Steps:

  • Heat a large cast iron skillet (or griddle) over medium heat.
  • In a medium bowl, toss the two shredded cheeses together to mix.
  • Evenly divide the cheese between two of the slices of bread. On the other two slices, evenly distribute the pepper jelly and smear to cover one side. Piece the sandwich together by pairing up on cheese and one jelly slice.
  • To the outside, smear the top of the sandwiches with 1-2 tablespoons of mayonnaise. Place the sandwich into the preheated cast iron, mayo-side down. While the first side is toasting, smear the other side of the sandwich with the remaining mayonnaise.
  • Cook on each side for 3-4 minutes until golden and the cheese is melted. Remove from the cast iron skillet and rest for 2 minutes before cutting and serving.

Steps:

  • Preheat oven to 375 degrees. Divide cheddar among 4 slices bread. Spread jelly on 4 more slices bread and sandwich together. Coat a large skillet with cooking spray and heat over medium. Working in batches, if necessary, cook until bread is golden and toasted, 2 minutes, flipping once. Transfer to a baking sheet and bake until cheese is melted, 3 to 5 minutes. To serve, cut into sticks or triangles.

Steps:

  • *Cook's note: Feel free to try any bread, cheese, or jelly in any combination, not just the ones listed here.
  • Select any bread, any cheese, and any jelly. Spread 2 pieces of bread with butter. Place 1 piece, butter side down, in a skillet over medium heat and top with several slices of the cheese. Spread the unbuttered side of the other piece of bread with some jelly and put it jelly side down on top of the cheese. When the first side is browned, after about 3 minutes, flip the sandwich and cook until the other side has browned, about another 3 minutes. Serve while warm.

  • Spread both sides of bread slices with butter. In a large skillet, toast bread on 1 side, over medium heat until golden brown, 3-4 minutes. Remove from heat; place toasted-side up. Spread cheese over toasted bread slices. Top 2 slices with jelly, then with bacon. Top with remaining bread slices, cheese facing inward. 2 ounces cream cheese, softened
1 tablespoon sour cream
10 pickled jalapeno pepper slices, or to taste - chopped
2 ciabatta sandwich rolls
4 teaspoons butter
8 tortilla chips, crushed
½ cup shredded Colby-Monterey Jack cheese

Steps:

  • Combine the cream cheese, sour cream, and pickled jalapeno in a small bowl. Set aside. Preheat skillet over medium heat.
  • Slice each roll in half horizontally, then slice the rounded tops off the ciabatta rolls to make a flat top half. Spread 1 teaspoon butter on the doughy cut side of the bottom bun and 1 teaspoon butter on the now flattened top bun. Place half of the cream cheese mixture, half of the crushed chips, and half of the shredded cheese on the non-buttered side of the bottom bun. Place the top half of the bun on the sandwich and place the sandwich on the hot skillet. Repeat with the second sandwich.
  • Grill until lightly browned and flip over, about 3 to 5 minutes; continue grilling until cheese is melted and the second side is golden brown.
