Time 50m

Number Of Ingredients 13

2 Pounds Large or Jumbo Shrimp ((SEE NOTES))
2 TBS + 1 tsp Kosher Salt (- DIVIDED)
½ tsp Baking Soda
6 Cups Water
2 ½ Cups Beer ((SEE NOTES))
2 large Stalks Celery (- roughly chopped)
1 medium Yellow Onion (- roughly chopped)
3 large Cloves Garlic (- smashed and peeled)
2-inch knob Fresh Ginger (- peeled and thinly sliced)
2 large sprigs fresh Flat Leaf Parsley
1 1/2 TBS Lemon Juice ((juice of 1 lemon))
Remoulade Sauce ((Or Cocktail Dipping Sauce of choice!))
Optional Garnishes & for Serving: Lemon Wedges, Fresh Parsley, Cocktail Sauce

Steps:

  • Prepare Shrimp: Remove shells from shrimp, leaving tails intact and devein. Set shells aside (do not discard!) Place shrimp in a large non-reactive mixing bowl and add 1 teaspoon of the salt along with all of the baking soda. Toss to evenly coat. Place in the refrigerator for 30 minutes- 1 hour.
  • Meanwhile, make the Poaching Liquid: In a medium pot combine - water, beer, celery, onion, garlic, ginger, parsley, lemon juice, remaining 2 tablespoons of salt and reserved shrimp shells. Bring contents to a simmer over high heat. Immediately reduce heat to simmer and cook for 20-25 minutes. Strain liquid through a fine-mesh colander and discard solids. Immediately return broth back to pot and adjust heat to medium. Fill a large bowl with ice water and set out two large zip-closure bags. Set aside.
  • Poach the shrimp: Add the shrimp to the poaching liquid (do NOT rinse them prior). Poach until shrimp are just cooked through, stirring occasionally. Depending on size of shrimp, this will take anywhere from 1-5 minutes, depending on the size. TIP: Shrimp are perfectly cooked when they form a "C" shape and are pink in color with some bright red accents. If shrimp are still translucent, they're not done cooking.Tips: If you have a thermometer, you want your poaching liquid to stay between 170-180 degrees F.
  • Shock the shrimp: Use a slotted spoon to transfer shrimp to Ziploc bags, dividing them in between the two as to not overcrowd bags. Immediately seal bags, removing as much air as possible, and submerge bags in the ice water (use a plate to weigh bag down if necessary). Transfer bowl to the refrigerator and allow to chill for at least 30 minutes.
  • Serve shrimp cocktail with remoulade sauce and lemon wedges.

SHRIMP COCKTAIL

Shrimp Cocktail image

Provided by Food Network Kitchen

Categories     appetizer

Time 38m

Yield 4 to 6 servings

Number Of Ingredients 18

10 cups cold water
2 medium carrots, quartered
2 stalks celery, quartered
1 large onion, quartered
1 head garlic, halved
1 lemon, halved
1/2 bunch parsley
5 sprigs fresh thyme
2 bay leaves
1 pound medium or large shrimp, in the shell, rinsed
1 tablespoon kosher salt
Cocktail Sauce, recipe follows
Lemon wedges
1 cup ketchup
1 lemon, zest finely grated and juiced
4 teaspoons prepared horseradish, or to taste, drained
1/4 teaspoon Worcestershire sauce
Hot sauce, to taste

Steps:

  • Put the water, carrot, celery, onion, garlic, lemon, parsley, thyme, and bay leaves in a pot and bring to a boil over high heat. Lower the heat to a simmer, set a cover on top slightly ajar, and cook for 10 to 30 minutes.
  • Drop the shrimp into the liquid and turn off the heat. Cook the shrimp, stirring occasionally, until they curl and turn pink, about 2 to 2 1/2 minutes for medium shrimp, 3 minutes for large ones. Drain and cool to room temperature. Peel the shrimp and remove the vein along the curve of the shrimp, if desired. Refrigerate if not serving right away. If refrigerated, bring the shrimp to room temperature 20 minutes before serving.
  • To serve put the cocktail sauce in a medium bowl and surround with the shrimp, or loop the shrimp over the edge of an individual cocktail glass and top with the sauce. Garnish with the lemon and serve.
  • Optional Tip: To de-vein the shrimp before cooking, hold a shrimp between the thumb and forefinger with the rounded side of the shrimp upward. Place the pointed end of a wooden skewer at the junction of the second and third segments of the shrimp shell, about 1/8-inch down from the top. Gently push the skewer through the shell and then lift up to remove the vein.
  • Combine the ketchup, lemon zest and juice, horseradish, and Worcestershire sauce in a small bowl. Add hot sauce, if desired. Mix well, then refrigerate until ready to serve.
  • Yield: 1 1/2 cups

I started making this years ago because I don't like horseradish. It dawned on me today that I had never posted this simple recipe. The chilling time is optional. I have used it many times immediately after mixing. Chilling just blends the flavors a little more. Cooking time is chilling time.

CHEF JOHN'S SHRIMP COCKTAIL

Chef John's Shrimp Cocktail image

Before I knew much about food or dining out, I knew that if they brought shrimp cocktails to the table as an appetizer, we were eating at a 'fancy' restaurant. I'm sure I enjoyed the shrimp, but what I really loved was dipping the crackers in the spicy, horseradish-spiked cocktail sauce.

Time 50m

Yield 4

Number Of Ingredients 16

3 quarts cold water
¼ onion, sliced
½ lemon
2 cloves garlic, peeled and bruised
2 sprigs fresh tarragon
1 tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon whole black peppercorns
1 bay leaf
½ cup ketchup
¼ cup chili sauce
¼ cup prepared horseradish
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
3 drops hot sauce, or to taste
1 pinch salt
2 pounds shell-on deveined jumbo shrimp

PERFECT SHRIMP COCKTAIL (NO HORSERADISH)

Perfect Shrimp Cocktail (No Horseradish) image

I love shrimp cocktails but hate the sauce they come with in the store or restaurants . When ever I go to mexico they make the most delicious Cocktails out of Shrimp, Clam ,Abalone or Octopus. I like the Shrimp the best but love the clam to. You can make a cocktail with all of these or just one.

Time 10m

Yield 1 serving(s)

Number Of Ingredients 7

9 medium cooked shrimp
1/4 cup cucumber
1/4 cup avocado (on the firm side but ripe)
2 large limes
1 teaspoon green onion (finely chopped)
2 tablespoons catsup
optional Tabasco sauce (i use about 2-3 drops )

Steps:

  • in a tall cup or a bowl squeeze the juice from both limes. juicy ones are best.
  • I like to chop the shrimp first and let it soak in the lime juice while I chop the other ingredients.
  • Chop avocado , cucumber and green onion to the size of your liking. I like everything pretty small.
  • add all to the bowl and mix in catsup ( and tabasco if you want ). Mix well and enjoy.
  • This recipes is really all to taste but the directions are just how I like it.
  • You can add tomatoes , white onion, cilantro more or less lemon juice and/or catsup If you like. You can also add more or less shrimp, avocado, and/or cucumber. add salt and pepper if you like.
  • remember if you use fresh raw clams to keep the juice from them for the cocktail . If you use abalone or octopus boil first.
