PEACH SQUARES
This crazy simple recipe for peach squares is one of our favorite summer treats, and can be made with berries, plums, or whatever other fruit you like!

Steps:
- Preheat oven to 350 degrees F/175 degrees C. Grease and flour a 9x13 inch pan.
- In a large mixing bowl, add the sugar, melted butter, eggs, and vanilla. Whisk until well-combined.
- Alternately fold in the sifted flour, peaches, and walnuts until well-combined. Pour into the prepared pan, and smooth out the batter so it's evenly distributed.
- Bake 35-40 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Cool, slice, and serve. (Refrigerate for 30 minutes for easier slicing.) Dust with powdered sugar if desired.

PECAN SQUARES
We make these all year long and when we want to go "over the top" we dip half of each square in warm chocolate.

- Preheat the oven to 350 degrees F.
- For the crust, beat the butter and granulated sugar in the bowl of an electric mixer fitted with a paddle attachment, until light, approximately 3 minutes. Add the eggs and the vanilla and mix well. Sift together the flour, baking powder, and salt. Mix the dry ingredients into the batter with the mixer on low speed until just combined. Press the dough evenly into an ungreased 18 by 12 by 1-inch baking sheet, making an edge around the outside. It will be very sticky; sprinkle the dough and your hands lightly with flour. Bake for 15 minutes, until the crust is set but not browned. Allow to cool.
- For the topping, combine the butter, honey, brown sugar, and zests in a large, heavy-bottomed saucepan. Cook over low heat until the butter is melted, using a wooden spoon to stir. Raise the heat and boil for 3 minutes. Remove from the heat. Stir in the heavy cream and pecans. Pour over the crust, trying not to get the filling between the crust and the pan. Bake for 25 to 30 minutes, until the filling is set. Remove from the oven and allow to cool. Wrap in plastic wrap and refrigerate until cold. Cut into bars and serve.

Melt chocolate chips in the microwave or over a double boiler. Spread over the bottom layer and sprinkle with chopped nuts (if desired). Chill for 20 to 30 minutes, then cut into squares. Do not chill for too long or the top will crack when cutting which is not as attractive.

PEANUT SQUARES
These cake squares are light, fluffy and topped with a chopped peanut frosted coating that makes them irresistible.

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray; line with cooking parchment paper, leaving a few inches of overhang on each side.
- In large bowl, beat eggs with electric mixer on medium-high speed 1 minute. Slowly beat in granulated sugar, then beat 4 minutes longer. Eggs should be pale in color and fall in thick ribbons back into bowl.
- In another bowl, mix flour, baking powder and salt. Add to egg mixture all at once; beat on low speed just until incorporated. In small bowl, beat together 1 cup milk, the melted butter and 1 teaspoon vanilla. Add to mixture in 2 additions. Pour batter in pan.
- Bake 35 to 40 minutes or until cake is golden and center springs back when lightly pressed. Cool in pan 15 minutes, then use overhanging parchment to carefully lift cake out of pan, and transfer to rack to cool completely, about 1 hour.
- Meanwhile, beat powdered sugar, softened butter, 3 tablespoons milk and 1 teaspoon vanilla to make smooth frosting. Spread chopped peanuts on small pan or plate.
- Use serrated knife to cut cake into 24 squares (6 rows by 4 rows). Frost top and sides of each square with frosting, then roll in chopped peanuts, using hands if necessary to press peanuts into frosting.
- Refrigerate 30 minutes to firm up. Serve cold, or remove from refrigerator 20 minutes before serving.

PETEYS COUNTRY SYLE RIBS
This recipe is very simple and easy to prepare. I often use it with Baby Backs. It is one of our favorite crock pot recipes made with pork. We usually have it with mashed potatoes and turnip greens

Steps:
- Combine all ingredients in crock pot and cook 4-6 hrs on high or 8-10 hrs on low.
- If possible turn half way through.
- Remove ribs and sear on a very hot grill until just marked.
- Now you can either use your favorite barbeque sauce on these little sweetys or just use the gravy from the crock pot.
- If you do use barbeque just remember the gravy is great on your favorite mashed potatoes.
