These are deliciously soft, chewy cookies. They are wonderful for Christmas plates and bake sales because they don't fall apart easily. Garnish with decorative pearls if desired.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Mix flour, baking soda, ginger, cinnamon, cloves, and salt together in a large bowl.
- Combine brown sugar, oil, molasses, egg, and 1/4 teaspoon salt in a large bowl; beat with an electric mixer until smooth. Pour over flour mixture; mix until a dough forms.
- Roll dough into 1-inch balls and arrange on ungreased baking sheets.
- Bake in the preheated oven until firm, 8 to 9 minutes. Let cool on the baking sheets for 5 minutes. Transfer to a wire rack to cool.
- Place shortening in a large microwave-safe bowl. Heat in the microwave until melted, about 1 minute.
- Stir confectioners' sugar and orange extract into the melted shortening. Mix in milk a little at a time until glaze runs smoothly off the end of a spoon. Add 1/4 teaspoon salt. Spoon glaze over cooled cookies.

- Preheat the oven to 350 degrees F and prepare 3 cookie sheets with silicone mats or nonstick sprayed parchment paper.
- In a mixer with a whisk attachment, mix shortening and egg yolk for 3 to 4 minutes or until airy. Then add sugar, orange liquor, bourbon and salt, mixing again for 2 to 3 minutes until well mixed. Remove from mixer. Then in a bowl, combine flour and baking soda, whisking until well mixed. Once flour/baking soda is mixed, add sugar/shortening and mix well until all flour has been evenly mixed into sugar liquid. After mixing, allow mixture to sit in refrigerator for 10 to 15 minutes.
- After cooling, roll dough out to 1/4-inch thickness with a rolling pin on a clean flour counter. Cut into desired cookie shapes, then repeat process until all dough is cut. Next, place cookies on prepared cookie sheets 3 to 4 inches apart.
- Finally blend cinnamon, ginger, and brown sugar in a small bowl until well mixed. Then brush cookie with the whisked egg and finish with topping, spreading evenly. Then bake for about 15 minutes or until done.
- Finish with powdered sugar, serve with eggnog and enjoy.

- In a mixing bowl or standing mixer cream together the butter and sugar until light. Beat in 1 egg and mix in the molasses, orange juice, and zest. Sift together the dry ingredients and stir them into the wet ingredients to make a soft, smooth dough, adding more flour if dough is too sticky. Knead the dough three times on a lightly floured board.
- Shape the dough into 3 logs, about 8-inches long, wrap in plastic wrap and refrigerate at least 1 hour or overnight.
- Preheat oven to 350 degrees F. Slice logs into thin circles, less than 1/8-inch thick. Place on lightly greased baking sheets.
- Bake cookies for about 8 to 10 minutes. Remove from oven and transfer cookies to a rack to cool.

- Place almonds and confectioners' sugar in the bowl of a food processor. Process until mixture resembles coarse cornmeal; set aside.
- Place butter and zest in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium until light and fluffy, 2 to 3 minutes. On low, add almond mixture; beat until combined, 10 to 15 seconds. Add egg and orange juice; combine. Add flour; combine.
- Place two 12-by-16-inch pieces of parchment on a clean work surface. Divide dough in half. Form a rough log with each half; place on parchment. Fold parchment over dough; use a ruler to roll and press dough into 1 1/2-inch-diameter logs. Wrap. Chill for at least 3 hours.
- Preheat oven to 350 degrees. Line two baking sheets with parchment. Spread sanding sugar in a baking pan. Unwrap logs; roll in sugar to coat. Cut into scant 1/4-inch-thick rounds; place on sheets, 1 inch apart. Bake until edges turn golden, about 15 minutes, rotating halfway through. Transfer to a wire rack to cool. Bake or freeze remaining dough. Store baked cookies in an airtight container for up to 2 weeks.

- Place half of the oats, and half of the triticale into a blender or food processor, and grind into a fine powder. Transfer to a medium bowl, and combine with the remaining oats, triticale, all-purpose flour, whole wheat flour, ginger, cinnamon, baking soda and salt. Set aside.
