One-Pot Penne with Zucchini and Parmesan image

This simple summer pasta dish is the perfect way to dispatch that bumper crop of zucchini.

2 medium zucchini
Coarse salt and freshly ground pepper
8 ounces penne pasta
3 tablespoons extra-virgin olive oil
1/3 cup grated Parmesan
1/2 teaspoon minced garlic
1/4 teaspoon red-pepper flakes

Steps:

  • Shred zucchini on the large holes of a box grater. (You should have about 4 cups.) Toss with 1/2 teaspoon salt in a colander set over a bowl. Let stand 10 minutes.
  • Meanwhile, cook pasta in a pot of generously salted boiling water until al dente. Drain pasta directly over zucchini in colander set in sink. Transfer both to pot; toss with olive oil, Parmesan, garlic, and red-pepper flakes. Season with coarse salt and freshly ground pepper. Serve, dressed with more oil and cheese.

1/4 cup olive oil
1 red onion, minced
6 ounces Pancetta, diced
1 small zucchini, halved lengthwise cut crosswise into 1/4-inch thick slices

1 pint (16 ounces) cherry tomatoes, halved
1 tablespoon minced garlic
1/2 pound penne, cooked and drained
4 ounces (about 1 cup) goat cheese
2 tablespoons minced fresh basil

Steps:

  • In a large skillet set over moderate heat cook the onion in the olive oil, stirring occasionally, for 3 minutes, or until softened. Add the Pancetta and cook the mixture, stirring, for 2 minutes. Add the zucchini and salt and pepper to taste and cook the mixture, stirring occasionally, for 3 minutes more. Add the cherry tomatoes and cook, stirring, 2 minutes, or just until heated through. In a large bowl combine the pasta with the pancetta mixture, the goat cheese and the basil. Transfer to a serving plate and garnish with a sprig of fresh basil.;

*Extra Virgin Olive Oil, 3 tbsp
Onions, raw, 2 medium (2-1/2" dia)
Butternut Squash, 4 cup, cubes
Garlic, 1 clove
1/4 tsp. crushed red chili pepper
Salt, .5 tsp
Nutmeg, ground, .25 tsp
Sage, ground, 2 tbsp
Pasta, cooked, 16 oz
Parmesan Cheese, grated, 4 oz

Steps:

  • Heat olive oil in skillet over medium flame; add onions and cook, stirring often, until very translucent. Meanwhile, using a food processor fitted with a knife blade, pulse the raw squash and garlic together in two batches until very fine. Add to onions with chili, salt, nutmeg and a cup of water. Cover and simmer until the squash is sauce-like, 10-15 minutes, Stir in sage. Cook pasta in boiling water until just tender. Strain, reserving a cup of the pasta liquid. Add pasta to hot sauce in pan, stir and cook over high heat, adding cooking liquid if necessary, until pasta is coated. Stir in Parmesan cheese and serve.

1 red onion, finely chopped
4 garlic cloves, thinly sliced
6 salt-packed anchovy fillets, soaked in milk for 20 minutes, rinsed, drained
1 pound butternut squash, peeled, seeded and cut into 1/2-inch cubes Salt and freshly ground black pepper, to taste
1 pound penne rigate
1/4 cup finely chopped flat-leaf parsley
1/2 cup toasted fresh bread crumbs
4 ounces ricotta salata, smoked ricotta or Asiago cheese, grated

Steps:

  • In a large saute pan, heat 2 Tbs. oil over medium heat. Add onion, garlic and anchovies. Cook, stirring occasionally, until vegetables soften. Turn heat to high and add squash; toss for 5 minutes, or until tender and browned. Add salt and pepper. Remove from heat. Cook penne according to package directions; drain. Return squash to high heat; add penne, parsley and remaining oil, and toss for 1 minute. Divide among four warmed bowls; top with bread crumbs and cheese. Serve immediately. Serves 4.

Featuring anchovies, capers, and garlic sautéed together and tossed with black Taggiasca olives and San Marzano tomatoes, the sauce comes together in less time than it takes to cook the pasta itself, and is ideal for an easy weeknight meal.

