PEPPERCORN, MUSTARD AND DILL VINEGAR
Typical Danish ingredients are featured in this easy-to-make condiment; it would be wonderful incorporated into a vinaigrette for cold poached salmon.
Yield Makes about 3 1/2 cups

Steps:
- Place first 5 ingredients in 1-quart jar. Add bay leaves, lemon slices and dill sprigs. Place lid on jar; seal. Store in cool dry place at least 1 and up to 6 weeks.
MUSTARD POTATO SALAD RECIPE
Steps:
- Prepare hard-boiled eggs using the desired method, peel, and set aside to cool.
- Wash potatoes and quarter.
- Bring a pot of water to a boil with a little bit of salt. Boil potatoes until very tender.
- Combine mayo, mustard, diced dill pickles, apple cider vinegar, sugar, celery seed, salt, and pepper.
- Mash potatoes with five of the hard-boiled eggs. Mix in dressing.
- Refrigerate and serve cold. Top with a sliced hard-boiled egg.

- Over medium heat, toast the mustard seeds and peppercorns in a large saucepan. Cook until fragrant, about 2 minutes.
- While simmering, cut your cucumbers in your desired shape. Make sure spears fit inside the jar (cut off an end if not). Put the pickles and brine in mason jars or another seal-able container.
- Remove from the heat. Add the dill to the liquid and pour the liquid into the mason jars, covering the cucumbers. (If you want crunchier pickles, let the liquid cool BEFORE adding the pickles so the heat does not cook them).
