream
3 tbsp icing sugar
6 tbsp lemon curd
200g blackberry
few primroses or other edible flowers , to decorate (optional)
2 large egg whites
140g caster sugar
1 tsp cornflour
1 tsp white wine vinegar

Steps:

  • Heat oven to 120C/100C fan/gas ½. Line a baking sheet with baking parchment. To make the meringues, put the egg whites in a clean mixing bowl and beat with an electric whisk to stiff peaks. Tip in half the sugar and beat again until shiny and stiff. Add the remaining sugar with the cornflour and vinegar and beat back to shiny and stiff. Dollop 5 very large spoonfuls onto the baking sheet and bake on a low shelf for 1 hr until crisp and the meringues peel easily from the paper. Cool. The meringues will keep in an airtight container for up to 3 days, or in the freezer for up to 3 months.
  • Tip the cream into a large bowl, sift in the icing sugar and gently whip until soft peaks just hold a little shape. Chill until ready to serve.
  • To serve, dollop the lemon curd over the whipped cream, then crumble over some of the meringues in small chunks - you probably won't need them all. Put the blackberries into a bowl and lightly rough up with a fork so they're whole but juicy, then scatter them over the cream. Fold together with a large spatula or spoon, just a few times to marble everything through. Divide between 6 glasses or bowls, top each with an edible flower, if using, and serve straight away.

½ cup white whole wheat flour
½ cup rolled oats
6 tablespoons unsalted butter, melted
¼ cup loosely packed light brown sugar
½ teaspoon vanilla extract
¼ teaspoon salt
½ cup unsalted butter, softened
½ cup confectioners' sugar
2 eggs
1 egg yolk
1 tablespoon lemon zest
1 ½ teaspoons finely chopped rosemary, or more to taste
½ teaspoon vanilla extract
¾ cup white whole wheat flour
½ teaspoon baking powder
⅛ teaspoon salt
2 (6 ounce) containers fresh blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch baking dish with parchment paper, leaving an overhang on two sides.
  • Combine 1/2 cup white whole wheat flour, oats, 6 tablespoons butter, brown sugar, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt in a small bowl; mix with a fork to make a crumbly topping. Place in the refrigerator.
  • Combine 1/2 cup butter and confectioners' sugar in a bowl; beat with an electric mixer until light and creamy. Add eggs and egg yolk one at a time, mixing well after each addition. Beat in lemon zest, rosemary, and 1/2 teaspoon vanilla extract.
  • Mix 3/4 cup white whole wheat flour, baking powder, and 1/8 teaspoon salt together in a separate bowl. Add to the creamed butter mixture in 2 to 3 batches, mixing well after each addition, until a thick dough forms.
  • Spread dough in the bottom of the prepared pan. Arrange blackberries evenly on top. Stir crumb topping and sprinkle evenly over blackberries. Press down gently to pack topping down.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Transfer to a wire rack; let cool for 1 hour.
  • Lift bars out of the pan using the parchment paper edges. Cut into 12 pieces using a long serrated knife.
