- Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
- Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

A wonderful combination of Caribbean ingredients turn into a very flavorful meal! Pour the beans over white rice or have as a soup. Great with breaded thin steaks. I get requests for this meal from all my family, friends, and coworkers.

- Heat olive oil in a large saucepan over medium-high heat. Stir in the onion and green pepper; cook until the onion begins to turn brown, about 5 minutes. Pour in the water, white beans, tomato sauce, garlic, cilantro, and calabaza. Season with the sazon packet, bouillon cube, salt, pepper, and cumin; stir well to combine.
- Bring to a boil, then reduce heat to a simmer, cover, and cook until the calabaza has softened, about 20 minutes. Remove the cover, and continue cooking until the sauce has thickened, about 10 more minutes.

PERFECT WHITE RICE, SPANISH CARIBBEAN STYLE

- Place the rice in a colander and rinse it thoroughly, adding a few drops of fresh lime juice to the rinsing water (the lime juice helps take away the musty smell that rice gets from sitting in the package).
- In a saucepan, bring the water, 1 tablespoon of the lime juice, 1 tablespoon of the olive oil and salt to a boil. (To make the con conor delicately flavored crusts of rice, use a very light pan; do not use a pot with an enamel or Teflon surface.)
- Stir in the rice. Return to a boil, cover tightly and simmer over low heat for 15 to 20 minutes, or until the rice is tender and dry.
- Turn off the heat and let stand for a few minutes. Gently stir in 1 tablespoon olive oil. The sides and bottom of the pan will be covered with a crust of browned rice, the con con Scrape off the browned bits and serve separately.

- The first step is to roughly chop the vegetables and set aside. Then, proceed to season the meat with 1 teaspoon of garlic powder, 1 teaspoon black pepper, 1/3 teaspoon oregano, 1/3 teaspoon onion powder and 1 tablespoon salt, You can also add a tablespoon of my delicious and flavorful Sofrito (optional)
- In a non-stick pan, over a medium-high temperature pour some olive oil. Place the beef cubes in the pan and let them cook for about 3 minutes each side. If the meat gets stuck to the pan when you try to flip, it means is not ready. Just wait until it releases easily.
- After the meat has lightly browned, add olives, peppers, onion, Jalapeno, bay leaf and tomato sauce.
- Lower the temperature and add 2 cups of water and cover the pan. Continue cooking for about 40 minutes or until the meat is soft and tender.
