PEPPERONI ROLLS
These are the amazingly unique pepperoni rolls found in almost all convenience stores in West Virginia and Southwestern PA. A slightly sweet fluffy dough with spicy pepperoni makes for a delicious treat!

Steps:
- Dissolve 1/2 teaspoon sugar in 1 cup of warm water in a small bowl. Sprinkle yeast over the water and let stand for 5 minutes.
- Mix flour, 3/4 cup sugar, and salt in a large bowl. Stir in the yeast mixture, beaten eggs, and melted butter. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, then place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 1/2 hours.
- Preheat an oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
- Punch down the dough, and divide it into 20 equal pieces about the size of a golf ball. Using your hands, flatten each piece into a small rectangle about 4 inches square. Place 3 slices of pepperoni down the center of each dough square, overlapping the slices. Place another row of 3 slices next to the first. Roll the dough around the pepperoni slices, pinch the edges closed, and place the rolls on the prepared cookie sheet.
- Bake the rolls in the preheated oven for 14 to 16 minutes, until the bottoms are lightly browned and the tops are barely golden.

- Spray counter lightly with non-stick cooking spray. Divide the loaf in half. Roll each half into a 6x12-inch rectangle. Layer half of the pepperoni on each rectangle, lengthwise, leaving one inch along one long side bare. Brush the bare inch of dough with water. Evenly distribute the peppers and green onions over the pepperoni. Starting with the long edge opposite the bare edge, tightly roll up both rectangles and pinch edges to seal. Place both on a large sprayed baking sheet. Cover with sprayed plastic wrap and let rise 30 minutes. Remove wrap and bake at 350°F 20-25 minutes. Cool and then slice. Serve with sliced tomatoes and olives if desired.

EASY PIZZA SWIRLS
I threw this together one night when I was running late with dinner. It's fast to prepare, quick to bake, and easy to customize with your own favorite pizza or sandwich toppings! Try it with ham & swiss, salami & provalone...anything you like! Makes a meal for two or a snack/appetizer for many!

- Preheat oven to 350°F.
- Spray cookie sheet with non-stick cooking spray or cover with "rapid release" foil.
- Roll out dough into a flat rectangle, about 15x8" & 1/2" thick.
- Chop pepperoni (it only takes a minute by hand on a cutting board, or you can do it with a food processor if you don't mind having to wash all the parts later).
- Brush oil over dough. Sprinkle with garlic powder & italian seasoning.
- Spread with cheeses & pepperoni. Be sure to leave a 1/2" border along edges of dough.
- Starting with long side, roll up jelly roll style & seal edges by pressing dough together.
- Lightly brush oil over dough & place on cookie sheet.
- Bake 20-30 minutes until golden brown. Remove from oven. Let cool 5-10 minutes then slice & serve. (We like it with marinara dipping sauce on the side).

My children helped me dream up this snappy bread that tastes like pizza. The from-scratch flavor makes it a family favorite, but it's great for parties, too.

- In a bowl, dissolve yeast in warm water. Add oil, sugar, salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn onto a floured surface; divide in half. Roll each portion into a 12x8-in. rectangle; set aside., For sauce, combine the onion and garlic in a microwave-safe dish. Cover and microwave on high for 1 minute. Add tomato sauce and basil; cover and cook at 50% power for 3 minutes or until bubbly. Spoon over crust to within 1/2-in. of edges. Sprinkle with 3 cups mozzarella cheese, pepperoni and olives., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut each roll into 12 slices. Place cut side down on a greased baking sheet. Sprinkle with remaining cheese. Bake at 400° for 15 minutes or until crust is golden and cheese is melted. Serve warm.

- Cream butter and sugar until light and fluffy; beat in egg yolk and vanilla. In another bowl, whisk together flour, baking powder and salt; gradually beat into creamed mixture. - Heat oven to 350°F. In large bowl, beat butter, powdered sugar and vanilla with electric mixer on medium speed, or mix with spoon. Stir in flour. Divide dough in half. Stir peppermint extract and food color into one half of dough. Divide each color of dough in half.
- Shape each piece of dough on generously floured surface into rope, 12 inches long. Place 2 ropes, 1 red and 1 white, side by side. Twist ropes. Repeat with remaining 2 pieces of dough.
- Cut twisted ropes into 1/2-inch pieces; shape each into ball. Place about 1 inch apart on ungreased cookie sheet. Flatten to about 1/4-inch thickness with greased bottom of glass dipped in granulated sugar.
- Bake cookies 7 to 9 minutes or until set. Remove from cookie sheet to wire rack; cool.

PEPPERONI SWIRLS

- On a lightly floured surface, roll out dough to a 10 x 15 inch rectangle. Set aside. In a medium size bowl, mix together cream cheese and Parmesan. Add Bridgford Pepperoni, olives, onion and garlic. Mix well. Spread evenly over dough. Roll up dough tightly in jelly-roll fashion. Seal seams and edges. Cut roll into 30, 1/2 inch slices. Place slices swirl-side up on greased baking sheet. Bake in a preheated 375° oven for 12-15 minutes. Remove from oven and pan to cool on wire rack.
