SPICED UP POTATOES



Spiced Up Potatoes image

Sliced potatoes with seasonings to give it an excellent flavor. This is a great side dish for any main course meal. You can add more of the seasonings for your liking. I suggest a little more paprika, it gives it a great flavor. You can also put in bacon bits when cooking if you would like.

2 (15 ounce) cans sliced potatoes, drained
2 tablespoons butter
1 teaspoon garlic salt
1 ½ tablespoons Italian seasoning
1 ½ tablespoons paprika

Steps:

  • Melt butter in a large skillet at a medium heat. Stir in the potatoes, garlic salt, Italian seasoning and paprika. Stir the potatoes around occasionally. The potatoes should cook for about 12 minutes or until potatoes are a red-brown color.

Champ image

Champ is the name of a mashed potato dish served in Scotland and Ireland. The potatoes are often mixed with other vegetables such as leeks or even mashed beetroot when they acquire different regional names. Champ should be piled up steaming hot on individual plates and a crate made in the centre of each one, filled with melted butter. Each forkful is then dipped into this molten golden pool.

5 fluid ounces milk
10 spring onions, chopped and cooked in the milk
salt and pepper
1 1/2 lbs freshly cooked hot mashed potatoes
4 tablespoons melted butter

Steps:

  • Cook the chopped spring onions, green part as well as white, in the milk; drain, but reserve the milk.
  • Season the mashed potatoes to taste, and then add the spring onions.
  • Beat well together and add enough hot milk to make the dish creamy and smooth.
  • Put onto 4 individual plates, make a well in the centre of each portion and pour a tablespoon (or more) of melted butter into each.
  • The dry potato is dipped into the well of butter when eating.

This comes from my "Best Food for the Heart" cookbook. It is a quick alternative to stuffed potatoes. Try it this way first then experiment with your own ideas. I bet you will never make it the same way twice....LOL....just use whatever you have on hand.

4 medium potatoes
1/2 cup low-fat sour cream (or yoghurt)
1 tomatoes (sliced)
2 slices lean ham (cut into strips)
1 cup mushroom (roughly chopped)
1 tablespoon chopped chives
1/2 cup grated edam cheese

Steps:

  • Don't peel, just wash & scrub the potatoes and either boil until just tender or prick well & microwave until softened.
  • When cooked, slice and place in a flan or quiche dish.
  • Pour over the sour cream and top with remaining ingredients in order listed.
  • Grill/Broil for 4-5 minutes until cheese melts and begins to turn golden brown.
  • Leave to stand for at least 5mins before serving to allow any liquid to absorb.
