GRAPE AND PROSCIUTTO APPETIZERS



Grape and Prosciutto Appetizers image

1 baguette, cut into ¼-inch slices
4 Tbsp. olive oil
36 green, red or black seedless California grapes
1 Tbsp. balsamic vinegar
To taste freshly ground pepper
4 oz. soft goat cheese
6 slices prosciutto

Steps:

  • Preheat oven to 350 degrees F.
  • Lightly brush 12 slices of baguette with half of the olive oil and lay them directly on the middle rack of the oven. Toast for 5 minutes, or until light golden brown.
  • Put the remaining olive oil in a small saute pan and warm over medium-high.
  • Add the grapes and saute for 2 to 3 minutes, or until soft and warmed through. Remove from heat. Sprinkle the balsamic vinegar over the grapes and add a few grindings of pepper.
  • Top each baguette slice with one leaf of basil and spread the goat cheese evenly among the toasted slices.
  • Cut each slice of prosciutto in half and drape over the cheese. Top each of the baguettes with three of the sauteed grapes.

1 pound seedless red grapes
1 ½ cups apple cider vinegar
1 cup water
1 cup raw sugar
½ small red onion, cut into slivers
2 teaspoons yellow mustard seeds
1 teaspoon whole black peppercorns
1 cinnamon stick
1 bay leaf
1 star anise pod
1 whole allspice

Steps:

  • Remove stems and discard any grapes that aren't firm and unblemished. Place grapes in a quart-size mason jar and set aside.
  • Combine vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise pod, and allspice in a saucepan; bring to a boil. Reduce heat to low and simmer until onion is softened, about 10 minutes. Remove saucepan from heat and cool for 15 minutes.
  • Carefully pour cooled liquid over grapes and gently swirl jar to incorporate spices. Cover jar and refrigerate 1 day before eating.

Steps:

  • Cut prosciutto into 1-inch strips. Wrap prosciutto around each grape and skewer with a toothpick.
  • TIP: FROZEN GRAPES 1 bunch white seedless grapes Separate grapes from the vine and place in a sealable freezer bag. Place in freezer for 3 hours, and up to 2 weeks. Remove from bag and enjoy.

Grape Leaves Stuffed with Prosciutto, Dried Fruit, and Herbed Rice image

Number Of Ingredients 14

a 1-pound jar brine-packed grape leaves*
1/2 cup pine nuts
6 ounces thinly sliced prosciutto
1/2 cup golden raisins
1/4 cup packed fresh dill leaves
1/4 cup packed fresh flat-leafed parsley leaves
2 cups water
1/2 teaspoon salt
1 cup long-grain rice
4 tablespoons olive oil
1/3 cup dried currants
6 tablespoons fresh lemon juice
about 2 1/2 cups chicken broth
*available at specialty foods shops and some supermarkets

Steps:

  • Rinse grape leaves in several changes of cold water and in a large saucepan of boiling water blanch 3 minutes. In a colander drain leaves and refresh under cold water. Drain leaves well.
  • Toast pine nuts golden and chop separately onion, prosciutto, raisins, dill, and parsley. In a saucepan bring 2 cups water to a boil with salt and stir in rice. Cook rice, covered, over moderately low heat until water is absorbed, 17 to 20 minutes, and transfer to a large bowl. In a heavy skillet cook onion in 2 tablespoons oil over moderate heat, stirring, until tender and golden and stir into rice with pine nuts, prosciutto, raisins, dill, parsley, currants, 3 tablespoons lemon juice, and salt and pepper to taste until combined well.
  • Arrange 1 grape leaf, smooth side down, on a kitchen towel. Trim stem flush with leaf (if leaf is large, trim to 5‚ inches across), reserving stem and any trimmings. Spoon about 1 tablespoon filling onto leaf near stem end and roll up filling tightly in leaf, folding in sides and squeezing roll to pack filling. (Roll should be about 3 1/2 inches long.) Make more rolls in same manner.
  • In a saucepan heat broth just to a simmer and keep warm, covered. Line bottom of a 3-quart heavy saucepan with reserved stems and trimmings and any remaining grape leaves and arrange rolls, seam sides down, close together in layers over leaves, seasoning each layer with salt. Drizzle remaining 2 tablespoons oil and remaining 3 tablespoons lemon juice over rolls and cover with an inverted heatproof plate slightly smaller than diameter of pan, pressing down lightly. Add just enough broth to come up to rim of plate and bring to a boil. Reduce heat to low and cook rolls, covered with plate and a lid, 50 minutes, or until leaves are tender and most of liquid is absorbed.
  • Remove pan from heat and cool rolls, covered. Using plate to hold back rolls, pour off remaining liquid and transfer rolls to another plate, discarding stems, trimmings, and grape leaves. Stuffed grape leaves may be made 5 days ahead and chilled, covered.
  • Halve stuffed grape leaves diagonally and serve at room temperature or chilled.