1 pound penne pasta, bronze cut (Afeltra brand)
1 tablespoon extra-virgin olive oil
2 whole salt-packed anchovies
3 tablespoons salted capers
1 cup Taggiasca or other black olives
1 garlic clove, smashed, peeled, and chopped
1 tablespoon chopped flat-leaf parsley
1 1/2 cups canned peeled tomatoes (San Marzano preferred)
Sea salt and freshly ground black pepper

Steps:

  • Cook the pasta and the sauce: Bring a large pot of salted water to a boil. Add the pasta to the boiling water, stir, and cook until al dente, about 3 minutes less than what the box advises. Meanwhile, prepare the sauce by heating oil in a skillet over low heat. Rinse the anchovies and the capers under cold water to remove the salt, then soak in a small bowl of water for several minutes. Remove the pits from the olives by quickly smashing them with the side of a knife, then fillet the anchovies by removing the backbone (the longer they're soaked, the easier this will be). Add the anchovies, capers, garlic, olives, and parsley to the skillet, and cook until the anchovies are broken up and the garlic is lightly browned. Using a fork or your hands, break up the tomatoes in a mixing bowl and add to the skillet. Simmer sauce for 1-2 minutes, then check for seasoning (sauce will be naturally salty) and adjust with pepper.
  • Assemble the dish: Perform the pasta "marriage ceremony" by reserving 1 cup of the pasta water and draining the rest. Return the pasta to the pot. Add the pasta water and puttanesca sauce into the pot. Cook over low heat, gently tossing the pasta with the sauce for 2 minutes to allow it to marry with the sauce. The pasta should still be firm to the bite. Transfer to a platter or bowl, garnish with more chopped parsley, and serve.

Steps:

  • In a big skillet, heat 1 tablespoon oil over medium heat.
  • Add in the swordfish; cook until the fish loses its pink color, about 5 minutes.
  • Remove the swordfish and transfer to a plate; sprinkle with salt and pepper.
  • To the skillet, add in the remaining 3 tablespoons oil; heat over medium heat.
  • Add in zucchini, green onion, and salt to taste; cook/stir often, until the zucchini are just tender, about 10 minutes.
  • Return the swordfish to the pan; stir in the herbs and lemon zest; remove from the heat.
  • Bring at least 4 quarts water to a boil in a big pot; add in 2 tablespoons salt, then the pasta; stir well.
  • Cook over high heat, stirring often, until the pasta is al dente.
  • Drain pasta, reserving some of the cooking liquid.
  • Add the pasta to the skillet and toss over high heat 1 minute to combine.
  • Add some of the reserved pasta water, if needed; serve immediately.

Steps:

1 medium (about 2 1/4 pounds) butternut squash, peeled, seeded, and cut into 1/2-inch pieces (about 3 cups)
1/4 cup olive oil
Coarse salt
3/4 pound penne pasta
3 ounces pancetta, sliced 1/4 inch thick and finely chopped
2 shallots, thinly sliced crosswise
1/4 teaspoon crushed red pepper, flakes
10 fresh sage leaves, coarsely chopped or torn
1/2 cup finely grated pecorino Romano cheese, plus more for serving
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Place butternut squash on a rimmed baking sheet and toss with 1 tablespoon of olive oil; season with salt. Transfer to oven and roast until squash is browned and tender, about 15 minutes.
  • Bring a large pot of water to a boil over high heat. Generously salt water and return to a boil. Add pasta and cook until al dente, according to package directions. Drain pasta, reserving 1/2 cup cooking liquid. Set pasta and reserved cooking liquid aside.
  • Meanwhile, heat remaining 3 tablespoons olive oil in a large skillet over medium-low heat. Add pancetta and cook until just crisp, 4 to 5 minutes. Add shallots, crushed red pepper, and sage. Cook until shallots are soft, 4 to 5 minutes. Add penne and squash and toss gently, adding reserved pasta cooking liquid as necessary to moisten.
  • Add cheese and black pepper and cook, tossing gently, until pasta and squash are heated through. Serve immediately with more grated cheese, if desired.
