CREAMY PESTO PENNE WITH VEGETABLE RIBBONS



Creamy Pesto Penne with Vegetable Ribbons image

2 cups uncooked penne pasta
1 cup frozen shelled edamame, thawed
4 medium carrots
2 yellow summer squash
1 medium onion, halved and thinly sliced
2 tablespoons butter, divided
1 garlic clove, minced
3/4 cup heavy whipping cream
2 tablespoons prepared pesto
1/4 teaspoon salt
1/4 cup chopped walnuts, toasted

Steps:

  • In a large saucepan, cook pasta according to package directions, adding the edamame during the last 5 minutes of cooking. Meanwhile, using a vegetable peeler or metal cheese slicer, cut carrots and squash into very thin lengthwise strips., In a large skillet, saute onion in 1 tablespoon butter until tender. Add the vegetable strips and garlic; saute 2-3 minutes longer or until crisp-tender. Stir in the cream, pesto, salt and remaining butter. Bring to a gentle boil; cook for 2-4 minutes or until sauce is slightly thickened and vegetables are tender., Drain pasta and edamame; toss with vegetable mixture. Sprinkle with walnuts.

This pesto pasta recipe is the solution for any leftover hardy green, lettuce, or herb you don't know what to do with. Cleaning out your fridge has never been so rewarding!

Number Of Ingredients 9

1/2 red onion, quartered through root end
8 cups (lightly packed) torn mixed greens and tender herbs
Kosher salt
1/4 cup toasted sesame seeds, plus more for serving
1/2 cup grated ricotta salata (salted dry ricotta), divided
3 tablespoons plus 1/4 cup olive oil; plus more for drizzling
8 garlic cloves, smashed
12 ounces tripoline or mafaldine (wavy-edged ribbon pasta) or fusilli (spiral-shaped pasta)
2 tablespoons unsalted butter

Steps:

  • Cook onion and mixed greens and herbs in a large pot of boiling salted water until tender, about 2 minutes. Using a spider or tongs, transfer to a bowl of ice water and swish around in the water to cool down as quickly as possible (this helps retain the bright color). Drain and gently squeeze to remove excess liquid, then press between a double layer of paper towels to remove as much remaining liquid as possible. Reserve pot with greens cooking liquid.
  • Process 1/4 cup sesame seeds in a food processor until finely ground. Add onion and greens mixture and 1/4 cup ricotta salata and process until a coarse paste forms. With motor running, stream in 3 Tbsp. oil and process, adding water by the tablespoonful if needed to thin, until pesto is very smooth.
  • Heat 1/4 cup oil in a large Dutch oven or other heavy pot over medium. Add garlic and cook, stirring often, until golden brown, about 5 minutes. Add pesto and cook, stirring, until sauce looks like most of the moisture has been cooked out, about 1 minute.
  • Meanwhile, bring reserved pot of greens cooking liquid to a boil and cook pasta, stirring occasionally, until very al dente, about 3 minutes less than package directions.
  • Using tongs, transfer pasta to pot with pesto and add 1/2 cup pasta cooking liquid. Cook, tossing, until each strand of pasta is coated. Remove from heat, add butter, and toss to combine.
  • Divide pasta among bowls. Top with more sesame seeds and remaining 1/4 cup ricotta salata and drizzle with oil.

2 zucchinis
2 yellow squashes
2 carrots
2 cups grape tomato
olive oil, for drizzling
salt, to taste
pepper, to taste
2 cups fresh basil
1 cup fresh parsley
½ cup cashews
1 clove garlic
½ teaspoon salt
¼ teaspoon pepper
1 tablespoon lemon juice
½ cup olive oil

Steps:

  • Cut the ends off the zucchini. With a vegetable peeler, shave off as many thin slices as possible and transfer a large bowl. Repeat with the yellow squash and carrots.
  • Place the grape tomatoes between 2 large plates or tupperware lids. Press down, securing the tomatoes in place, and use a long, sharp knife to slice the tomatoes in half. Add to the bowl with the shaved vegetables.
  • Drizzle olive oil over the vegetables and season with salt and pepper. Toss to combine.
  • Make the pesto: Add the basil, parsley, cashews, garlic, salt, pepper, lemon juice, and olive oil to a food processor and process until smooth.
  • Spoon the pesto onto the shaved vegetables and mix well with tongs until fully coated and serve.
  • Enjoy!

I got this recipe from the May 2011 issue of Rachel Ray Everday. I twiked it a little with the onion and chicken stock instead of Shallot and white wine. Also instaed of making my own pesto I bought my favorite pesto to use. My husband and kids love this.

2 tablespoon(s) butter
1 large onion
1/4 pound(s) thick cut prosciutto,cut into cubes
10 ounce(s) sweet peas
1/2 cup(s) chicken stock
1 cup(s) heavy cream
1 pound(s) curly-edged long cut ribbon pasta
- salt & pepper
8 ounce(s) pesto

Steps:

  • Bring a pot of water to boil , salt and add the pasta. Cook until al dente drain and set off to the side.
  • Melt Butter in a large skillet over medium heat, add the onion and stir for a couple of minutes. Add the prosciutto and stir for a minute more, then add the peasand stir to heat through. Stir in chicken stock and cook to reduce, 2 or 3 minutes. Stir in the cream and season with salt and pepper to taste. Lower the heat; let bubble and thicken for a few minutes.
  • Add the pasta with the cream sauce and the pesto
  • Put in bowl toss and serve. Extra cheese to taste.