3 cups stemmed seedless grapes (see note)
1 1/2 cups granulated sugar
1 cup white wine vinegar or white vinegar
3 3-inch sticks cinnamon
1 tablespoon minced onion

Steps:

  • Wash grapes and divide them among three very clean half-pint canning jars.
  • Bring sugar, vinegar, cinnamon and onion to a boil, stirring well to distribute the sugar; simmer mixture for five minutes. Pour the syrup over the grapes, putting one cinnamon stick in each jar. Stir and let stand overnight. Next day the grapes will be ready to serve. Refrigerate.
  • Plan to use this pickle soon or at least before the year is out. Serve the relish with meat, fish, poultry or game.

1/2 cup sugar
1/2 cup white vinegar
1/2 cup cider vinegar
1 banana pepper, sliced
2 jalapeno peppers, sliced
1 red chili pepper, sliced
4 cinnamon sticks (3 inches)
2 inches fresh gingerroot, peeled and thinly sliced
1 tablespoon coriander seeds
1 teaspoon whole allspice
4 drops hot pepper sauce
1-1/2 pounds green grapes, halved
1-1/2 pounds seedless red grapes, halved

Steps:

  • In a large saucepan, bring the first 11 ingredients to a boil. Reduce heat; simmer until sugar is dissolved, 3-5 minutes. Remove from heat and cool slightly. Place grapes in a large bowl; add pickling liquid. Refrigerate, covered, at least 12 hours before serving.

1 1/2 cups white wine vinegar
3/4 cup sugar
9 whole cloves
1 Tbsp mustard seeds
1 Tbsp black peppercorns
1 1/2 tsp kosher salt
1/2 pound seedless red grapes, preferably med to large)
1 garlic clove, lightly crushed
10-12 thin slices prosciutto, halved lengthwise
extra virgin olive oil, for drizzling

Steps:

  • 1. Make the pickling liquid; In a small nonreactive saucepan, whisk together the vinegar, sugar, cloves, mustard seeds, peppercorns and salt, and simmer over medium heat, stirring to dissolve the sugar and salt, 3-5 minutes. Remove from the heat and let stand for 5 minutes. 2. Pickle the grapes; cut off the "belly button" at the top of each grape (where it connects to the stem), taking as little of the actual grape as possible, make a few shallow incisions in each grape, and put the grapes in a small bowl. Pour the pickling liquid over the grapes and let sit overnight in the refrigerator. These grapes keep for a long time, so make a jar and have them around for when you need them. 3. Serve the grapes; rub the garlic over the prosecution and wrap each grape in about 2 layers of the prosecution and set seam side down on a serving platter. Secure the ham around each grape with a toothpick, if desired. When ready to serve, drizzle a little of the pickling liquid and a little olive oil over them. If desired, you can brown the grapes in a saute pan in a thin layer of hot canola oil, turning them so the prosciutto crisps. Serve warm
